Peaches

To start off I got the Ball starter kit, 1/2 pint jars and then I went back for the canning kit and some pectin.
I followed these directions.
Wash jars in dishwasher.
First I had to clean and peel the peaches.
Boil peaches 45sec dump in ice bath, peel by hand.
Slice peaches and coat with lemon juice.
Stuffed the peaches into jars and let them rip.
Problem here…the jars are supposed to be covered but I didn’t have a bigger pot. I have heard and at least one pop so that is a good sign.
Boil for 20min.
No sugar added peach jam. I threw a little cinnamon and basil is a few of them just to try something different.
I still a lot of peaches left…I am thinking of baking something and freezing some, but I do not have the energy to go get more jars and start this all over again. At least I know how to can things now!
These better be the best peaches ever!

I asked my peach guys (two typical farmer boys – seriously) if they ever sell their peaches wholesale.
Sure do!
$1.00/lb vs.$2.49/lb
I basically got a apple box full of peaches for $20. To put it in perspective last week I got 6 count peaches for $9.00.
They also threw in a reusable bag from their farm. Jackpot!
So what am I going to do with these peaches?
Can them. I realize this is going to take time and patience. One if these things I have little of so this will be a test for me. At least some of my peaches are a lot bigger than my grip.
Come Sunday, I hope my peaches are ripe and I can get canning!
I am so excited to have peaches in winter that are not from a different country!

Sorry no post about what I made last night…they didn’t come out right…I don’t think I cooked them long enough…again with the patience.
