Adventures In Juicing!

Nick got a juicer for his birthday so of course  I was the first one to use it Smile  You snooze you lose!

It was a little loud and I was worried the pulp was going to get all over me, but I got out of it without a drop of beet juice on me!  I juiced 2 small apples, 6 carrots, and 2 small beets to make one large glass of juice.IMG_1500

I know there is debate about juicing in terms of cost/clean-up/missing the fiber, but I thought this was better than any other juice I have gotten from a juice bar.

Now what can I do with the pulp?!?!IMG_1503

Red Beans and Rice

No our dinner had nothing to do with the Mardis Gras festivities, but it did involve red bean and rice!

When my mom and I were in Costa Rica last year, we had the most amazing black beans all of the time for breakfast, lunch, and dinner.  They were cooked in a slow cooker and I loved combining them with a tortilla and eggs in the morning.  I could not get over their creaminess and I attempted to recreate that tonight for dinner.IMG_1467

I cooked the beans based off a bunch of recipes in the slow cooker for 8 hours (6 hours low, 2 hours high) along with 1/2 an onion, jalapeño, salt, and 2 cloves of garlic.IMG_1469

I added some fresh cilantro, salsa, and a lime slice to the beans after spooning them on top of rice cooker brown rice that I doctored up with more cilantro and lime.  We love cilantro around these parts, and I used to hate it!

Along with our beans and rice I made up some fresh Maryland greens with MD beet chips.  I had no idea you could cook beets so fast!  475 18min thin slices aka “chips”, olive oil, s&p.  They were crispy and delicious.  I will no longer wait an hour for my beets to roast and then burn my fingers trying to peel them!  I got the idea from my Fast, Fresh, and Green cookbook, that we got for our wedding.

Just Beet It

Holy Moly it is freezing outside!  If you live from Chicago east you know what I am talking about.  The news says it is 30% cooler than the normal temps for this time of the year and I worry about the FL citrus crops.  Global Warming?  I don’t really believe in the whole thing, but that is another topic.

Tonight I embarked on my first ever beet adventure.  It wasn’t pretty, there was a lot of red all over my kitchen and my fingers but they taste way better then anything out of can.  They took a long time to cook and the skin gets really brown when baked, but there was no way I was about to peel them.  I treated the skin like a potato or carrot skin.  Obviously I wash them before hand!

My beets came out way darker than any other I have had, and I am not sure why but that didn’t seem to change the way they tastes.

Along with my beets I cooked up some lentils with leeks and goat cheese.  Anything tastes good with goat cheese but I love lentils.  I always seem to forget about them.

I felt like I needed a little grain action so I grabbed a pita and stuffed her full.

Much better!  Chewy, crunchy, goaty, good.

I have two more beets to eat but I am not sure I would ever make them again…I don’t love them enough wait over an hour and make my hands pink.  I think I will leave the beets to B Bistro!

One thing I don’t think I will ever stop making is… Jenna’s Cranberry Orange Pecan Bread.

This stuff is amazing.  I know it looks dry and crumbly, but it has amazing flavor and I love fresh cranberries and oranges together!  The batter is really dry and you would think it would not come together, but magically it does!  She also used walnuts but I am allergic so pecans work perfectly!IMG_0591

I had to try 2 pieces for dessert to make sure I made it correctly – hot right out of the oven!

OK, not so much.  She is not big on being held but I feel like she has been missing from the blog!

I am off to snuggle with my fur ball and read my book under covers.

Monday, Monday

Oh Monday, why couldn’t it be Sunday?

IMG_0314 Sissy was ready for the Ravens game yesterday, too bad they lost!  Booo Bieber Brady.

Sunday also means Nick leaves and it is time to get ready for another week.

I had an appointment with the Honda dealer after work tonight and I didn’t get home until 7!  I needed to shower and eat ASAP!

I had gotten some beets at the farmers market last week and it was finally time to eat them!

Started off with spinach on the bottom.

IMG_0319 Sprinkle of ricotta and fresh cracked pepper.

Delicious combo of protein, veg, fats and grain.

I’m getting my hair did tomorrow after the farmers market.  Any suggestions?  I am thinking about growing out my bangs a bit and parting my hair further over.

What is your favorite way to eat beets??  I like the golden ones better because they don’t dye every single thing they touch!
