No not that movie!

W went to see “Where the Wild Things Are” tonight.  Lets just say I would not let my child see it if they were under the age of 10.  It moved slowly at times and got really violent!  I did not enjoy it.  I think I liked the illustration the most about the book.  It was a little to artsy for me?

I am beat so here is the rest of my day in a nut shell, I’m in a nut shell!

003 Prunes, ounce for ounce better than apples!  Had about 5 around 10:30.

Sweet potato, tofu, spinach and guac on a WW wrap.  Cottage cheese with a balsamic river and a pear.

Snack was interrupted by a visitor so I forgot to take a picture…but it was a classic apple slices and PB cinnamon raisin swirl.  I am thinking of having ants on a long tomorrow, and I am really excited about it!

I did remember my Adora disk right before I was leaving!

006 After work I went to Target to try and find some things for my Halloween costume, cat litter and birthday cards.  Leggings are $5 in all colors, but of course they did not have my size!  I might try looking at home this weekend.

I rushed home and packed up some dinner to take with us…while packing I had a handful of granola (damn Bear Naked for being so moist and delicious! and some sun chips garden salsa flavor).

Wait hold the phone…when I came to the door I had a present from mommy!

007 Woohoo!  Guess what I am having for breakfast tomorrow morning???  Thanks mom!!!

Back to the food…

008 leftover BBQ lentil meatloaves from a while back, pita to be stuffed, veggies for dipping in yogurt lemon sauce, animal crackers that were supposed to be split with Nick, but he said no and I happily gobbled them down.

Now we are watching the Wire and hittin the hay!

Welcome to Maryland, where it feels like New Hampshire!  It is so cold outside!  I am so happy I ran outside yesterday so I could be warm inside today!

Back it up a bit…

My second breakfast/snack as I mentioned was a mini WW bagel with chunky almond butter.

003 It looks so big in this picture!  I feel like to best determine if it is better for me to eat one large breakfast or two small would be to make one large breakfast and eat 1/2 at home and pack the second 1/2.  Maybe next week :)   There is always time to experiment!

I had quiet the enjoyable lunch of leftover latkes!!!

004 2 latkes, whipped cottage cheese, carrot, grapes and more lime yogi dip.  Latkes were eaten with hands, maybe that is why they were better?

The afternoon moved on and into snack time!

Harry and David Pear my mom brought (dripping good) and some almonds.

I also dove into some pumpkin bread pudding when I got home…dessert before dinner, oh well.

008 So delicious!  I will be sad when all of this is gone.

After multi snack time I did 47min of yoga on demand.  Wow burning quads!!!  Some of those classes are so hard, but I felt so good afterwards.

Once yoga was complete I starting makin some dinner.  I gave Nick the option for Italian or Asian and he picked Italian.  This is what I went with.

009 Leftover cauliflower mash (Nick had barilla plus), sautéed onions, garlic, Portobello mushrooms, green beans, roasted red peppers, chili flakes, herbs, chicken and parm cheese.

Block In My Stomach October 4, 2009

Ugh, the apple fritters from yesterday are finally catching up with me along with all of the pumpkin bread I had eaten today.  My body was telling me that I made some poor choices during my run today.

I tried to counter my unhealthy eating with a veggie filled lunch.

008 Amy’s low sodium vegetable lentil soup with some added corn, broccoli, green beans and peppers.  I also has some whipped cottage cheese (more textured like ricotta) with balsamic.

Here is another example of my pumpkin baking adventures.

006007 Pecan, raisin pumpkin muffins…

  • 1 cup unbleached flour
  • 1/4 cup WW flour
  • 1/4 cup almond meal
  • 1/3 cup unsweetened apple sauce
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp cinnamon, nutmeg and cloves (I always go a little heavy handed on these)
  • 1/4 cup raisins
  • 4.5 tbs egg whites
  • 1/2 can pumpkin
  • toasted pecans

Mix together and bake 350 for 20min muffins, 50min loaf.

After baking Sicily and I watched some football.

009 This is her angry face at the refs for today’s game.  And yes she is sitting like a human.  She was very angry with the outcome of today’s game.  Ravens loose by 6.

After the game ended it was time to go for my last long run before the race!

I ran about 10.5 miles and ugh my stomach felt like it had a huge blob of sat fat in it.  I am telling you the more I stay away from that stuff the more my body rejects it when it encounters it.  I felt awful when I got home and had a seltzer that was followed by cheese toast, banana and 1/2 an sandwich thin with PB&Co Cinnamon Raisin Swirl.  I also had another seltzer.  I only got the toast on film.

010 I had that feeling like you know you are hungry and you body is saying “feed me” but your gut is telling you I feel like death?  I MUST remember this feeling next time I reach for apple fritters.

This week I must treat my body well, I have a race to run in 6 days!

And with that said, I am off to bed!

New Saucy August 17, 2009

So I am super jealous of all who attended the Healthy Living Summit in Boston this past weekend.  It made me miss the the big bean even more!  Thank God Southwest is starting to fly to Logan after the summer!

Work is slllloooowww right now, so the morning was kind of like molasses.

Like I said I had no idea what to make for lunch…this is what I came up with…

Kashi TLC honey sesame crackers with a laughing cow wedge, cottage cheese with balsamic, red pepper humus with carrots and peppers, and some unsweetened apple sauce.  Man I love apple sauce.  Why would you ever add sugar to it?  Sooo sweet alone and pure :)  Reminds me so much of my childhood, what about you guys?

004Don’t diss my carrot butt.  I also do not peel my carrots, just wash.  No need to really peel when they are organic.  Right?

I came home and grabbed a homemade fig/date bar with mixed nuts and rolled in oat bran.

005006The only bad thing about having these delicious things in my house is that I want to eat the whole giant piece right now!  Have you ever tried your had at these?  They are super easy and amazingly similar to Larabars, which I have to buy wisely due to price :(  .

Nick came over for dinner.  Before leaving for the gym I marinated two chicken thighs in Dijon mustard, garlic, Worcestershire, EVOO, S&P, red chili pepper flakes and honey.***edit there was also the juice of one lemon in there!***

007paired with grilled eggplant and couscous with FM basil, feta and kalamata olives.

008009010This sauce is the leftover marinade heat up and drizzled on top.  I will be using it again.  I bet it would make a tasty pasta sauce.

I haven’t made up my mind If I will be having anything for a little dessert.  I may get peer pressured into some fro-yo ;)

I am so super excited!  They are all written and highlighted on my desktop calender.  My calender is seriously what makes me happy during the day.  I write down every fun event I have planned to get me through the not so fun ones that must be done.

Shredding is going to have to wait until another day…things come up…but I am seriously looking forward to it (if you couldn’t already tell ;) )

Lunch was the last bit of enjoyable tabbouleh salad in a flat out wrap with Sabra hummus and avocado.  I also had a white nectarine and a few strawberries.

I switched out my yogurt with something new, but really something old, today.  Cottage cheese!  And what is that on it?? Balsamic vinegar. Wait! Don’t knock it til you try it.  If you are both a cottage cheese and balsamic fan, you have to give it a shot!  You will not be disappointed!

004This afternoon I got ANOTHER assignment with stimulus aka Big Brother’s money house.  I am not all that thrilled about it, but I was glad to do 60min of yoga for my off day from training today!

SO my dilemma this evening was…I have a bunch of tomatillos but I don’t want to make salsa verde from them.  What else is there to make????  The only thing I could find was a chicken soup.

Well what a cowinkie-dink I was grilling chicken for dinner!  I started by roasting the tomatillos, onion, galric and jalapeno in toaster oven for 45min.

008While these cooked away I grilled up my chicken with some EVOO, S&P and cumin and made a green salsa (yes I already had some) avocado cumin topper for it.  I also threw on some Brussels sprouts, because they are amazing grilled!  I never liked them before because they were always boiled, but now I love them!

As I waited for my lovely meal to come together I sampled this cheese from TJs.  It was amazing!!!!!  Nothing light about it, so much flavor!

Ding!  My tomatillos were done roasting and ready for soup insertion.  In the pot went…(no real measurements were taken)

  • 8 ct tomatillos
  • 1 small white onion
  • 2 cloves garlic
  • 1 jalapeno – from my garden (these guys are growing like crazy!)
  • 1 can no salt added deiced tomatoes
  • ~1/4 bag frozen white corn
  • S&P
  • 1/2 box chicken stock
  • 1 all natural chicken stock starter
  • cumin
  • oregano
  • 3 grilled chicken tenders

013I’ll let you know how it is tomorrow!  It is currently reducing and I have a special treat from my Boston 1/2ers in the oven!

I am currently enjoying a cup of sleepy time tea and some PB&Co Cinnamon Raisin Swirl on 1/2 a Sami thin – I had a super huge craving that is now satisfied.

My yoga teacher said something tonight at the start of class…”we all work in circles and when an object falls out of the circle we seem to fall apart.  Let your mind and body accept and change and reinvent the shape.”  I don’t know I thought it was pretty cool!

What is a food that you have had issues finding a use for other then its designated place in life?
