Ugh our neighbors are having some sort of dance party on a week night, what?

Anyway…

Another Monday bites the dust!  It was a pretty uneventful day around here except the sun was shining for the first time in almost a week!  I was so excited to run outside this afternoon!  But first I had to get through the day!

My oat bran held me over well and I had my snack of 1/4 of my giant honey crisp.  I still have 1/2 the apple left!

Then don’t ya know it was lunch time!

013 Kind of ugly eats, but tasted oh so good!  Leftover wild rice soup and cantaloupe with bear naked granola.

014 Simple and heart warming flavors.  Perfect on a fall day.

Tick, tick, tick…yep it’s Monday…

I had few snacks to get me home.

015 Mini Cashew cookie Larabar and seltzer.  I actually liked this bar, but it was so greasy and I could make one on my own.  I keep saying it but I need to get back on the homemade Larabar bus ASAP, and where are my oat rounds???

My next snack was a small square of pumpkin chocolate chip bar that I brought in for the office.  People really seemed to enjoy them!

016 And before heading out the door I grabbed a few almonds.

017 Now my run…I decided I was going on a long one!  I mapped it out and was set for an 8 miler.  Around mile 4 I realized that I would be running a lot of hills with no sidewalks!  It was a bit scary coming around those corners.  I think MapMyRun should have a sidewalk button!  Lets just say I won’t be running that route again!  People need to slow down…there was so much road kill to avoid.  Yuck!

At least I had a delicious dinner planned!

 018019

Chicken breast with pesto, lemon and EVOO baked.  I also threw in some southern greens in lemon and seasoning salts with some maters for 10min.  Lastly I had 1/2 of a WW bulky roll with goat cheese.  Nick was no a fan of the greens, they are a bit bitter, but that means leftovers for my lunch.  He said it was the tomatoes.  He doesn’t like warm tomatoes? Ya I don’t know.

Now I am watching Unwrapped fall flavors, there is some nasty stuff being massed produced!  I am also enjoying a lovely vitabrownie!

020 Fudgy!

Time to brush the teeth and hit the hay!  Time to do it all over again tomorrow!

Another kickball victory!  We are now 2-1 and everyone played well tonight.  I did not too bad myself :)   I got two hits and one run.  It was so chilly outside tonight!  Lows going into the 40s but it is supposed to be 77 while apple picking on Saturday!

Don’t forget to check out my 1/2 marathon BARCS support post.  Love to our four legged friends!

007

No Biggest Loser the office addition questions yet, but today was the first weigh in so people are ready to loose!

I needed a little snack before lunch today so I had a few almonds.

003 This allowed me to enjoy my lunch and not tackle it like Ray Lewis.

004 Salad with organic mixed greens, leftover couscous and pinto beans from last night, maters and hummus.  I also had some TJs light gouda (amazing cheese!) and a 1/4 of a cantaloupe.  My battery was dying so I could only take one picture of said lunch.

So can I just say I love getting out at 4!  This means that there will be some sort of day light always waiting for me when I leave the office even if it is only a sunset.

Before leaving for the day I had a chocolate raspberry explosion and seltzer.

005 Inside said cupcake.  It needs a little more raspberry flavor…maybe some frozen ones next time??

006 Like I said previously we had kickball tonight and eating in the car happened again.

I went with the Power House again from Wine Merchant.

007 Munster, lettuce, sprouts, tomatoes, cucumbers, peppercorn dressing on WW bread.  I also had some dill pickle chips, YUM! And an Arnold Palmer.

008 I remember when this flavor came out through lays and this route 11 is 100000x better tasting!

Sissy and N time!

Night all.  Tomorrow is Friday!!!

It’s Top Chef night!  Do the happy dance. :)   I missed last weeks due to sleep being more important so I am switching times and working 1 week behind.  This way I can go to bed.  We are smart cookies ;)

So I am not going to bore you with anything about work today except for the fact that I finally moved into my cube!  Only a month late!  Maybe I will give you some time soon.  It is really exciting, ha!

Oh one thing happened today at work that was really cool…our office Biggest Loser club asked me for some nutrition advice for their weight loss group.  I was so excited, but I am super nervous!  I made sue to let them know I am not an R.D. just well read and have ideals about food.  I think I am going to start but asking one thing each of them needs help with/ wants to know about.  I will add their questions to the blog, but keep the names anonymous.  Thoughts??  Tomorrow is the first weigh in, and they are paired in teams of two just like Biggest Loser!

FOOD! That’s amour!

005 Leftover spaghetti squash and sauce from last night.  Some juicy cantaloupe and a piece of whole wheat Anadama bread.  Like my water spotted paper towel.

006 Yummy parsley on top!

Right before leaving for the day I had the other half of my peanut butter pretzel Clif bar from yesterday and yep a seltzer.

007 When I got home it was time to get my run on!  I went for about a 9-10 mile run.  I still need to put it into mapmyrun.com.  The first 5 miles were really hard.  My right leg was like a rock and not fluid.  I was kicking myself for not have a better pre run snack.  It seemed to work itself out on my second time around he hill.  Don’t worry, I slammed a spiced pear muffin and some coconut water.  There wasn’t even enough time for a picture.  It seemed to do the trick and I jumped in the shower.

**Note:  Why is there no new Top Chef tonight!!!****

I had shrimp, couscous and beans on the meal plan.  One problem, I thought I had white beans.  No worries I used pinto beans because they have a similar texture.  I used a recipe from Real Simple that involves lemon, parsley and onions with the other ingredients.

009 It came out nice and lemony, just the way I like it!

I also had a side salad with cucumbers, tomatoes and feta cheese with balsamic.  Salad plate portion sizes…too bad Nick is not as big a fan of beans as I am and I ended up killing his off :)

008 I was still hankering for something sweet so I went to the freezer for a minty treat.  Mint chocolate chip ice cream sandwich and an earl grey tea.

010 Like the bite size pieces?  Isn’t everything better bite size?  I squished out the ice cream and licked it off around the edges just like old school ice cream sandwiches.

OK well no Top Chef tonight…grrrrr I guess that means early to bed for this girl!

Night All!

Tomorrow is finally Friday…this week has dragged on forever and ever!  I am in serious need of a weekend and napping.  Some of my friends are coming into town and we are planning on hitting up artscape on Sat if time permits.  It is one of the biggest FREE  festival of the arts in the country and this will be my first year going.  CAKE is playing on Sat. night so I hope to make it down by then.

My day was again uneventful as I wait for the board of public works to pass the first stimulus project…I am just waiting to be swamped with work!

Lunchie was so uninspired…I am disappointed in myself.

IMG_4145Wrap with lettuce, yellow maters, lentil and black beans.

IMG_4147It was actually better then I thought it would be thanks to the buttery crisp CT lettuce.  I also had some cantaloupe and greek yogi with blueberries.

IMG_4148Lots of loupe!  A little water heavy and I needed some savory flavors, but alas I had to do without.

3:30 rolled around and I wanted my PB&Co Cinnamon Raisin Swirl oat bar!

IMG_4150

  • 1 Cup oats
  • 1/2 cup oat bran
  • 1.25 cups unsweetened almond milk
  • 1 tbs vanilla
  • lots of cinnamon
  • pinch salt
  • 1/4 cup PB&Co Cinnamon Raisin Swirl
  • 1 mini bow of sunmaid raisins

I usually put banana in these but because there is cane sugar in the PB I removed it.  I think the only way it could be better could be with a couple more tbs of regular PB and a bit more cinnamon.  It was still good, but I am perfecting these!

GYMBO:

30min stepmill level 11/12 speed intervals. BODY PUMP!!  I added weight to my bar today so tomorrow might be hard in the walking department.  I love how solid I feel after the class; I wish I could take it more then once a week, but the other class is at 7pm and that eats into dinner time! No bueno.

Speaking of dinner…I was totally out of ideas but I had some golden beets from the CT farmers market.  I googled golden beets and found golden beet and goat cheese pizza, perfect!  I also added some sauteed onions and sweet potatoes.  My sauce was a little bit of tomato sauce, herb goat cheese and some ricotta cheese all mashed together.

IMG_4154I also had a salad with yellow tomatoes, a bit of leftover black beans and lentils, spinach artichoke hummus and the leftover pizza toppings.

IMG_4153All together now!

IMG_4151I love the zest plates my mom got me!  can you tell? I try to use them at every meal, but there are only 4!  I really enjoyed the golden beets!  The are less intense then the regular beets and I have some leftovers for tomorrows lunch! :)

I still had a sweet together after all of this food so I went straight for the Meringues and nutella!  I might have also licked the knife once or twice

IMG_4156I am going to read Julie and Julia.  I didn’t realize when my mom sent it to me that the movie was coming out so soon!  I better get to it!

Good Night Moon!  I am going to miss sir Nicholas tonight
