Still No Rain…

My breakfast held me over wonderfully…I wasn’t really thinking about food until about 11 and I figured  I would have 4 prunes just so I wasn’t ravenous in an hour and could enjoy my lunch.

I love leftover grilled veggies they seem to absorb more flavor and juices over night in the fridge.  I mixed them in with a salad of baby romaine, tomatoes, sliced almonds, cucs, feta and homemade BV.  I also had some fruit (duh) apple, mango, strawberries and kiwi. Saved half for PM snack time.  I also had my favorite chocolate yogi from TJs a-top most of my fruit.

My allergies are back in full swing and understandably after seeing the pollen report last night.  I love how pseudafed fixes my sinuses but I am not a huge fan of how it makes me feel like my head is in the clouds.  Yet another reason not to play softball tonight! Still waiting for rain…


Crazy Friday

Do you ever feel like everyone asks you for something on Friday every week? OR maybe it just seems that way to me because I can smell the weekend.  Today was especially busy thanks to good old stimulus creating trouble again.  My morning snack of a 1/4 cup of prunes, almond and dark choco raisins held me while I worked towards a later lunch.  Almost the same layout as yesterday…tempeh, almond butter and pumpkin butter on sprouted grain bread. Vanilla yogurt with cinnamon, half a mango, apple and orange.

Why Is A Strawberry A STRAWberry?

The American Resource Recovery Act (ARRA) or Stimulus, as it has become known as, is here to stay in the office.  Creating waves of chaos within.  We will all get through it!  Anywho, that made my day mighty busy but I did have time for an enjoyable lunch!  Continuing with the theme of cleaning out the fridge I made an avocado, tofu chip and hot sauce sami on Arnold flax and fiber bread.  I also used my last Wallaby yogi, vanilla flavored and added a chopped up slice of zuc bread and a dash of cinnamon (It was outstanding, almost like a bread pudding! I am having it again tomorrow :) )  I also had half of my fruit salad.

Lunch was pretty large so I didn’t get around to eating the rest of my fruit salad and homemade nola bar until about 4pm.  I could have just eaten the fruit, but the bar was right there in front of me so I ate-r.  A note on my lunch…I used all tupperwear today!!!  Besides the Wallaby yogi cup from this morning my lunch created NO trash what so ever!  Ever tried doing that?  It almost tastes more homemade that way.

Finally at the gym…traffic in the tunnel…I did the usual 20min warm up, today on the ArcTrainer (I am not sure if it is just because my feet are supported on all other machines then the treadmill, but I always feel like it is harder for me to run then ET, bike or ArcT.  I also went to my 2nd fav spin class where I found out the teacher will be leaving but he assured us that his replacement would be compatible (Lets hope so!).

Home. Shower. Starved. Dinner.  Italian tortellini with veggies was on the menu.  With 1 serving fresh tjs tortellini, green beans, mix peppers, spinach, mushrooms, onions and garlic.  Dressed with lemon, EVOO and parsley from the garden!

Always a good staple meal…I also snuck in 6 flax crackers with almond, honey, ginger goat cheese. To drink?  Half unsweetened iced tea and half lemon seltzer, almost an Arnold Palmer, but not.

After dinner I settled into an episode of Good Eats.  It was about strawberries!  They are out and about at the farmers market and make their way into my fruit salad so I thought I would give it a view.  I found out that strawberries are STRAW-berries because farmers place straw underneath the vines to make sure they do not lye in the dirt and rot.  Pretty interesting!  I am going to look into pick your own strawberries for this season.

Cleaning Out The Fridge!

I am going away for the weekend so my next few meals will be all about cleaning out the fridge of fresh items that cannot be frozen…I guess I went a little overboard at the grocery store this weekend (nothing new there!).  I could not wait for lunch because I knew I had a half of a almond butter pumpkin butter sami!  I woofed that down like there was no tomorrow.  I switched that out with my usual yogurt and I must say I missed my little yogi.  I also had a salad with the last of the lettuce from the farmers market, wheat berries, white beans, black beans, tomaotoes, avocado goat cheese and homemade balsamic dressing PLUS half of my fruit salad.IMG_3314

I also made Nick lunch with a salad, and I was later informed that he like salads more then sandwiches!!?!!? who would have guesses that!  Given that I only have about 4 meals a week to get good stuff in him I will be loading him up with green from now on!

From work it was directly to the gymbo.  As usual I did a quick 15min warm up arms and bosu abs, followed by 45min of spin.  In spin I wondered, why don’t they make those cropped exercise pants in other colors then black?  I am a lacrosse shorts type of girl given that this is what I have always exercised in and I don’t feel like shelling out $40 for spandex pant, but it did make me wonder…hmmmmm.  The highlight of spin had to be my teacher singing along to ALL of the songs…she says she likes karaoke so I guess this is where she practices?

After the gym I was staving.  Quick shower and down to find things that needed to be cleaned out of the fridge before the weekend.  I found about 1/2 cup black beans, 1/2 cup white beans 1/2 cup wheat berries, 1/2 an avocado (lots of halves!) mango chicken sausage and zucchini.  This was going to take some creativity.  I cut up the zuc into strips.  The mashed the beans, wheat berries and avocado together with some hot sauce.  Grilled the sausage and I REALLY wanted to try the honey, ginger almond goat cheese from the farmers market so I made up a few tjsflax crackers with that.  Tres Bien!

What a beautiful site!  Tasted amazing too, especially because I heated the bean mix.  Off to make some fruit salad for the rest of the week and do some much needed reading!  Night y’all :0


Ace of Cakes Sighting!

In my long list of blogging topics I forgot to mention that I saw Jeff from Ace of Cakes on my run yesterday!  He was with his puppy, and I had to do a double take.  It must be so strange for a shy guy like that to be recognized every day. 

Lunch was pretty typical: salad greens from the market, white beans, black beans, tomatoes, wheat berries and 1 oz of turkey.  I dressed this up with homemade balsamic dressing: (the ratio for EVOO to vinegar is 3/1)

I also had the usually side of fruit salad, which was finished with a homemade nola bar and seltzer at snack time!  Oh can’t forget TJ’s coffee house yogi (my favorite on fruit!).  Now heading to G-Y-M!


Environmental Bit and Nutrition Bite of the day!…and lunch break!

Environmental Bit:  Check out EarthEasy for some earth friendly tips from gadgets to gardening!  I got my mom the eco friendly wasp and yellow jacket killer for mothers day and she loves it!  I love that it came in a sea blue glass!

Nutrition Bite:  VITAMUFFINS!  I have to give a cheer for these little guys, especially the brownies.  Only 100 cal and full of, you guessed it, vitamins.  They come frozen so heating them up only make the chocolate chips melt into gooey yumminess!  A perfect portion of chocolate deliciousness!  I did try the chocolate muffins and they are not as good.  I am going to stick with the brownies from now on.

Lunch contained some leftovers for both Nick and I.  He had some left over burger in his wrap and I had green beans and wheat berries in mine with two slices of turkey and spicy brown mustard.  Joining my wrap is fruit salad and a lemon Wallaby yogurt.  Nick of course had Scooby Snacks :)

Side note:  I always like to dip my fruit in the yogurt I bring in.  The lemon was really delicious on the blackberries and strawberries.  I wonder if I can make that into some sort of desert with granola???


Linda Lunch!

Out to lunch for our Administrative Assistant Lindoooooo!  We went to Nick’s Fish House on the water and would have sat outside if not for the wind.  The menu carried the normal Maryland seaside fare ranging from the Maryland Crab soup to the Crab Pretzel.  I was torn between the turkey club and the Gorgonzola salad.  I went with the salad with grilled chicken no walnuts (I’m allergic) and dressing on the side.  I also knew I would not be happy with white bread.  It was lacking a bit in its name sake, Gorgonzola, but the greens were fresh and the chicken cooked well.  The herb dressing was also warm, and this added a nice touch.  It also said it came with granny smith apples (I love them with Gorgonzola) but only three small slices were part of the dish.  I did get a pickle from Debbie and a laugh out of the fries they were serving at lunch that day :)

My afternoon fruit salad appeared around 3pm due to the lack of whole grains at lunch, but still did not cut it.  Before my run I had two large handfuls of rainforest granola, yum!  Kickball tonight so the run was a short 4miles with an ab set at the end.  Off to get another W!


His and Her lunches

I made lunch for Nick and I today; he is trying to turn away from the many fast food options that usually face him at lunch time.  I still add in thing like Scooby snacks because I would rather him the the 80cal there then a 300+ cal sandwich from Wendy’s.  For me I had a turkey sami with kalamata olive humus spread and a slice of fresh mozzarella, fruit salad with mango, apple, blackberries and strawberries and a raspberry Wallaby yogi.  Nick had the sandwich, scooby snacks, fruit salad, string cheese and garden salsa sun chips.  If  you have not tried this flavor of sun chip, you must!  It is so delicious, and adds some spice to the normal whole grain taste of the chips!

I have my second favorite spin class of the week tonight!  Lets just hope Jamie desides to show up this time.  Don’t you hate when you have a sub you didn’t plan for :(

Mini Lunch Break

Lunch was quick today!  Not even enough time to post!  Working on the fiscal year budget for 2011.  Working with the people in Maryland makes the job worth it to help get them clean water and fix the Bay.  Lunch was a sami with: turkey, Havarti light cheese, around flax and fiber bread and kalamata olive humus.  I also had a wallaby banana vanilla yogi and half my fruit salad (rest was for snack time!).
