Pancakes For One
Posted: November 7, 2010 Filed under: breakfast | Tags: chia, pancakes, peanut butter, poegranate, spelt 1 Comment »Today was pancake Sunday and these did not disappoint! I used OSG recipe for spelt pancakes as my base, but added cinnamon and flax and subtracted the protein powder.
- 1/2 cup spelt flour
- generous dash of cinnamon
- pinch salt
- 1 tbs baking powder
- 1 tbs ground flax
- 1/2 cup skim milk
- 1 tsp vanilla
Makes about 5 small pancakes.
I topped my cakes with pb, banana, POM arils and chia seeds.
I love that POM is in season right now! They are so tart and pop in my mouth with a slight crunch. I also love the nuttiness of spelt flour in these pancakes, it gives them and extra flavor level!![]()

The Egg and The Monster

No holiday to celebrate this morning except maybe that it is almost Friday? It is also the last regular season kickball game before playoffs start and we are hoping to take home the silver Coors cup this year.
I had to start off with some super fuel for breakfast.
I almost duplicated yesterdays breakfast but my monster was smaller with a side of banana bread bar.

- oj
- skim
- flax
- chia

This was a nice variety of textures and flavors from breakfast.
I do miss oats though! I need some egg dishes! Frittata Friday?

I hope you have a day full of margaritas and guacamole! I have a special meal planned for dinner and plan of having a little tequila. Nothing like college though!
I didn’t really get into the spirit with breakfast, but I did have hot sauce!
Lets start with my eggs!
Pollet eggs are from hens that have just started laying, but they are not up to par with their older roost makes.
The white is the pollet and the brown is a large. They don’t look much smaller to me! They were 18ct for $1.50 vs. 12ct for $3.00. They taste the same with the same orange yoke, cage free and grass fed, so give me a pollet any day.
I fried up two of them for a little breakfast sandwich on a flatout fold.
Topped with Franks and a little S&P.
I also made a Brown Monster.
I didn’t measure but in the mix was…
- spinach
- frozen raspberries
- chia seeds
- flax
- banana
- slpash OJ – seriously made the smoothie
- almond milk
All together.
A nice little different breakfast! I am excited about my eggs. Egg salad anyone? I have a ton of eggs now!

Pancake Saturday
Posted: April 24, 2010 Filed under: breakfast, weekend | Tags: breakfast, pancakes 1 Comment »Happy Weekend! Sissy was bright eyed and bushy tailed at 5:15AM on the dot, but I shoved her off until 7:30. I had to get up at that point anyway, I have a lot to do today!
To fuel me until the afternoon I whipped up some Saturday morning pancakes!
Banana and blackberry cakes. To my mix I added flax, cinnamon and vanilla. I topped 4 of them with a banana maple syrup mash and the 4th with a blackberry mash. They all got a nice spread of homemade flax chia almond butter as well.
I folded these over like little pancake tacos.
These were the best pancakes I have made in awhile.
Time to finish me coffee and head out the door!
It is nicer outside than predicted, let’s hope it lasts until tomorrow!
Toasty
Posted: April 21, 2010 Filed under: breakfast, Wednesday | Tags: french toast 1 Comment »Good Morning! My calf is still sore, but it isn’t any worse. One day at a time. At least we are expecting rain so I won’t be bummed not to be outside riding my bike.
I wasn’t feeling the oats this morning and I still have a lot of bread in my fridge so I went with french toast! I need to get back on the waffle train, but mixing did not seem pleasing this morning.
Two pieces of German dark wheat soaked in egg white, skim, cinnamon, vanilla and flax.
Topped with a heated apple in maple syrup and some of my homemade cinnamon vanilla almond butter.
Sissy likes to join me when I go outside to take my breakfast pictures
She likes to eat the flowers… I guess it is better than my vegetables!
Fingers crossed my calf has a speedy recovery! Any tips?
Chocolate Covered Banana

I am going to try and get my plants outside today for some fresh air, but I am dreading bringing them back in tonight. I still need to find something GREEN to do today. I may run to the gym instead of driving but I have to make sure Nick can pick me up!
I re-used a pb jar this morning for my oats! Recycling at its finest!
- 1/3 cup oat bran
- 1/3 cup skim, 1/3 cup water
- 1 banana slices
- 1 tsp hemp protein powder
- 1 tbs flax
- sprinkle chia
- 1/3 cup kefir
- Dark Chocolate Dreams!
I tried to get some chocolate in every bite!
My coffee cup looks huge next to this, but I swear it isn’t one of those giant cups!
Alright I need to get my plants outside. Sissy will be happy to have her table back.

Strawberries and Cream

N and I have 2 wedding back to back on Saturday and they aren’t in the same town PLUS our roommate is moving in on Sunday. Let’s just say it is going to be a busy weekend! I wish the weather were going to be nicer. At least it is nice today!
I was really pleased with how much oats turned out this morning!
Strawberries and Cream Oats
- 1/3 oat bran
- 1/3 cup whole grain drink, 1/3 cup water
- cinnamon
- pinch salt
- vanilla
- 1 tbs flax
- ~4 strawberries chopped and cooked in
- ~4 strawberries chopped for topping
- 1/3 cup Kefir
- 1 tbs crunchy pb
- (forgotten chia seeds!)
This was a great combo. Banana has nothing on sweet strawberries!
I have to make sure to bring my sweater to work. The AC will be cranked with the nice warm temps. I hate being cold!
Where did the time go? I need to get my butt out the door!

Sundae for Breakfast

At least I have a sundae to get me started!
The morning light was finally good enough for some outdoor pictures.
In my Oikos yogurt bowl:
- Oikos, duh!
- 1/2 cup Kashi H2H Warm Cinnamon
- 1/2 cup TJs fiber
- 1/4 cup Uncle Sam
- 6 strawberries
- 1 banana
- large dollop of PB&Co Dark Chocolate Dream
- chia seeds
- TJs whole grain drink
I could not put this down! It was so delicious!
Have you done your taxes? Get them post marked today! There are also a bunch of food discounts out there know as tax day relief. I’ll be scoping out the best deal today to see if it is worth my time.
OK I need to go pull my straightener out for the depths of my bathroom and get my short hair under control. I could always just put it up

Thank God I brought my plants in because it was 36 degrees when I woke up this morning. I think they will just stay inside today, and lets hope Sissy doesn’t mistake any of them for her littler box.
Due to the cool temps this AM I really needed some hot oats!

Where’s The Bread?

I did not want oats this morning. It is weird how some days I NEED them and others I cannot stand them. I looked in the fridge and saw a lot of bread (I blame Wegmans’ amazing selection) so I decided to make some french toast.
Two pieces of Wegmans bread dipped in…
- skim
- egg whites
- vanilla
- cinnamon
- flax
I topped my toast with peanut butter, banana, strawberries and chia seeds. You can barely see the actual bread down there!
I would like to go strawberry picking this year, and I have my plant!
I seem to be running a little late…
got to jet!
