Sweet Potatoes for a Picky Crowd

Most of the people I work with are not fans of vegetables (I know I am generalizing here but overall I would say they are a meat and potatoes group). I always want to bring something healthy to show them that healthy doesn’t mean tasteless. Today was our deputy directors going away party and I made my best recipe yet!
Chipotle Lime Sweet Potato Salad. I got this idea from our wedding actually and added some chickpeas for some veg protein.![]()

This recipe was seriously simple and I got a ton of compliments on it. The only thing you have to cook are the sweet potatoes and they take 20-25min.
Chipotle, Lime, Sweet Potato Salad
- 4 medium sweet potatoes peeled and cubed
- 1 cup frozen corn (I used sweet white)
- 1 cup cooked chickpeas
- 2 finely diced chipotle peppers in adobo sauce – can add more peppers for more heat
- juice of 3 limes
- zest of 1 lime
- 3 tbsp olive oil – divided into 1 tbsp and 2 tbsp
- 1 tsp salt
- 1 large clove of garlic pressed or finely chopped
- 1 tbsp honey
- 1 bunch of cilantro chopped fine
- Toss peeled and cubed sweet potatoes in 1 tbsp of olive oil and bake at 400 for approximately 20-25min until fork tender.
- While the potatoes are cooking whisk together remaining ingredients minus the corn and chickpeas.
- Mix in the chickpeas and corn.
- Add potatoes while warm to lime mixture and fold in to get the potatoes fully coated.
- The longer you can marinate, the better. (It is good hot out of the over too!)

Early Riser

Hello and sorry for the delay in posting!
I was up at 4:15AM this morning to hit my gym for an extra early morning session. I really like getting my workout out of the way and on with my day, but I don’t think I could do 4:15 every day. I was feeling pretty good throughout the day and went to bed at 9pm so I might use it as a switch up option in the future.
On my way out the door I had a slice of sprouted grain and Cinnamon Raisin Swirl.
I was on the t-mill and going a little before 5. Only downside? I forgot my headphones! Nick had gotten me really nice headphone for my birthday last year ($25!) I need ones that don’t fall out of my ears while I am running, and they started to last week. I finally threw them away yesterday and forgot to grab Nick’s this morning. Try running 1:20 without headphones or tvs with subtitles. What is a girl to do? I did my usual mix up with a little more mix. 20min regular easy run, 20min hill climb while flipping through people (I have a really hard time reading and exercising), 3 mile neg splits, 10min hill climb. I always feel so good when I am done with my run!
I rewarded myself with a grande non-fat one pump of each mocha and peppermint latte.
Strangely I wasn’t very hungry after my workout so I waited a bit to eat my breakfast at work.
I made up some overnight oats to take in this morning.
Chocolate banana protein oats!
Chobani leftovers, almond milk, banana, chocolate protein powder and a little TJs Fruit and Fiber Medley for a crunchy top. I wish there had been a little more milk in there…it was a little chewy for my liking, but still yummy!
I was done with breakfast around 8:30 and didn’t feel the need to shovel my lunch…interesting concept!
I had leftover frittata, an orange and a cheese stick.
I also had an un-pictured truffle to round out my meal. Funny how something so fake tasting can taste so good!
I had a little bit larger than usual PM snack because I was heading straight home after work and when I do this I usually head right for food!

I think I got enough yogurt in today!
Speaking of yogurt…Oikos just announced they are making a chocolate and caramel flavor Greek yogurt, um heaven!!!!!!
Nick and I had our Christmas when I got home and he got me a bunch of great stuff for delicious food making and another great book about food politics. I will be reading it over vacation! Thanks love!
We had to eat and run tonight because we were meeting up for a surprise birthday part in the city…Nick wanted Chipotle, and I was curious how healthy I could make it.
I really like there tortillas so I knew that would be my carb portion (I really wish they had WW tortillas! Or at least 1/2 and 1/2?). I do love how the place is moving quickly to sustainable and organic.
I got a vegetarian burrito with black beans, pinto beans, peppers and onions (yuck the onions were raw!), pico, corn, cheese (only thing I would take out because I couldn’t taste it), lettuce and guac.
Huge! I used to get such a different burrito there!
The party was a great success and it was actually really nice to see everyone before the holidays and catch up!
We came home I packed and little and hit the hay…I actually did really well for being up at 4:15AM!
This morning I wanted something warm to eat!
Oatbran, Tjs fruit and nut medley, Kashi H2H, banana, flax, POM arils, PB.
I love POM! I wish they were not such a pain to get out of their husk!
OK I need to get moving so I can get into work and then back here to pick up Sissy and hit the road!!!!!
I am not sure how blogging will go at home…we do not have wireless, but I might do drive bys at the Starbucks just to get the live writer to post

County Living

At least it is only two days of work and then Nick and I are off on our mini vacation to Bethany Beach.
I left ya at lunch yesterday, where after some lovely shopping at Target I came home to find these!
Nick had gone to chipotle and saved me some chips and guac. I love how they spray lime juice on their chips. So tasty.
I also had a wrap of what we had in the house (I still had yet to get to the grocery store).

Flat Out wrap with 2 Dr. Prager spinach burgers, hummus and melty cheese!
After lunch I did a little more organizing of the apt…set up the office and organized my hanging clothes. Then I headed out to the grocery store, and forgot to bring home eggs
How does one forget such a staple!?
Once the groceries were away I slammed a liter of water to get some hydration before my long run and I also had a handful of mix nuts + 2 fig newmans.
I took myself to the trail near our new apt, the NCR. This trail is just what I needed. I was so stressed and bottled up all weekend working on the apt. I just need to let loose. I ran about 8 flat miles, which was cool with me because there are plenty of hills around for me to get those in on other days. The trail was so peaceful. There were families on bikes instead of homeless people and dirty buses. At around mile 2 I turned off my ipod and just listened to my steps and breathing for the remaining 6. There was something seriously relaxing about running through woods and just breathing. I can’t wait to run 10 next Sunday after the Ravens first game!!!!!!!
Anyway, after my run Nick and I were finally able to open the celebratory champagne!
And I got to make out first meal in the new apt. Nothing big, we were sooooo sleepy. Baked chicken is lemon and herbs, asparagus and couscous with cherry tomatoes.

And we used the napkins my mom had sent us a while back!
After dinner we headed out to meet a few people for drinks. I was so tired the whole time, but I was a trooper and stayed out way past my bed time!
This AM I got to sleep in until 9AM and made myself some french toast and cafe au lait before heading to the gym.
I got to go to the gym with Nick! Strange to have a workout buddy, well actually he is more like a drive to the gym buddy. He went to play b-ball while I jumped onto the ArcTrainer for 30min and watched Regis and Kelly. I honestly miss daytime TV…I know, sad. After the AT I did some arms and core. This new gym is so much different than my gym in the city. There is a lot less spandex and orange people…me gusta.
Once we returned home we didn’t have much time before we had to head out to Nick’s mom’s house for a Labor Day cookout. I had an apple while running out the door.

We were the first to arrive and sat some to some iced tea and chips and salsa. I controlled myself with the chipies because I had seen some cupcakes on our way in!
There was plenty of food for the main courses as well.
vegetarian baked beans (soooo delicious! I love beans!) pasta salad, veggie burger with everything but the bun, 2 deviled eggs and a very large pickle!
And then came the cupcakes!
These were cinnamon maple oatmeal with caramel frosting. So delicious, I had two.
Serious fullage after all this food!
I wasn’t really hungry for dinner due to the fact that we ate late, but I knew I needed something so I didn’t go to bed hungry.
I opted for a Pineapple Chobani with kashi H2H and some mixed nuts. Along side I had some iced tea.
Nick and I are off to watch a moooovie on our new TV! I hope everyone had a good one and tomorrow is so too, too hard of a reality. I feel like it will be for me.
