You snooze you lose!
It was a little loud and I was worried the pulp was going to get all over me, but I got out of it without a drop of beet juice on me! I juiced 2 small apples, 6 carrots, and 2 small beets to make one large glass of juice.![]()
I know there is debate about juicing in terms of cost/clean-up/missing the fiber, but I thought this was better than any other juice I have gotten from a juice bar.
Now what can I do with the pulp?!?!![]()
Where are those chickens when I need them?
Winter Veggie Fest

She tried eating it down tonight, but has now lost interest…we shall see how it goes. At least she is not going after the poinsettia! Lily used to eat them though, and they are not what killed her.
Before preying Sissy off the C-Tree I had to get through my Monday.
It actually went by quickly because I have a lot to get done before leaving for Beantown on Friday!
Lunch was super delicious!
Leftover Pumpkin, Turkey and Lentil Chili over more pumpkin and a side of Trader Joe’s everything crackers

Around 3pm I had a lovely stack of snacks.
Shredded Wheat Oat and Bran squares, which I found out scored a 99 on the NuVal system today on HTP! Score for my cereal choice. I also had a clementine and seltzer.
At 4pm sharp I headed out into the rain, ugh more rain, seriously???? I ventured to the gym for 30min on the elliptical followed by an hour body pump class. Ouchie! My arms are going to be sore tomorrow, in a good way though
When I arrived home I had no idea what to make for dinner…I knew I had pork chops that needed to eaten or frozen so I made them for Nick. He also got rice, roasted veggies and salad…I had a veggier plate.
Roasted carrots, parsnip and sweet potatoes in EVOO and oregano. Tofu with Mrs. Dash – seriously like the honey/maple syrup version a lot better. Salad with Romain, avocado, tomatoes, cucumber and goat cheese.
I think I might have a wee bit of peppermint ice cream with a few chocolate chips…I am still pretty full, but I can’t get the combo out of my mind!
I will also be on Christmas Tree watch!
Snack Fest

It is so cold outside! I am so happy I ran outside yesterday so I could be warm inside today!
Back it up a bit…
My second breakfast/snack as I mentioned was a mini WW bagel with chunky almond butter.
It looks so big in this picture! I feel like to best determine if it is better for me to eat one large breakfast or two small would be to make one large breakfast and eat 1/2 at home and pack the second 1/2. Maybe next week
There is always time to experiment!
I had quiet the enjoyable lunch of leftover latkes!!!
OK so the picture does not do these little guys justice!
2 latkes, whipped cottage cheese, carrot, grapes and more lime yogi dip. Latkes were eaten with hands, maybe that is why they were better?
The afternoon moved on and into snack time!
Harry and David Pear my mom brought (dripping good) and some almonds.
I also dove into some pumpkin bread pudding when I got home…dessert before dinner, oh well.
So delicious! I will be sad when all of this is gone.
After multi snack time I did 47min of yoga on demand. Wow burning quads!!! Some of those classes are so hard, but I felt so good afterwards.
Once yoga was complete I starting makin some dinner. I gave Nick the option for Italian or Asian and he picked Italian. This is what I went with.
Leftover cauliflower mash (Nick had barilla plus), sautéed onions, garlic, Portobello mushrooms, green beans, roasted red peppers, chili flakes, herbs, chicken and parm cheese.

Hot Dog + Pickles

Lots of stimulus work with three more pushed into action! Get those jobs creatin! There is actually lots going on with the state with furloughs and cut backs. We are moving and people are losing their jobs…crazy times!
At least all of this hub-bub made the day go by quickly. I got a brief break for lunch and some blog reading.
Roll-Up wrap (I am starting to like like these better than flat out wraps, less rubbery texture) with hard boiled egg, red pepper hummus and spinach. One very large carrot, mango, blueberries and dark Adora disk.

Afternoon snacks included a baby CT plum, blueberry oat round, and black bean brownie…all not pictured.

Today was speed work and I really wasn’t feeling outdoor running…it was humid and I was feeling like my legs needs a little less stressful surface.
I did 4 miles of speed work: 5min warm-up at 6mph then alternated 1min sprints at 9mph, 2min at 6mph. 36min total.
Then I did leg strength, arms and core.

Sooo what was I craving? Turkey dogs and pickles…yeah I don’t know. I am blaming it on cleaning out the fridge.
So here is what came of the two.
Bed of spinach with 2 slices turkey dogs, slices pickle, mustard relish, and mixed peppers. I also had a piece of WW toast with some more amazing light Gouda TJs cheese!
Now I am currently watching last weeks Project Runway and getting into bed. It will be interesting to see how Lifetime takes the show. Man Heidi is gorgie!!! And I love her family.
DOES ANYONE WATCH PROJECT RUNWAY?? I feel like I have been watching a lot of TV but it is really only 3 shows…they are my favorites though!
Nick’s Return!

I had to reorganize my stimulus reporting pile…I will now be reporting to 4 different sources the same info in different formats. Why can’t they share? Don’t ask me. At least it look up a great chunk of the morning.
Lunch was served promptly at noon in my cube. Looks pretty boring from afar but just wait!

A WW flax wrap with salsalito turkey, Havarti cheese and roasted peppers. One Bugs Bunny carrot and plain Greek yogurt with the other 1/2 of my sunrise peach.


I am telling you, roasted peppers really make a sandwich!
I also had an adora disk, but I forgot about it during picture snapping time due to the fact that is was still in the lunch tote.
The rest of the afternoon was spent finishing the shred job and removing non recyclables from the recycling bin. Some people are so lazy!!!
We had to break for snack time at 4pm
Orange Cran, pecan with carob chips oat bar and the usual seltzer.
After work I went for a 4 mile run with a lifting session at the gym. I did arms, back, legs and core. Yikes I am pooped. At least tomorrow is a short 2mile speed workout that might get pushed to Sat. because we are going to a concert.
NICK was coming form shrimp soft tacos!
WW flax tortilla shells, shrimp in sauteed onions, black beans, mexi mix cheese and salsa. I also made a avocado, plain greek yogi and enchilada.

I also made a veggie plate with patty-pan, cucs and sweet peppers topped with lemon and chili powder.
OK off to sip on some sweet dreams tea and hangout with Nick!!!!
