Biker

Please excuse my flash…someone stepped on my camera this weekend and the screen no longer works. Yes I am bummed about it, but it still works and I do not have the funds to get a new after buying my bike!
REI is having an anniversary sale with 15% off all bikes and I knew it was no or never to try and get my bike. Cannondale CAAD Women’s 8.
I took her out for a ride yesterday and it was such a difference from my mountain bike. For one I clipped in (I only fell off once) and my biked just seemed smoother and went further. I ended up doing about 23 slow miles. I wanted to get used to the bike and the trail was a little to bumpy to go fast on a road bike. I saw so many cute farm homes in back country Maryland. I need to take her out on the open road, but I have a race to train for in less than 2 weeks!!!
I am already checking out races in the area and I am excited for this new adventure.
Next step in my life…save for new camera…what kind should I get????
In The Garden

It is June, time to warm up Earth!
Speaking of Earth, Nick and I watched Dirt last night. It showed the importance of soil in our daily lives and how we need to stop abusing it and start using it!
Because of the cold temperatures all I wanted were oats!
Eaten in the garden out of a pb jar.
- 1/3 cup oat bran
- 1/3 cup skim, 1/3 cup water
- cinnamon
- vanilla
- 1 tbs hemp protein
- 1 banana
- chia seeds
This jar was particularly delicious. I think it was the hemp.
Time to put the plants back outside and get moving! Momma Beans will be here tonight! I am so excited to go to Woodberry Kitchen!
If I Had Known Then What I Know Now
Posted: May 3, 2010 Filed under: Meatless Monday, Monday | Tags: kale chips pita, yogurt, zucchini 1 Comment »Today while I was running I passed a field of little girls playing lacrosse. It got me thinking about all of the things I would want to tell a young version of myself.
These are some of the things that came to mind…
- Being popular is NOT the most important thing in middle school
- You will be happier if you accept who you are
- Be nice to everyone!
- The people you don’t want to talk to because they are not in the ‘A’ group could be the best people you have never met
- A zit will not kill you
- Listen to your Mom. You may hate her choices when they happen, but you will thank her for them in the long run
- Grades do matter
- Chill with the white eyeliner – this is directed to 8th grade me
Obviously you can tell where I was as a youth. In the middle between the ‘geeks’ and the ‘cool’ people. I never really fit, but I know where I SHOULD have been.
I thank the happy valley land of Kent for slapping me in the face and telling me to wake up!
If you could go back what would you tell yourself?
Now lets get back to the lighter side of life –food!
Lunch was sort of a repeat from Thursday, but it was still good!
WW pita stuffed with homemade hummus, spinach, avocado and goat cheese. Along with plain yogurt, mango and kiwi.

I bet this would be really good with cottage cheese! I usually don’t like mixing fruit with my cottage cheese, but for some reason I want to try it.
My afternoon got busy in a hurry!
I didn’t get to my snack until I was in the car on the way home.
Banana bread bar. I like these better now, but they still need a little work. I think the banana needs to be processed more.
After work I got new keys for Tour roommate and then I went for my nice little run of about 4miles. It was a nice easy run.
Then it was time to get busy making my Meatless Monday meal.
Stuffed zucchini boats and S&V kale chips!
In my boats (I’m on a boat)
- 1 small onion diced and sautéed in EVOO
- 1/2 box of chopped onions diced
- oregano
- S&P
- 1 can of petite cut no salt added tomatoes
- 1/2 cup cooked wheat berries
- garlic
All thrown in a sauté pan with the zuc innards. I par baked the boats for 10min then stuffed and topped with BASIL FROM THE GARDEN and parm cheese. I cooked them for about 15min more til the cheese had melted.
I am kind of peeved that this picture is blurry
I really like the S&V kale chips. They don’t need any ketchup!
Alright peeps I am going to get into bed early and watch House!

Positivity Push!

All in all positivity this week is going to rule!
Let’s start with breakfast.
Even though it was raining out I still got some outdoor pictures, but Sissy did not get her daily dose of pansy. Maybe it won’t be raining this afternoon, but at least I don’t have to water my plants!
You can see my basil blowing in the wind!
I made up some Muesli
- 1/4 cup muesli
- 1/2 cup yogurt
- handful Uncle Sam
- handful vanilla almond granola
- chia seeds
- banana
- pb
Whoa the skies are really dark right now! I love a good thunderstorm, but not when I am heading to work.
Now where did I put my umbrella?????
Loads of Spinach

Do I live in Seattle???
At least I had some good food to get my through the day! I had spinach with every meal today! Crazy. Just call me Popeye.
Spinach meal number 1: salad with mini peppers, maters, avocado balsamic.
I also had a mango and pb sandwich on Dakota bread. Mango and nut butter is an amazing combination! I may repeat this tomorrow, but it went down the hatch way too quickly!
After work I came home and made a lovely snack.
Gala with homemade cinnamon vanilla almond butter.
After my snack I went and tried out some REI bikes. I thought I would be able to figure out my size to compare other bikes, but they only come in small, medium and large. I tried out a few and liked one, but this is a huge purchase and I would like to do tons of test rides.
When I got home I got started on a Meatless Monday dinner!
I based this off an Ellie Krieger recipe for a ravioli toss.
- pack of whole wheat 6 cheese tortellini
- roasted red peppers
- tomatoes
- broccoli
- spinach
- sauteed onion and garlic
- avocado
- dressed in EVOO, red wine vinegar, S&P.

I also had a special little dessert that I think I left in the freezer for a little too long, but it still tasted good!
Frozen chocolate Greek yogurt.
Left out to defrost, and enjoy!
On the exercise front my knee definitely loves the foam roller! I think I am going to try and attend Bikram tomorrow, but it all depends how I am feeling. The bike hunt will continue!
Hoppin’ The Hemp Train

We had some serious thunderstorms last night, but thankfully we didn’t loose power. Apparently the system created tornados to the south of us. My plants could really use some sun
I bought a giant thing of spinach this weekend for Green Monsters so that is exactly what I made for breakfast!
In my GM was:
- ~15 strawberries
- 4 ice cubes
- 2 huge handfuls of spinach
- 1 cup unsweetened almond milk
- 2 tbs vanilla hemp protein
- sprinkle of chia seeds
I actually like the taste of this vanilla hemp. If you want to learn more about hemp check out Ashley’s post on the topic.
I also had a slice of Dakota with homemade chia flax almond butter.
Now I need to slap on my duck boots and head out into the fog and rain. How do we have all this fog??? We live inland!

Earth Week

It is also Earth week! What are you doing on Earth Day this year? I have no direct plan yet, but I am working on doing something. I’ll be playing kickball that is a for sure
I am running a little late this morning, Mondays always get me! I ended up making up a bowl of cold cereal. When I went out to take my pictures I realized how cold it was outside! Where did spring go? It was 41 when I woke up this morning. I guess that means my plants are staying inside again.
- 1/2 cup Kashi H2H
- 1/2 cup TJs Fiber cereal
- 1/4 cup Uncle Sam
- 1 banana
- 1/3 cup Kefir
- chia seeds
- homemade flax chia almond butter
- sprinkle of granola
- Whole Grain drink
There is something so comforting about cold cereal and banana.

I am so happy there is natural light for two of my meals these days. I makes my food look so much better than the stale light of my kitchen.

In A Tub

Did you catch Life on Discovery last night??? It was a good one all about insects. They has a segment on Monarch butterflies, which have a special place in my families heart.
I knew that getting up this morning would not be easy so I planned to enjoy some overnight oats in the bottom of an almost empty Stonyfield tub.
ONOIAT (OverNightOatsInATub)
Last night I mixed…
- 1/3 cup oats
- 1/3 cup skim
- ~1/4 Stonyfield plain
- vanilla
- cinnamon
- flax
- chia seeds
This morning I added a banana 2 strawberries and some new Wegmans no oil added. organic, crunchy pb. I know another nut butter, but I don’t plan on making any pb.
All mixed up and ready for consumption!
Lovely mushy mess!
Time to get my booty moving I have a really busy day at work today, but at least that means it will move quickly

It’s Getting Hot Out There

I guess one good thing about being back in B-More is that the weather is going to be amazing this week! I can’t wait to get out and run tonight. I am also taking my bike into the shop for its tune-up tomorrow.
Due to the warm weather I opted for a bowl of cold cereal this morning.
- 1 shredded wheat biscuit
- 1/2 cup TJs fiber cereal
- 1/4 cup Uncle Sam
- 1/4 cup Kefir
- sprinkle wheat berries
- banana
- skim
- banana pb
It is going to be a long day, but I am hoping the nice weather will keep my spirits up plus I am taking a big step today with my job!
