Finishing up the 4th!

After a lovely hour on the roof reading and getting some sun, I wantedsome lunch!  I had a little snack plate with some goat cheese that needed to be eaten and leftover chicken and ricotta.

I had a farmers market snickerdoodle for dessert!  By the time I got back up to the roof and my camera I had taken a few bites :)

Nick and some other people came over for a seven game “world series” of beer pong and then we got an impromptu invite to one of Nick’s friends family 4th party.  We hopped into the car and headed to the sticks…seriously have you even been to the state boarder of MD and PA??

There was lots of delicious snacks when we got there.  I snuck a few pics because I had never met most of the people I felt weird.  But I had about three of these little pigs in a blanket.

I also had some crab dip, cheese and crackers, mango salsa, guac and A LOT of this bean and corn dip.  I was so good, I think black beans, corn, roasted red peppers, white vinegar and EVOO?

Did you think I was done??  That was just the start…I also had this plate of grilled bbq chicken, meatballs, shrimp, more corn and bean dip, fruit salad and tortellini.

For dessert I had a piece of leftover engagement cake from the night before.  Thank God it was covered in fondant and I don’t eat icing so the piece was only about 1/2 its original size.

I was so stuffed on the way home.  The biggest food baby accrued and I had to down a ton of Tums.  I really need to control myself better at situations like this.  It is really hard when you are around people you don’t know and you don’t want to see strange for not eating along with everyone else.  Oh well lesson learned and moving on.  We ended up missing the fireworks and I was really bummed about that :(

Sunday

So I woke up still full from last night, yuck!  Nick and I watched the men’s finals of Wimbledon for a while and then I had a small bowl of party cereal (uncle sam, natures path slim and TJsfruit and nut medley) with some black raspberries and blueberries.

IMG_3958Federer won in a crazy match against Andy Roddick.  I always love a good tennis match, and I used to hate it as a kid.  Amazing how our tastes change.

After the tennis I need to run some errands and I got my first HRM at City Sports!

I got the green tea one and of course had to go for a run!  My stats were: 47:16min, 464 cal, mean HR 171, max HR 194.  I think it was a little over 5 miles, I would have to do google earth to be sure.

I also had to get a new ipod charger in the mall, I hate the mall.  The Apple store was so busy and a charger was $30!  I have the shuffle and I don’t think it is right that my charger is half the price of the device!

Around three I was starving and stopped into Starbucks for one of their new greek yogurt parfait.  A little pricey, but I needed SOMETHING!

I went to Trader Joe’s and got a few things and then headed home for the run highlighted above.

After a quick shower I wanted a light and fresh dinner…I was still feeling yucky from last night.

I got an artichoke going in the pot and the made a salad made of things only from the farmers market or my garden minus the garlic, white balsamic vinegar, EVOO and S&P.

  • 1/2 pint wax beans blanched
  • 1/2 pint green beans blanched
  • 1 cucumber – peeled and seeded
  • 3 plum and 3 cherry tomatoes from the garden
  • 1 zuc
  • basil
  • flat parsley
  • clove of garlic
  • EVOO S&P
  • White Balsamic Vinegar

I blanched the beans and sauteed the zuc with the EVOO and garlic.  Then copped and added the rest of the ingredients and tossed in the dressing.

Nice and light, exactly what I needed.  Along with my artichoke and lemon/greek yogurt/hot sauce dip and a large Stash green tea.

I had about a cup of MD fresh fruit for dessert.  Soooo ready for bed.  Not pleased that tomorrow starts the work week again:(
