Garden Update!

I started by fencing off my little plot and found out it is about 15ft x 4ft. Super long! I tried to get out all of the rocks and pieces of glass while also checking out what was leftover from last year.![]()

Lots of little squash of some sort. I pulled a bunch of these out so they weren’t over crowded. We shall see what they turn out to be! Tilling was seriously hard work.
Next I dumped out a giant bag or organic compost and some organic plant food. The odd shape is because I am trying to give everyone an equal amount of light and my plot is east, west lengthwise. Till, till, till.![]()
Planted! 4 mixed greens, 6 spinach, 6 heads of romaine, 6 heads of kale, 4 sweet peas, and 2 green beans. Next up, tomatoes, peppers, eggplant, cucumbers, zucchini, and herbs!
I need more compost!
Red Beans and Rice

When my mom and I were in Costa Rica last year, we had the most amazing black beans all of the time for breakfast, lunch, and dinner. They were cooked in a slow cooker and I loved combining them with a tortilla and eggs in the morning. I could not get over their creaminess and I attempted to recreate that tonight for dinner.![]()
I cooked the beans based off a bunch of recipes in the slow cooker for 8 hours (6 hours low, 2 hours high) along with 1/2 an onion, jalapeño, salt, and 2 cloves of garlic.![]()
I added some fresh cilantro, salsa, and a lime slice to the beans after spooning them on top of rice cooker brown rice that I doctored up with more cilantro and lime. We love cilantro around these parts, and I used to hate it!
Along with our beans and rice I made up some fresh Maryland greens with MD beet chips. I had no idea you could cook beets so fast! 475 18min thin slices aka “chips”, olive oil, s&p. They were crispy and delicious. I will no longer wait an hour for my beets to roast and then burn my fingers trying to peel them! I got the idea from my Fast, Fresh, and Green cookbook, that we got for our wedding.

Meatless Monday Meal

I haven’t had a Meatless Monday post in while but I seem to have a ton of food in my fridge at the moment (probably why my grocery bill was $40 more than usual this week
). This led me to make some beans and chickpeas from “scratch” and make hummus and a giant salad with bean toppings.
Sautéed onion with navy beans, spinach, mixed greens blue cheese and homemade mustard and vinegar dressing.![]()
Rutabaga fries of the side with more dressing.
Delicious and finished off with an Adora disk aka my calcium supplement.
Off to watch a new House and work on wedding things! The wedding is really excited but weighing very heavy on my mind.

Random but Delicious

Back to posting a day of foods…well not really, just a few standouts from the past few days.
Lets start with breakfast
I typically eat some form of oats in the morning, especially because it is getting so cold!
This is steel cup oaks with 1 small apple deiced, small amount of pumpkin butter, cinnamon, 1 scoop hemp protein, vanilla and a dollop of homemade almond butter.
Leftover tortillas, leftover homemade refried beans, avocado, salsa and a drippy egg.
I love dippy eggs!
Ding! Dinner time!
I had some leftover meat from my Taco Bell experience so I made 6 meatballs out of about 1/4lb of beef.
In the balls:
- 1/4 lb beef
- 1 egg
- 1/4 cup oat bran – I did not have breadcrumbs
- bunch of fresh parsley
- S&P
- Worcestershire sauce
On top of Seeduction bread from Whole Food, spread with tomato paste and grated parm.
Worcestershire sauce is the key ingredient.
Between lunch and dinner I have been having a snack to fuel me through my workout.
I have been swimming a lot, but my head really starts to hurt after about 1000m. What is that about??? I know it is my sinuses, but I don’t know why it gets so bad when I am swimming?
I get to see Nick and my Mom on Thursday! Yay for 4 day work weeks!

When I say MamaPea post a TB recipe I knew I had to de-veganize it (Sorry!) and let him enjoy.
I even made my beans from scratch!
In my grande bean burrito I had – MamaPea sauce, happy cow meat aka ground beef from the Farmer’s Market, “refried” beans, cheddar cheese and avocado. I had one with meat and one without.
Beefy!
No Beefy!
Soooooo good.
I must say I got these tortillas from TJs and they are the low carb kind and delicious. I hate tortillas where I can only eat one because they are 160cal+.
Along with my burritos I had a pumpkin beer!
I saw Kath (the pumpkin beer expert) rave about these so when I saw them I had to get a six pack.
Good thing I am a light weight, because these were the most expensive pumpkin in the joint!
Now time to wait…gruff.
Great Beans

I have to get this recipe up first though, Kath knows her bean dips!
I made Kath’s Bright Bean Basil Dip (with black eyed peas instead of navy beans, a bit of parsley and pumpkin seeds) for tonight’s dinner. – Mom, you should make this with white beans to replace the TJs kind!
Spread it out on an Ezekiel English muffin.
Topped with layers of eggplant, yellow squash and then more eggplant – all baked in the oven for 30min at 350.
I had two of them for dinner with a side salad.
Time to go get Sir Nicholas!!!!

His and Hers Mexican

His
Difference? Pork Chop marinated in lime juice, cayenne, garlic powder and cumin, topped with cilantro.
We both had…
A mix of kidney beans, zucchini, orange pepper from the garden (!!!!), onion, cilantro, oregano, lime juice, garlic powder, chili powder and salt. I did try to give Nick more veg than beans, he is not a bean fan. The horror!
We also had spinach, tomatoes, peppers and cucs – his in a salad, mine under my beans and to the side.
The best part of the meal was definitely the guacamole and chips we both enjoyed!
Yum! It has been so long since I made delicious guac!

Blueberry BBQ Chicken

Nick and I are currently watching Duke vs. Maryland game for the regular season ACC Championship and Maryland is looking good. Booooooo. Factoid – both Nick’s dad and my mom went to Duke at the same time. They didn’t know each other.
Today went by pretty easily we are dealing with getting all of our capital projects in by the end of the fiscal year and it is a bit stressful. We are also approaching another quarter end to Stimulus data. Things are heating up!
At least I had an easy lunch to grab and go. Beans and bread!
16 bean soup and cornbread.
This soup gets better every time, but it is sooo filling. I feel like I am a giant lima bean when I am done.
Right before leaving for the day I enjoyed a lovely Honey Graham.
Today’s recovery workout included 40min of cardio/ 3 miles!
- 5min walk @3.5
- 5min incline walk @3.6 and 10.5
- 20min run @5.0, 5.5, 6.0
- 5min incline walk @3.6 and 10.5
- 5min walk @3.5 and 3.5
I also did curls, overhead press, flyers, arm raises, core, PT strength moves and 20 push-up.
The knee felt good. I am going to try and run outside this weekend and I am so psyched.
When I walked into the apt I was greeted by Sissy and the lovely smell of BBQ.
Lovely blueberry bbq chicken! Before I left for work today I put 2 organic chicken breasts in the slow cooker with 1.5 cup BBQ sauce, 1 cup chicken broth and 2 handfuls of bloobs.
I topped some broccoli and bok choy with my share of the BBQ and dug right on in.
I think it would have been even better if I had added the blueberries right at the end. They didn’t keep their flavor as well as the cranberries did last time I made bbq chicken. Overall it was still delicious!
Green tea and Adora are on the dessert menu again.
Lets go Duke!
Ladies Night

Guess what I had for lunch today?!??!
Beans and bread!

Snickie snack time was the other 1/2 of my berry bran muffin from this morning’s oats and an apple, which ended up being half rotten
These muffins are super moist for bran muffins. I am glad I have such a strong stomach to handle all of these beans and fiber! (Knock on wood!)
I had another amazing workout at the gym! No pain!

- 15 min run!!! 5.0, 5.5, 6.0

The gym was packed tonight! First of the month maybe??? Anyway I got my lifting in and my PT exercises but it was cramped.
After the gym I headed home for a quick shower and then dinner!
I got to make a Meatless Monday meal that I didn’t have to worry about Nick liking!
In a pan (I could have used a wok!)
- sautéed onion
- 1/3 block of tempeh
- garlic
- soy sauce
- baby bok choy
- snow peas
- mushrooms
- cilantro topper
When it was almost done cooking I threw in a mix of things and called it a sauce.
Hosin, soy, honey mustard. It made a pretty good sauce, but I could have used a little less soy sauce. Even though I get the low sodium kind it is still really salty.
This was my first time cooking with bok choy, and I really liked it. Didn’t taste like much cooked but it had a cabbage taste when it was raw.
Sissy and I are going to finish watching Bones and then head to bed and read! Monday Done-day!
