His and Hers

Nick eats/needs a lot more food than me and he likes to eat meat during dinner (except Meatless Monday, which he totally embraces!).
Tonight I thought I would highlight a dinner that I make to suit both our needs.
We both had stuffed peppers with a side salad of sorts.
HIS:
- larger pepper of the two stuffed with
- rice
- 1 sausage
- mushroom, sundried tomatoes, hot pepper and a bit of marinara – which I also used in mine.
- topped with parm
- salad
- tomatoes
- cucs
- red wine vinegar
- spanish olive oil
- rosemary
- feta (omitted from mine because I already had cheese on my peppers)
HERS:
- smaller pepper stuffed with:
- mushroom mix noted above
- peas
- refried black beans
- topped with parm
- salad
- tomatoes
- cuc
- red wine vinegar
- spanish olive oil
- rosemary
The key to making a veggie based and a meat based meal at the same time is to come up with a common denominator. I used my mushroom mix for this tonight. It was really easy to mix the different stuffing. I just made the mushrooms and then poured it into a bowl with Nick’s rice and sausage before stuffing it into the pepper. It only involved one more dish.
I will try and post more His and Hers meals from now on because I feel that it is an issue that many face because men and women do not require the same intake every day.

The Egg and The Monster

No holiday to celebrate this morning except maybe that it is almost Friday? It is also the last regular season kickball game before playoffs start and we are hoping to take home the silver Coors cup this year.
I had to start off with some super fuel for breakfast.
I almost duplicated yesterdays breakfast but my monster was smaller with a side of banana bread bar.

This was a nice variety of textures and flavors from breakfast.
I do miss oats though! I need some egg dishes! Frittata Friday?
Time to pack up for the day. I won’t be home until around 9pm!

Slicked Species

It is getting closer to land and when I head the NPR story with wildlife experts testimonials’ of the expected destruction I started to cry. The Gulf is such a delicate ecosystem as it is. There are already points when the waters become anoxic (no oxygen) and create dead zones in the middle of the ocean. This oil spill is going to kill a lot of things. From oysters beds to birds and sea turtles. What bothers me the most is that it took until today for any federal aid to head to the area. Now only when humans and the economy are at risk do we care. I don’t want to get to into it, but why wouldn’t the ecosystem be important enough to save on its own?
No matter who is helping, it is coming. This oil spill is going to affect this area for many years to come and some species that are already extinct may not make it out. If I could I would go to LA and help with the cleanup, but I don’t have the money or time off to go.

Back to light hearted food topics
Lunch was lovely!
Romaine and spinach with peppers, tomatoes and avocado with balsamic.
Plain yogurt with mango, kiwi and granola. This yogurt parfait was amazing! Fresh fruit >>>>>> than sugar fruit in most yogurt.
For my afternoon snack I gave the Amazing Grass bars another try. I just have an issue with the 27g of sugar! The second ingredient is sugar! I think I might try and make these on my own with my own Amazing Grass superfood powder. It will be cheaper at least.
After work I headed to the trail for a nice bike ride. I am really trying not to run two days in a row. It is going to be hard, but today I did a nice 12 miles on the NCR trail. I am pooped after. I cannot wait to have my road bike with tires that don’t slow me down.
I was starving when I got home! I showered quickly and has a slice of Dakota because I seriously felt like I could pass out.
I then had enough time to think though dinner and take the time to enjoy it.

I love lentils! I am a little peeved because Nick threw out my leftovers while he was doing the dishes
I was too slow.
I just had some espresso bean dark chocolate and I am heading to bead. I’m not feeling so hot and I can’t stop thinking about baby birds covered in oil.

Triple Green

Today is Earth Day! I have memories of this day going back to 4th grade when we had a whole school day of activities and games to educate children about the environment. I have always loved nature. I was that girl who collected bugs in the woods and frogs in the pond, and now I am working at the State’s Department of the Environment.
What do you do to protect the planet??? A few things off the top of my head that are really easy for everyone to follow are…
- support local operations from farmers markets to main street stores.
- plant your own garden – this saves money too!
- recycle!
- buy a lunch box instead of paper bags
- use tupperware over plastic baggies
- cool your home with fresh air over AC
- put on a sweater and turn your thermostat down in the winter
- unplug appliances – I need to work on this one
- bring your own bags to the grocery store
Just a few changes to make the world a cleaner, safer place for years to come.
Now onto some green oats!
Green oats, in a green bowl, eaten with a green spoon!
The usual mix:
- 1/3 cup oat bran, water, skim, Kefir
- 1 banana
- almond extract
- cinnamon
- 1 scoop Amazing Grass Superfood
- homemade flax chia almond butter
- chia seeds
Now I have to get moving, I need to drop off my recycling in another neighborhood so it gets taken care of!
REDUCE, RESUSE, RECYCLE!

Sundae for Breakfast

At least I have a sundae to get me started!
The morning light was finally good enough for some outdoor pictures.
In my Oikos yogurt bowl:
- Oikos, duh!
- 1/2 cup Kashi H2H Warm Cinnamon
- 1/2 cup TJs fiber
- 1/4 cup Uncle Sam
- 6 strawberries
- 1 banana
- large dollop of PB&Co Dark Chocolate Dream
- chia seeds
- TJs whole grain drink
I could not put this down! It was so delicious!
Have you done your taxes? Get them post marked today! There are also a bunch of food discounts out there know as tax day relief. I’ll be scoping out the best deal today to see if it is worth my time.
OK I need to go pull my straightener out for the depths of my bathroom and get my short hair under control. I could always just put it up

Drip, Sputter, Drip

Well we seem to have gotten water back some time in the night, but it is still sputtering out of the taps and I don’t think I will be drinking it straight for awhile.
I went back to old faithful this morning and I sure did miss my oat bran!
- 1/3 cup oat bran
- 1/3 cup skim
- 1/3 cup sputtery water
- 1/3 cup Stonyfield plain
- 1 banana (1/2 mashed in, 1/2 on top)
- 1 tbs wheat berries
- chia seeds
- Sanibel pb
- vanilla
- cinnamon
Oats in natural porch light…we are so close to sunrise breakfasts again!
Note: The news just told me to conserve water if I have it…guess I should have held off watering my plants this morning, but they would have died today!
Try going a day without your taps or toilet. Nick was happy he didn’t have to do the dishes.
Kickball tonight if the t-storms hold off.
It is going to be a long day.

Biking, Almost There

My day was crazy number crunching. Blech. Thank you Mr. Obama.
At least lunch was good and kept me going through the day.
Kashi crackers, strawberries and mango, salad with spinach, maters, wheat berries, avocado, sweet potato latke, goat cheese and balsamic vinegar.
I made it through the afternoon just in the nick of time and I was out of that place. I had a date with my bike!
Before heading to REI I had a piece of toast with banana pb.
REI is an amazing store! I had never really paid attention to it because I always thought it was more like EMS, but they actually have some really cool stuff. It seems to focus on all of the sports Dick’s forgets about like cycling, hiking and paddling. I really wanted to get my biked tuned up by they couldn’t take it until Tuesday. I am worried because it is so old that it might need a lot of work
I did buy a new helmet and sunglasses.
These sunglasses will be good for running too. They are so light and I won’t look like an idiot running in my normal glasses anymore.
Well I tried to ride my bike a little bit on the NCR trail, but my tiers really needed air and I could tell she needed some love. Rather then pushing it I loaded the bike back into the car and headed home. I had gotten a late start anyway thanks to an accident on the way home.
When I got home I started making Nick’s dinner then mine. I really wanted to use up my leftovers before we leave on Saturday.
A lovely bowl of mush! 2 sweet potato latkes diced with 4 pieces of leftover baked tofu, peas, spinach and some organic, zero sugar, Seeds of Change pasta sauce.
Alright time to get dressed and head out the door. Lets make it 3-0 tonight!
April Fools

I hope the fields are playable from all of this rain. Tomorrow is supposed to be even nicer and playing hooky would be amazing, but that would never happen
Today I went back to an old friend.
Oats in a Jar!
I made the usual mix but added some leftover mango bits leftover from packing lunches. It made the oats extra sweet and delicious.
- 1/3 cup oat bran, skim, water, Kefir
- cinnamon and vanilla
- chia seeds
- wheat berries
- 1/2 banana
- ~2 tbs mango pieces
- granola
- ~1 tbs + raw almond butter
Finishing off this jar means I only have 3 open jars of nut butter. Does that mean I can start making my own????
With a lovely cup of chocolate raspberry coffee.
In national news, what do you think about this offshore drilling that Obama approved?
Personally I really think that there are better ways to decrease our reliance on foreign oil that don’t disrupt our fragile ecosystem.
Did I already touch on this topic? Well if I did it is obviously annoying me and I will be interested to see if it can get through the house and senate.
Ugh it is Aprils Fools Day. I really do not like this “holiday”.
