From the Freezer

I seem to have a few new readers to I wanted to say welcome, and if you have any questions about real food, local and sustainable eating or healthy fitness just let me know!

In our house I always try and keep some semi-healthy frozen food for Nick to eat when he has an “I’m starving” moment and I really don’t want to make anything.

One if these items is vegetable gyoza or pot sticker.  Well there have been four lonely dumplings sitting in my freezer for some time now and I thought I needed to find a way to get rid of them.  Enter Real Simple’s dumpling soup.

I love recipes that I can alter and make in one pot so I tore this out the moment I saw it.  In my soup I had for 2 servings:

  • 2 stalks celery chopped
  • 1/2 box mushrooms chopped
  • 3/4 box low sodium veggie broth
  • 2 carrots chopped
  • 1 cup  frozen peeled edamame
  • 4 gyoza
  • ginger
  • soy sauce
  • hot chili sauce
  • cilantro

I varied my recipe based on what I had ie. I had white mushrooms and not shitake so I used those.  I had a piece of my bread on the side for broth dunking.

I love that this recipe has everything in it and took me all of 15min to make.  I usually try to stick to fresh produce, but it is always nice to have something easy in the freezer to grab and go when you don’t want to hit the drive through.

Nick and I are off to Springfield Farm this morning to say hi to some chickens and buy some of their friends if we like what we see.  It is freezing here so I hope the animals are all inside the barns snuggled up to each other.


Ladies Night

Hello!  It is just Sissy Pants and me tonight.  Nick is staying late at work to finish the company budget and other such things.

Guess what I had for lunch today?!??!

Snickie snack time was the other 1/2 of my berry bran muffin from this morning’s oats and an apple, which ended up being half rotten :(

006 These muffins are super moist for bran muffins.  I am glad I have such a strong stomach to handle all of these beans and fiber! (Knock on wood!)

I had another amazing workout at the gym!  No pain!

  • 3.5 walk 5min
  • 3.6 @ 10.5 incline 5min
  • 15 min run!!! 5.0, 5.5, 6.0
  • 3.6 @ 10.5 incline 5min

The gym was packed tonight!  First of the month maybe???  Anyway I got my lifting in and my PT exercises but it was cramped.

After the gym I headed home for a quick shower and then dinner!

I got to make a Meatless Monday meal that I didn’t have to worry about Nick liking!

In a pan (I could have used a wok!)

  • sautéed onion
  • 1/3 block of tempeh
  • garlic
  • soy sauce
  • baby bok choy
  • snow peas
  • mushrooms
  • cilantro topper

When it was almost done cooking I threw in a mix of things and called it a sauce.

011 Hosin, soy, honey mustard.  It made a pretty good sauce, but I could have used a little less soy sauce.  Even though I get the low sodium kind it is still really salty.

This was my first time cooking with bok choy, and I really liked it.  Didn’t taste like much cooked but it had a cabbage taste when it was raw.

Sissy and I are going to finish watching Bones and then head to bed and read!  Monday Done-day!
