Welcome aboard the Amtrak train 148 Northbound to Stamford, CT!

016 And I am ready to go!

Before I could board the lovely train I had a less eventful day than morning…and that is a good thing!

To brighten my spirits mid morning I broke for a 2 pump pumpkin spice latte and white chocolate ginger biscotti from the cafe downstairs.

010 So the coffee was good but not pumpkin at all, but the biscotti!  Oh hello gingerbread cookie dunked in foamy coffee!

012 There was a ton of delicious foam.

011 So I happily went on with my day until lunch time.

Giant salad with organic greens, carrots, snap peas, maters and mustard balsamic dressing.  I also had some kashi gold with and LC wedge.  Due to my mid morning snack I saved the pear for my train ride, but I don’t think I will get to it because I want to save room for dinner!  I am getting in an hour early because I got on an earlier train (last ticket btw!!!!!) and therefore will be in CT at a reasonable dinner hour.  I can’t wait to see my momma!

Thank my boss for letting me leave at 3 or I would still be on the later train.  Thanks Elaine :)

Once aboard I settled in for some Food INC.  I have seen the movie, but I really wanted to read the book so I could be more informed on the topics.  Books always seem to tell more than the movie, especially ones like these…there is just so much to know!  I already have my next 2 books picked out from references.  Fast Food Nation and Food Politics.

About an hour into my trip I had to break into my large snack of the thumb cutting causing apple!

018 I made a leftover homemade waffle sandwich from PB and finger hating apple.  I also had the other part of the apple on the side (keep in mind that is a 1/4 piece of the apple, told you they were huge!)

WellI have about 2 hours left until home so I am going to get back to my book maybe write another post and who knows maybe even visit the snack car, but that is doubtful!

No not that movie!

W went to see “Where the Wild Things Are” tonight.  Lets just say I would not let my child see it if they were under the age of 10.  It moved slowly at times and got really violent!  I did not enjoy it.  I think I liked the illustration the most about the book.  It was a little to artsy for me?

I am beat so here is the rest of my day in a nut shell, I’m in a nut shell!

003 Prunes, ounce for ounce better than apples!  Had about 5 around 10:30.

Sweet potato, tofu, spinach and guac on a WW wrap.  Cottage cheese with a balsamic river and a pear.

Snack was interrupted by a visitor so I forgot to take a picture…but it was a classic apple slices and PB cinnamon raisin swirl.  I am thinking of having ants on a long tomorrow, and I am really excited about it!

I did remember my Adora disk right before I was leaving!

006 After work I went to Target to try and find some things for my Halloween costume, cat litter and birthday cards.  Leggings are $5 in all colors, but of course they did not have my size!  I might try looking at home this weekend.

I rushed home and packed up some dinner to take with us…while packing I had a handful of granola (damn Bear Naked for being so moist and delicious! and some sun chips garden salsa flavor).

Wait hold the phone…when I came to the door I had a present from mommy!

007 Woohoo!  Guess what I am having for breakfast tomorrow morning???  Thanks mom!!!

Back to the food…

008 leftover BBQ lentil meatloaves from a while back, pita to be stuffed, veggies for dipping in yogurt lemon sauce, animal crackers that were supposed to be split with Nick, but he said no and I happily gobbled them down.

Now we are watching the Wire and hittin the hay!

Stuffed Like A Turkey on Thanksgiving! October 20, 2009

Wow I am pooped!  Today wasn’t even that crazy.  I think it may have to do with my allergies and how stuffed I feel after dinner!  I would climb into bed right now, but Biggest Loser is on and Nick is watching The Wire on the bedroom TV.

So because of my poopy state I am going to make this sort of a quick one.

Morning Snacks.  1/4 giant honeycrisp apple and almonds.

005 Lunch was a huge delicious salad and pita with hummus for dipping.

006 In the salad:  mixed lettuce, spinach, carrots, cucs, celery, leftover greens and tomatoes, snap peas and balsamic with mustard dressing.

007 Sweet end!  So glad to have these back in my life!

I had planned on doing another 8 mile run on sidewalks only.  Around mile 3 my quad told me otherwise.  It wasn’t hurting, but not feel the best.  I decided to listen to my body and cut down my run to 6.5.  It was not the best run even, but my last 1.5 miles felt really good.  I tried to push myself a little extra while I was feeling good.  With my extra time I did some core work and pushup before throwing dinner in the oven and hitting the showers.

Good old loin de pork was on the menu.  Marinated in red wine and grill Mrs. Dash grill seasonings.  I like using Mrs. Dash because A) it is one of my only memories of my grandfather and b) there is no salt added.

010 I wasn’t feeling a ton of meat tonight so I made up some tofu he same way as the pork and had one small piece of meat with 3 pieces of tofu.  I also had 1/2 of a sweet potato (yes that is 1/2!!!!) and onions, mushrooms and spinach sautéed in veggie broth and herbs.  I think my sleepiness is due to my potato…

011 No need for dessert tonight!  Sicily is already dipping out.

012 I am going to try and get Nick to turn off The Wire and let me watch Biggest Loser in bed…where is Dina’s family???  She has 2 people greet her???  And Shay only has her husband and 2 step sons????  Very odd to me.

Hot Dog + Pickles August 27, 2009

Busy day up in Baltimore town.  Lots of stimulus work with three more pushed into action!  Get those jobs creatin!  There is actually lots going on with the state with furloughs and cut backs.  We are moving and people are losing their jobs…crazy times!

At least all of this hub-bub made the day go by quickly.  I got a brief break for lunch and some blog reading.

003Roll-Up wrap (I am starting to like like these better than flat out wraps, less rubbery texture) with hard boiled egg, red pepper hummus and spinach.  One very large carrot, mango, blueberries and dark Adora disk.

004005Afternoon snacks included a baby CT plum, blueberry oat round, and black bean brownie…all not pictured.

Today was speed work and I really wasn’t feeling outdoor running…it was humid and I was feeling like my legs needs a little less stressful surface.

I did 4 miles of speed work: 5min warm-up at 6mph then alternated 1min sprints at 9mph, 2min at 6mph.  36min total.

Then I did leg strength, arms and core.

Sooo what was I craving?  Turkey dogs and pickles…yeah I don’t know.  I am blaming it on cleaning out the fridge.

So here is what came of the two.

006Bed of spinach with 2 slices turkey dogs, slices pickle, mustard relish, and mixed peppers.  I also had a piece of WW toast with some more amazing light Gouda TJs cheese!

007See there were peppers!

Now I am currently watching last weeks Project Runway and getting into bed.  It will be interesting to see how Lifetime takes the show.  Man Heidi is gorgie!!! And I love her family.

DOES ANYONE WATCH PROJECT RUNWAY?? I feel like I have been watching a lot of TV but it is really only 3 shows…they are my favorites though!

Cutting it Short August 5, 2009

All thumbs up at the dentist! WooHoo! I seem to always have teeth issues and it is NOT because I don’t brush there is just something with my teeth that they don’t understand and causes me to have px toothpaste.

Back-up a bit…at work we finally got to SHRED documents!  Well actually we put docs into a bin that will be shredded off site.  So it wasn’t the dramatic shred I was hoping for, but we did get a ton of files out of the place.

We broke for lunch at 12, and I got to try my soup from last night!003I was amazing! Nice and spicy with the smokieness of the cumin and the sweetness of the corn.  Check it out!  You can see the tomatillo seeds :)

004I also had some white peach, strawberries and an adora disk.  Oh and obviously a large piece of delicious honey oat bread for dipping!

I got to leave at 1pm for the dentist and it was like I was skipping out on school.  Working only 5 hours was amazing!

After my 100% check and gold star I headed over to a small shopping park for a few more things to add to my Boston bound package!!! ;)  Oh and what did I find???  Only that Sports Her Way was having a HUGE sale!  I have been wanting to get some more gear for running (I currently have mostly lax gear from college) and 50% off under armour and nike was just up my alley. Check out my running gear from this evening!

005Two new pairs of dry weave shorts and nike dryfit tanks.  You can also see what is going on with my garden…not so good.  Well at least my tomatoes don’t like the deck.

I did 4 miles of hills in 34min.  My legs felt like lead, but I still managed a pretty fast pace.  I remember Wed. was my hardest day last week too.  Will be interesting to follow.

AND dinner!  I really had no idea what to make so I went with two plates full of lots of goodies.

006007008Plate one had: 1 egg + 1 egg white + sauteed onions + green salsa + avocado and a baby sweet potato.  Plate two had: sweet pepper, cucumber, tomato and chickpea hummus.  I love plates for dinner, delicious! So many flavors and variety.  I am assuming I will have the same PB and 1/2 arnold thin with tea in a little bit, once I get those things in my mind I can’t get them out.

Monday seems to be flying by.  Love that!

In the news today, Rachel Alexander (horse that won the Preakness) beat the boys again!  I love a good filly win!  Cash for Clunkers is out of money 27 days faster then they predicted.  And, closest to my cause, the world’s fish population won’t be gone by 2048 as predicted if we stop overfishing NOW!  I remember when this original story came out, total shock!  Buy sustainable fish!

Anyway, onto my delicious lunch!

I had a bangin lunch today full of special treats!  I had a salad with leftover tabbouleh salad, cucumber melon (which is a melon that tastes like a cucumber) 211 and carrots.  I also had 1/4 apple, 1 white nectarine and a few strawberries.  Why so much fruit?? Only to dip it into my favorite mocha yogurt!!!!  I as had a extra super special treat that my mom brought me from the town of my high school, Kent CT!  A marzipan truffle!!!!

Training update!

  • Katherine and Liz have a 6 mile run planned for this afternoon!
  • Jen finally got back on the road after getting and awesome score on her GREs!!! She did 7miles yesterday…told you she could run!
  • Yesterday evening I did 5 miles with hills is 42min.  I had to double check on google earth to make sure my mileage was correct…that is super fast for me!

Afternoon snack was a NEW oat bar!  Orange Cranberry, Pecan and Carob Chip!  They are a winner!  I got the orange cranberries from TJs and they just remind me of an orange cran pecan bread I used to eat at thanksgiving time.

I also love that these have ZERO added sugar except for the bit in the cranberries.  I really prefer making my own bars as opposed to regular granola bars that have so much added sugar!

Today was cross training day aka spin class.  Monday spin is the hardest day they offer at my gym, and I don’t know if my muscles were tired from my run yesterday or it was just really hard, but today’s class kicked my butt!  I had such a hard time with all of the sprints, ugh.  I am so happy tomorrow is yoga and stretch day.  I may have to re-evaluate my spin cross day once I am running 10miles the day before.

On the way home from the gym there were 4 french bull dogs out for a walk…sooo cute and put me in such a good mood!

After a quick shower I tried something new…soba noodles!  I mixed about 1/4 block of tofu with garlic, ginger, onion a small amount of soy sauce and lime juice.  While this simmered I added a patty pan, tomatoes and a 1/2 of avocado when finished.  I topped about 1oz of soba noodles, which I cooked to the package specifications.

008This was pretty delicious!  Maybe soaked in the juices over night as a cold salad it would be extra delicious!  For a nice treat I had a Vitamuffin Pom chocolate brownie and an adora disk…chocolate! Yum! :)
