Simple Sunday Supper

Sunday nights are a time to settle in and get ready for a long week ahead.  I am trying to plan meals that are simple and somewhat special for these time.  A time to realign my weekend eating habits (not as healthy) with my week day habits.

Tonight’s menu:

Grilled Salmon with sautéed fresh farmers market spinach, organic fiddle heads, garlic and shallots with red wine vinegar.

006 I grilled the salmon on my grill pan with a salt free rub about 8 min a side.

Fiddle heads are such a spring treat.  We used to pick them in our backyard when I was a kid before they sprouted into beautiful ferns.

I rounded out the meal with a hunk of multigrain sourdough bread.

Week – END

Hola!  How was your weekend?  I think I am finally recovered from my mint juleps and bourbon brownies yesterday.  I used to be able to drink like a fish and now two drinks takes me down.

I had a nice and easy lunch.

010 Pita with spinach, homemade hummus and pepper jack melted cheese.  I also had a pink lady.

I might have picked apart a few bourbon brownies along the way too.

I also had a little baking experiment today.  Banana bread bars.

012 I am some “just bananas” (dried bananas) from TJs that had been around for awhile so I made them into my afternoon snack bars.  The recipe isn’t the best, but they will do the job of my afternoon pick me up!

After lunch I did a bunch of cleaning before heading to the gym.  I needed a serious sweat session and a movie was on the TVs so I got in 30min on the bike and 30min on the ArcTrainer.  I ended with some strength moves and core.  It felt food to sweat.

The weather was so nice Nick and I decided to go out to dinner and find a place we could sit outside.  We settled on The Falls in Mount Washington.

013 We started off with some braschetta that were pretty good, but I would have enjoyed some extra balsamic.

014 I got the salad with beets, onions, feta a greens for my entre and added a side of summer squash to it.  For $8 this salad was really small and could have used more beets and less onions.  Nick got a bison burger that he said was cooked poorly.

Lets just say we will not be going back there.

Nothing a little white chocolate mousse couldn’t fix.

015 I really wish we had a self serve for-yo place here :(   Maryland and their stupid snow balls.

I am pooped.  Time to climb into bed and get ready for another week.

Spotty At Best

I’m sorry to report that I only have one photo from yesterday’s party because I spent most of my time running around trying to compensate for extra people showing up at our apartment.

Before the craziness began I had breakfast outside with Sissy.

While cooking I had a PB & J with some cheese.

I planned shrimp salad, greens, homemade biscuits, homemade hummus and guacamole.

I also managed to have a couple mint juleps and bourbon brownies throughout the night.

My horse came in third and our new roommate won our nine dollar pot.

I was sleeping by 9:30 :)

Up at 7:30.  I just can’t sleep in.

Sissy and I enjoyed another humid breakfast of the balcony007 Green Monster with spinach, strawberries and milk.  FFL english muffin with pb and Crofter’s and the other side with an egg.

It’s Race Day!

Good Moring!  It is race day and it is rainy!  I am going to take it as a metaphor for my running struggles for the the past 4 months.

Sorry I didn’t post anything last night.  I got home from my adventures around 12:30 made an new lunch and cleaned our apartment for 3 hours until dinner!  I was on fire.  Once I start cleaning I can’t stop or else I will not get back up.

My lunch consisted of smoked trout!  From a can!  I HATED sardines so I was worried about trying another fish, but this one was smoked and known for being less oily.  I googled what to do with smoked trout and this is what I came up with.

002 Smoked trout with avocado, roasted red peppers and goat cheese.  It was actually really good but I think it would be better as a bite rather than a whole sandwich.  The best part was the Great Harvest Dakota slice of bread on the bottom.

I also had a Minneola orange.

After cleaning I wanted something quick and easy.

I also had another small slice of Dakota.  I love the seeds throughout!

Food Processing

Where did the weekend go?  Can I get a do over?

This afternoon I finally made it to Giant to do a little food shopping with a ton of other people.  Yuck.  I hate going to the grocery store late.  I like being alone in the store.  I can examine packages and ingredients while taking up the whole isle with my cart.  Grocery shopping makes me happy, but like I said before farmers markets are way better!

When I returned I set to making my first thing in the food processor for the night.

ALMOND BUTTER

026 I started by roasted 2 cups of raw almonds.  I think roasting your own almonds add a whole new level then previously roasted.  They were grinding while they were still warm!

I dumped in the hot out of the oven almonds into the food processor and they were off.  It didn’t take long to get a nice creamy almond butter!

I made two types.

The above is almonds + 1tbs chia seeds + 1 tbs ground flax.

My second was almonds + cinnamon + vanilla.027 Nick really liked the cinnamon one and he is not a big nut butter fan.

I enjoyed a sample of nut butter with a gala apple and packed up the extras into the fridge.

025 My second creation was for dinner.

I got the idea of crustini on my brain so I came up with a larger version for my dinner.

I mixed black beans, green peas, basil, sundried tomatoes and S&P in the food processor while I toasted my bread with EVOO.

Then I layered on my pea mixture with tomatoes and some parm cheese and then back in the oven for 10min.028 Yum!  Perfect light dinner after a weekend of indulgences with a side salad.

I love my food processor!  I am planning on using it for tomorrow’s Meatless Monday meal.  Any ideas as to what I could be making????

I can’t wait for almond butter in my oats in the morning!

Cookie Day

I’m back!

I had a couple of glorious grocery runs today to Whole Foods and Wegman’s and my joy of food has returned!  I was also able to find Florida Strawberries and some pickled okra to cheer me up!

Before I set out I had a mix of yogurt and cold cereals.

001 Stonyfield plain, TJs fiber cereal, Uncle Sam, vanilla almond granola (I will be making my own once this runs out!)002 When I returned from my 3 hours of food shopping I dug right into my favorite Whole Foods cookie (vegan ginger spice) and I made a ice raspberry chocolate coffee.  I really like this flavor coffee.

After eating a cookie I made some!007 I picked up the new Cooking Light at the airport and this coconut chocolate chip cookie recipe!

I made some changes by using – unsweetened coconut, chocolate chips instead of chocolate bar, whole wheat flour instead of white and 1/4 cup less brown sugar than the recipe called for.

My cookies did not look as large as these, nor did I get 25 out of the recipe more like 22 perfect tablespoons.012 I had about 5 throughout the day.

Along with my first cookie I had 1/2 of a Wegman’s whole grain bagel with flax topped with basil and some Dubliner cheese.

I also had a baby green monster to get my greens in!

004 Simple; two handfuls of spinach, 1/2 naner, cup frozen strawberries, 1 cup almond milk.

After lunch I went to town cleaning the apartment like there was no tomorrow.  Dust bunnies grown very quickly while you are not around!

I finished promptly at 5pm to watch a nail bitter DUKE vs. Baylor game.  Final Four baby!  This year as been nuts!  The only number one to make it probably had the worst odds.

At half time I got started on a lovely Sunday night dinner.

FISH!  Trying to eat more!

Tonight I got some Rockfish aka Striper for northerners (ME!).

I marinated it in honey, thyme and S&P then grilled on the griddler…I almost had a small fire.

This was so moist and flaked perfectly!

Along with my fish I made up some wheat berries that I combined with some sautéed onions and garlic with a touch of white wine and parsley.

009 I love wheat berries!  So chewy and you can put them in just about anything.

What is missing?  Something green!

011 I made a big salad of spinach, cucs, carrots, maters, goat cheese with white balsamic, EVOO and S&P.

I had a dark chocolate coconut cookie for dessert.  They remind me of mounds bars.  Mom and I were just talking about them on Sanibel!

Now it is time to watch the second half of Life (with Oprah, blah), it is mammals tonight!

Sunday Well Finished

Another weekend has come to an end and I actually had a pretty productive afternoon/evening.

I did head out to the local running store to talk to a consultant about the Virbram Five Fingers and I also wrote a few e-mails to Ashley and Margaret.  They didn’t have my color and I got a little worried because he highly stressed trail running only.  Now we have a few trails around here, but I do not think I could run the same path for all of my runs.  I also liked to use the trail as my long run location because it is flat and a once a week location.  Apparently VFF didn’t make enough of the shoe and are in limited supplies and colors.  I will continue to do research and consult, but the pavement that surround my home is always going to be a problem.

After shoe consulting I had a lovely lunch.

In my brown monster I had frozen raspberries, baby spinach and vanilla rice milk.

In between my everything bagel thin I had the last of my goat cheddar, avocado and cucumber.  I really liked these bagel melts, I wish I could have a griddler in my office.  Fresh pressed every day!  No you didn’t!

After my lunch had digested it was time for my first outdoor run since December 27, 2009!  I was really nervous, my heart rate was up, but my knee felt good.

I had planned on running 2.6 miles with a slight uphill at the beginning.  I ended up doing 3.5 miles!  I was so excited!  I could “feel” my knee, but it wasn’t pain, just there.  When I was finished there was no pain and that made me happy!

I felt so good that I decided to go to bikram this evening to round out my weekend.  It seems to be a nice conclusion.Capture This is not my studio, but just gives you an idea.  105 degrees of heat for 90min and 26 poses.  It takes a lot of concentration and determination.  I love the challenge and what it does for your bones, heart, organs and mind are just a plus.

I made it through all of the poses this time and got a bit further back in camel this time.  Progress.

When I got home I took a nice long shower and then made a simple satisfying dinner with about ten glasses of water on the side.

I roasted probably my last acorn squash of the season, and cooked a Sunshine veggie burger topped with sautéed onions and mushrooms.

Alright time for Sissy and I to watch the Oscars.  Who do you want to win Best Picture????  I’ve only seen Avatar!

Beans and Bread

Another weekend has some to a close and I am getting ready to go read in bed.  Before I can get there let me give you a little run down of about 2pm yesterday until today.

My lunch did not completely fill me up so I went back for a small bowl of Kashi H2H Warm Cinnamon and vanilla rice milk.

001 New bowl!  That is a huge vat of chocolate in the background on the Food Network.

For dinner Nick and I met up with friends for a burger bash in Federal Hill.  I had heard that the burgers at The Abbey Burger Bistro were amazing so I really wanted to try them out!

They have a build your own burger sheet and that is what I went with.

002 I ordered a bison burger with local cheddar, caramelized onions, pickles, tomato, stone ground mustard and lettuce on a classic roll with sweet potato fries.  I contemplating getting the veggie burger and the lettuce bun, but this was a burger place and I felt like my first time needed to be a real burger with a real bun.

This was great!  100x better than Five Guys.  I found that place very unoriginal and greasy.  Along with my burger I got an Abbey Ale (dark with tons of fruit undertones).  They have tons of beer here and their draft selection changes all of the time.

After dinner Nick and I met up with some other friends to hangout for a bit before heading home.  It was a late night!

I slept in this morning until 10AM!!!  Sissy was not happy to wait that long, but she was patient and only bothered me when I moved.

For breakfast I set to work making pancakes and I changed my mind on them about 10 times.  At first I was going to make banana blueberry pancakes and then they because blueberry with pb and blueberry jam.  A few more things went through my head and I finally ended on plain blueberry pancakes with a little real maple syrup.

007 I just really wanted authentic pancakes this morning.  Of course I added flax, chia seeds, vanilla and cinnamon.  I found that cooked blueberries because really sweet and that is why I skipped the jam.006 I had the banana and pb already out so I made a few pb and banana sandwiches while the cakes cooked.

004 Finally enjoyed with some French press coffee.

005008 After breakfast I did a few loads of laundry and contemplating running some errands but instead I chilled on the couch with Sissy and my book until lunch time.

I decided to make 16 bean soup and cornbread thanks to Jen.  I had the beans in my cupboard for a really long time and finally remembered to soak them last night.  I cooked up my Oikos cornbread to go along with my soup and to have a little bit more with my lunch :)

010 Multiply this by 4 and you have the amount of cornbread I ate today!

After lunch I started cooking my bean soup with a large can of diced tomatoes, 1 box of low sodium veggie broth, carrots, celery, S&P, bay leaves and garlic.  Simple because I wanted the beans to really stand out.  I set this on high and headed out to Bikram yoga.

It was once again ridiculously hard.  So hot!!!!  It is seriously challenging both physically and mentally.  I definitely did not hydrate enough before class and I had a few moments of lightheadedness.  I wasn’t really a fan of the teacher, but now I know not to attend her classes.

I came home showered, iced my knee and went diving into some beans and bagel.

013 Mmmmm beans!  I love beans! To list a few that were in here…mung, pinto, black eyed, lima, pinto, white and chickpeas.  That covers half!

Immune Boosters Wanted

Good Evening.  I think I am starting to get sick :(   I have some serious sinus pressure and I have been battling some drip for a few weeks now.  I will be focusing on sleep and immune boosters + greens.

I have to keep telling Nick that ice cream will not be good for the gunk in his throat.  Instead I just made him a blueberry smoothie with rice milk.  He seems to be enjoying it!

For dinner I went simple.  Kale (super greens to ward off sickness!), crab cakes (because we live in Maryland), and some roasted potatoes (because they were looking at me with their eyes).

011 I made a simple crab cake with:

  • 1/2 lb crab meat
  • spicy mustard
  • Old Bay
  • lemon juice
  • Worcestershire sauce
  • almond meal (instead of bread crumbs)
  • parsley

It made nine cakes.  I had 3 Nick had 6 :)   He really like them!013 My potatoes tossed in oregano, EVOO and S&P looked more like hash browns.  I wanted them to cook quickly.

012 I don’t think Nick really liked the kale, but I cooked it in apple cider vinegar and told them they would cure his cold!

I think it is time to get ready and climb into bed.  We are fading fast!

Lunch to Lunch

Hello there!  The weekend is winding down and I feel like I didn’t really relax  at all!  Therefore I declare the time after this most me and Zach Efron time :) 17 Again is on well, again!

Rewind to yesterday afternoon…I had a little lunch before heading out to pick up all of Nick’s party elements.

001 Apple with PB, veggie sandwich with peppers, goats milk cheddar, cilantro and red pepper hummus.

002 Great combination!  Then it was off to Carvel, Chic-fil-a, Taco Bell and the liquor store.

Party elements, cheesy gordita crunches, fruit salad, veggies and hummus, pretzels, chic-fil-a nugget, chips, salsa and guacamole that every loved!

Ice cream cake!  Nick’s favorite!

Birthday boy!  Nick actually ended up feeling really sick around 8pm, but we stuck it out until 11.  He has been sleeping all day and I just wake him up to shove cold meds down his throat and make him drink water.

I slept in this morning and woke up for a lazy bowl of cereal.

Speaking of butters I tried a new one with my lunch today!

008 This tastes like banana chips!  I had another new banana flavored item with my lunch.

Chobani champions collection!  This is a line directed at kids to eat low sugar natural Greek yogurt.  This was also a winner in the flavor category.  This came in a four pack with chocolate.  It should make an amazing dessert!

I also had a spinach salad with tomatoes, peppers and feta.

Now it’s time to go watch Mr. Efron and have a little Emergen-C of my own.  I have to protect myself!
