Friday Night Lights

Nick and I went low key tonight because we both have early morning activities that we need to be perky for
My office was super freezing today and I really wished I had soup for lunch, but when it is 80 outside I don’t think about soup!
Instead I have a lovely salad, crackers and apple.
In the mix; spinach, tomatoes, carrots, avocado, pumpkin seeds and 2 pollet hard boiled eggs. Check out how yellow that yoke is! It looks even better in person.
I bet you can’t guess what I had for a snack…
I had planned on going for a bike ride after work, but when I got home there was serious cloud cover and wind. Bummer, so I went to the gym.
I did 30min on the arctrainer and 20min on the elliptical. I also did a few leg exercises, arms and abs.
A quick shower when I got home and then it was time to get started on hot dogs for dinner! It was Friday Night Lights night so I made “game” food. Well healthy versions of hot dogs and fries.
2 Applegate Farm turkey hot dogs on a flat out fold with ketchup and hot dog relish. I love hot dog relish, and it may be one food I will not give up.
Folded with a side of sweet potato fries. Yum! No nitrates for me!
Along with our hot dogs and fries I made up a salad.
Romaine with tomatoes, carrots, cilantro and cucumber. I dressed it with a EVOO, red wine vinegar, S&P and rosemary.
For dessert I had a little ice cream and brownie but I forgot to snap it before enjoying. I had planned on banana soft serve, but my bananas did not freeze in 4 hours? Does that seem odd to anyone else?

The Egg and The Monster

No holiday to celebrate this morning except maybe that it is almost Friday? It is also the last regular season kickball game before playoffs start and we are hoping to take home the silver Coors cup this year.
I had to start off with some super fuel for breakfast.
I almost duplicated yesterdays breakfast but my monster was smaller with a side of banana bread bar.

This was a nice variety of textures and flavors from breakfast.
I do miss oats though! I need some egg dishes! Frittata Friday?
Time to pack up for the day. I won’t be home until around 9pm!

Posted: May 2, 2010 Filed under: Sunday | Tags: banana bread, pita, TCBY, The Falls Leave a comment »Hola! How was your weekend? I think I am finally recovered from my mint juleps and bourbon brownies yesterday. I used to be able to drink like a fish and now two drinks takes me down.
I had a nice and easy lunch.
Pita with spinach, homemade hummus and pepper jack melted cheese. I also had a pink lady.
I might have picked apart a few bourbon brownies along the way too.
I also had a little baking experiment today. Banana bread bars.
I am some “just bananas” (dried bananas) from TJs that had been around for awhile so I made them into my afternoon snack bars. The recipe isn’t the best, but they will do the job of my afternoon pick me up!
After lunch I did a bunch of cleaning before heading to the gym. I needed a serious sweat session and a movie was on the TVs so I got in 30min on the bike and 30min on the ArcTrainer. I ended with some strength moves and core. It felt food to sweat.
The weather was so nice Nick and I decided to go out to dinner and find a place we could sit outside. We settled on The Falls in Mount Washington.
We started off with some braschetta that were pretty good, but I would have enjoyed some extra balsamic.
I got the salad with beets, onions, feta a greens for my entre and added a side of summer squash to it. For $8 this salad was really small and could have used more beets and less onions. Nick got a bison burger that he said was cooked poorly.
Lets just say we will not be going back there.
Nothing a little white chocolate mousse couldn’t fix.
I really wish we had a self serve for-yo place here
Maryland and their stupid snow balls.
I am pooped. Time to climb into bed and get ready for another week.
