This weekend Nick and I went to a cookout at his mom’s house she she gave us a ton of tomatoes and lots of wedding gifts! ( we are having our registry gifts sent to her home because of apartment safety)
For lunch today I combined both the tomatoes and a present!
Roasted tomatoes! The toaster over I had before was bought 5 years ago and was the cheapest one I could find in Target when I moved to Boston for grad school and it had seen better days.
This baby is amazing! It can broil, toast, bake and convection oven cook. I am so excited to heat this puppy up instead of my giant oven. Such an energy saver!

I ate the extra stuffing while I was waiting for them to cook and cut right into the baby hot out of the oven!
I still have a lot of tomatoes left. What is your favorite tomato recipe???
On another note about the amazing gift we have already received, it really nice to finally have matching towels that were not hand-me-downs (not that I didn’t appreciate them! They will become guest towels or be donated to BARCS) It is also nice to have more than one set of sheets and that are not polka-dot and from Target’s bed in a bag. We are finally growing up!
p.s. I still love my polka-dots sheets.
New Outside My Window

Again with me knee, sorry if you are getting sick of it! It seems to kill me at work. I am going to try wearing different shoes tomorrow to see if it makes a difference. I don’t really walk much there, basically sit at my desk aka the least healthy thing you can do. I am a scientist by nature and therefore ran a bunch of tests in my cube including shoes on vs. off and different taping measures.
In between experiments I made time for lunch.
Leftover beef broth from last night mixed with wheat berries (!!!) green beans and okra. I also had a 1/2 of an Ezekiel muffin and an Adora disk.
I spy a wheat berry! I think I liked this soup better than the beef stewish. I loved the chewy wheat berry texture. I need to make more of them more often!
The rest of my day was pretty uneventful except my stomach wanting my afternoon snack at 1pm! I think it was mainly boredom and I was looking for a an cheer myself up gift on Foodzie. It is a website kind of like Esty for food. I got myself distracted until 3pm before diving into the snack of the week.

I went to find out how much I am going to have to shell out to get MD registration tags and title. $300 smackeroos from a tag and title place. I went to MVA once and I never want to go back again. Plus I have a weird situation with my car and I didn’t want to wait 2 hours to find out I didn’t have the proper paperwork. I have been trying to get one extra thing done every day because I am not going to the gym. Yesterday was get the salt washed off my car and today it was the tag and title. Tomorrow is get a MD state inspection (and shell out more $$$) I guess this is what my car fund is for in my ING account.
I had a nice surprise when I walked in the door. Well besides Sissy!
We had a cardinal at our feeder! I was worried that no birds were coming and then there he was today. It instantly put me in a good mood! Hello Mr. C! I hope to see you around all winter and spring.
After texting mom this event I did 45min of Dave Farmers podcast that everyone has been jazzed about. I actually knew most of the positions so I was impressed. I also did 1/2 of my PT stretches and I am planning to do the rest after dinner digests.
Speaking of dinner…I had Panini and salad on the menu, but I felt like I need something a little more. Acorn squash!

At least it was cheesy! along with 2 slices of cheese I had thia pesto, hummus, sun dried tomatoes and mushrooms. I meant to get in some roasted red peppers but I forgot them
Plenty of time! I really want to remake that brie, pear, spinach and honey sandwich I had at Spoon with my dad.
I plan on watching two weeks ago’s Biggest Loser to find out who these peeps are, eating some chocolate, icing the knee, finishing PT sipping some tea and getting to bed early. Sounds like a plan!
Top Chef is Coming!

It seems that no matter how detailed your instructions, someone always needs further explanation. I honestly couldn’t blame them. This stimulus mubo jumbo is one hard nut to crack.
I had to break into my prune reserve around 11 told hold me until lunch. My oats didn’t quiet hold me. What’s up with that??!?! At least we 12 rolled around I wasn’t sucking down my lunch, and I was able to enjoy every bite. I hate when I am starving by lunch and eat so fast I forget what my food tastes like.

I had leftover fish from last might over leftover couscous from Monday night. I thought the olives and basil would weird with the cumin and jalapeno, but all mixed up together they were really good.

I also had some FM flat bean, carrot and a peach. And for my calcium I had a dark chocolate Adora disk.
There was an ice cream social going on in the lobby this afternoon that Elaine and I knew we had to hit up. Especially because Maryland tax dollars were paying for it!

I got a “one scoop” butter pecan. I liked the pecans, but the ice cream itself was nothing special. I think I have become such a gelato snob. When we move it is going to be really hard being without

It was way too hot to run outside today and there was no thunderstorm to cool it down in site. I opted for speed work on the treadmill and some lifting (It was technically my speed day and I won’t have weights to use at home).
I did 4 miles and 1.0 incline in 36min – 5min 6mph, 1min 9mph, 2min 6mph, 1min 9mph, 2min 6mph continued until 4 miles was reached. I also did bicep curls, upright rows, overhead press, tri dips, leg press, hammie pulls, quad extensions and a bunch of core work.

I had a bunch of produce to use up before I leave for the weekend. I also had to make something Nick would eat.
This started with garlic and onions sauteed in veggie broth. Then I added the mushrooms, flat beans and pepper to steam. I also cooked up a cup of WW cheese tortellini. All topped off with feta, garden basil and parsley.
Nick and I also split this FM salad of lettuce, cucumber and garden tomatoes with mustard red vine vinegar dressing. Yum! I really want a cookie but we have none
I might have a TJs dark chocolate bar and settle in for some NEW TOP CHEF! Who else is excited about this??? I know I am because Masters was so disappointing!

Stress…TGIF!
Posted: June 5, 2009 Filed under: dinner, lunch, tomato soup, veggie burger, yogurt Leave a comment »Work was S-T-R-E-S-S-F-U-L to say the least today. We only had two people in our dept. and there were deadlines, yuck! On a happier note I was able to eat lunch!
Left over shrimp pasta with peanut sauce, honey greek yogurt, cucs and carrots with and LC wedge…

Mango was left for snack…
I added a couple date and fig balls to my snack when I got home before the gym.
I really didn’t want to go to the gym today. It is rainy and cold and I just wanted to cuddle up and watch a movie…when I finally got my butt out the door I got in a 30min easy run along with an incline speed walk totaling 45min. I did a 15min ab workout to finish it out…my body is still sore from Body Pump yesterday, especially my back. The entire time I was at the gym I just wanted tomato soup with grilled cheese.
And that is exactly what I had when I got home, with a few add-ins of course! I made some TJs creamy tomato soup and a sami on the George.

Two slices of Ezekiel sprouted grain break with and LC wedge spread on one and TJs re-fried beans on the other. One tofu TJs veggie burger, yellow pepper, 1/2 and avacado, hot sauce.

I also got the new William Sanoma Catalogue…wow they have some amazing things in there…a mango pitter!!! I might have to invest and an avocado scooper…might need to start an ING account for that store!
I plan on having some pumpkin with vanilla almond butter and unsweetened cocoa powder later on in the night, but still up and down about it.

10,000 people is not enough to get an actuate account of the global take on fast food, but what really disturbed me the most was the comments that people made at the bottom about fast food only being for poor, lazy and uneducated people. I am pretty sure I have seen all walks of life in the many varieties of fast food joints that cover our nation.
Almost made me not want to eat my lunch HA! I was starving…might need to use Uncle Sam next time instead of rainforest granola, it seems to have more staying power.
I forgot to e-mail my lunch pics this AM so here it is in words and pictures to come…
Trader Joe’s multigrain crackers, one carrot (after peeled, see wrap) with almond ginger goat cheese.

WW wrap with avocado and salsa refried bean mash, Cabot hunter sharp cheddar, peeled carrot and soy nuts – I had this toasted so the cheese would get all melty yum!

End of my pumpkin pudding with a small spoon of nutella and a couple pieces of my fruit.


Oh and a side note: When I am starving between meals or just really can’t stop thinking about food I pop a couple of these. Delicious real black licorice. I usually eat about 3 and I think they are about 8cal each?!?!

Crazy Friday

OR maybe it just seems that way to me because I can smell the weekend. Today was especially busy thanks to good old stimulus creating trouble again. My morning snack of a 1/4 cup of prunes, almond and dark choco raisins held me while I worked towards a later lunch. Almost the same layout as yesterday…tempeh, almond butter and pumpkin butter on sprouted grain bread. Vanilla yogurt with cinnamon, half a mango, apple and orange.

Back to the Crazzzzzzy!
Do the Long Weekend Dance!

My belly didn’t start grumbling until 10:30 when it should…4hours after b-fast! I fed it the usual 1/4 mix up of prunes (don’t judge me for eating prunes, I love them!) almonds and dark chocolate covered raisins. The morning went by pretty quickly on part I am sure because I wasn’t watching the seconds tick away until lunch, but when the clock did strike lunch time it was delicious!
I had a salad of grilled chicken, almonds, tofu chips, tomatoes, goat cheese and avocado with HM balsamic. I also had my usual yogi, but this one was mocha flavored and great on my fruit salad! Mocha+Mango = YUMERS!

I didn’t go to the gym after work because I needed to finish packing and make dinner and I didn’t want to be rushed. Besides I am planning on going for a very long run along the beach in Maine this weekend so I needed a day off. I did however need a snack upon my arrival. I remembered I had made homemade larabars last Sunday? and I STILL had not tried one. WOW heavenly! The figs were amazing and the macadamia nuts had that earth bite to them! Sooooo goooood! I think I might try just making a sort of homemade fig newton next time because the dates were super sweet. Sorry that the pic is blurry! My camera seem to like the counter top more then my bar, but not me!

For dinner tonight I am grilling up a jalapeno cumin pork tenderloin with zuc and southwest TJs harvest grains blend (couscous, orzo, baby garbanzo beans, and red quinoa – really good but always needs a sauce or salt – amazing with curry!) for Nick and I before he takes me to the airport. Tear.

Maine-ward bound!!! I will have a full report blog of all the goings on upon my return! Until Monday…Happy Memorial Day!
