Mushroom Moutains!

I need more prunes! I was limited to almond and dark chocolate raisins for AM snack time.
Before long it was luncher time!

I had a few nibbles of my carrot before the picture, nah what’s up dock? Yep that’s right I said it! I also had chobani plain, a delicious veggie wrap with Lacey swiss and sabra spicy humus summer squash, maters and spinach. I also had a lovely fruit salad with loupe, nectarine, the last of the MD strawberries and some blueberries.

I was curious today about fruit and went to old faithful www.nutritiondata.com to check it out. Everyone knows that fruit has a large amount of sugar in it but I wanted to see how it compared to raw sugar. I found that of the fruit I eat the banana has the highest caloric value (due to sugar) with about 120cal for a large banana (7 7/8″ 126g). I already knew this but I found that the site also said the fruits were good sources of fiber and vitamins A,B and C. For 100g of sugar there are 287cal and there are no nutritional benefits. Compare these two types of sweeteners and I will take banana hands down. It would be interesting to see sugar vs. honey, agave and maple syrup. If you ever want to know the complete nutrition of ANY food and I mean complete type it into their search engine and kaboom!
PM Snaker was nothing to write home about I had a blueberry crisp Clif bar and it was a little better then yesterdays bar, but still so sticky with syrup. I think I am going to save the other two for emergency packing and go back to my own oat bars!

I was supposed to play softball tonight but it is raining, score! I went to the gym and did 30min hills on the treadmill at 6.0 (I am sort of in love with this setting. everyone seems to do manual, but that gets sooo boring!) I then did 30min of speed intervals on the stepmill and Bosu abs.
Nick still came for dinner and I made sausage stuffed portabello mushrooms. The ingredients in the mix, minus the avocado that was eaten by its beautiful self.

LilyBeans Sausage Stuffed Portabello (3-4 servings for the stuffing)
- 2 (or however many you are stuffin) portabello mushroom caps
- 1/4 cup wheat berries
- 2 1in slices of polenta diced small
- 1 very small zuc diced small
- 3 sweet apple sausages (use what ya got)
- S&P
- EVOO
- sprinkle of parm to finish with
Mixed all but mushrooms and pile a mile high! Grill for about 15min on Med-Low. Sprinkle cheese on near end and serve!
Before Grillage – with some eggplant and they extra stuffing in a tin foil pouch – I piled them high like mountains!

And 15min later…Ta Da! Eggplant has a parsley (from the garden), 1/2 lemon juiced, EVOO and S&P dressing.

The avocado was alone halved with S&P, EVOO and Balsamic. Nick said, “so you eat it like ice cream?” This is the best explanation of how to eat this as the skin for a bowl. Balsamic and avocado are delicious! Always fill up the pit hole!

This dinner was different and delicious, but I couldn’t stop thinking about the cookies and cream ice cream samies in the freezer so I went for one…

Another Skinny Cow creation, 150cal, 2g fat, 3g fiber. My favorite parts were the chocolate cookie pieces. The ice cream did NOT taste like the creamy cookies and cream I was used to. Kind of a disappointment.
Speaking of dissapointing the Orioles win is fading from them to the Mets and Top Chef is still Masters??? I am going to watch the beginning to see if I like it better, but I am not hopeful.

Stuffed grilled shrooms… YUM. def going to try a little varaiation of this recipe!!
Love stuffed shrooms too…hope to find some really fresh ones…but no grillin here…too much water…blub blub…enjoy the pears!
