I learned something interesting today…Sissy does not like to be locked in any place. She has been having a bit of sniffles, and I thought a little steam would be good for her. I knew she didn’t like being shut in, but I thought she would chill out; instead she spent her time between the two shower curtains meowing at me. Cameras and water do not mix.
Backing up to the day…lunch
Leftover butternut squash, roasted chickpeas and spinach. I also had some crackers on the side. Nick was a Theta Chi.
Simple, delicious and filling!

I have decided to eat bigger lunches and snack at home. This is all in an effort to not stuff my face with things like graham crackers and cookies before I even make dinner.
This afternoon’s snack was the last quinoa crunch square.
These little guys took me forever to get through. Next time I don’t think I will add nuts because I couldn’t really taste them and I had put them in whole. Maybe just almonds or something?
Tonight’s dinner was out of this month’s Real Simple.
Scallops with Snow Peas and Couscous – this was so simple and only required 4 ingredients!
- 2 servings of whole wheat couscous, cooked according to the box directions in veggie broth and a splash of OJ
- 2 servings of scallops browned in EVOO S&P – I used bay scallops
- lots of snow peas cooked in the scallop pan once scallops have been removed and covered.
- 4 orange peels cut into strips added to peas
- I also added 2 small organic yellow peppers
This was crunchy, easy and simple!

Yummy browned scallops! They are bagged frozen wild caught from Target. Yes, they have sea food now in their Archer Farm line.
I am also trying to cut back on my dessert portions, so I ended with a lovely Adora disk.

I missed these little dark chocolate vitamins!
No Biggest Loser tonight so Sissy and I are going to curl up and watch an episode of Project Runway and then some Olympics.

It’s Top Chef night! Do the happy dance.
I missed last weeks due to sleep being more important so I am switching times and working 1 week behind. This way I can go to bed. We are smart cookies
So I am not going to bore you with anything about work today except for the fact that I finally moved into my cube! Only a month late! Maybe I will give you some time soon. It is really exciting, ha!
Oh one thing happened today at work that was really cool…our office Biggest Loser club asked me for some nutrition advice for their weight loss group. I was so excited, but I am super nervous! I made sue to let them know I am not an R.D. just well read and have ideals about food. I think I am going to start but asking one thing each of them needs help with/ wants to know about. I will add their questions to the blog, but keep the names anonymous. Thoughts?? Tomorrow is the first weigh in, and they are paired in teams of two just like Biggest Loser!
FOOD! That’s amour!
Leftover spaghetti squash and sauce from last night. Some juicy cantaloupe and a piece of whole wheat Anadama bread. Like my water spotted paper towel.

Right before leaving for the day I had the other half of my peanut butter pretzel Clif bar from yesterday and yep a seltzer.
When I got home it was time to get my run on! I went for about a 9-10 mile run. I still need to put it into mapmyrun.com. The first 5 miles were really hard. My right leg was like a rock and not fluid. I was kicking myself for not have a better pre run snack. It seemed to work itself out on my second time around he hill. Don’t worry, I slammed a spiced pear muffin and some coconut water. There wasn’t even enough time for a picture. It seemed to do the trick and I jumped in the shower.

I had shrimp, couscous and beans on the meal plan. One problem, I thought I had white beans. No worries I used pinto beans because they have a similar texture. I used a recipe from Real Simple that involves lemon, parsley and onions with the other ingredients.
It came out nice and lemony, just the way I like it!
I also had a side salad with cucumbers, tomatoes and feta cheese with balsamic. Salad plate portion sizes…too bad Nick is not as big a fan of beans as I am and I ended up killing his off
I was still hankering for something sweet so I went to the freezer for a minty treat. Mint chocolate chip ice cream sandwich and an earl grey tea.
Like the bite size pieces? Isn’t everything better bite size? I squished out the ice cream and licked it off around the edges just like old school ice cream sandwiches.
OK well no Top Chef tonight…grrrrr I guess that means early to bed for this girl!

The stimulus madness continued with my in-box this AM when I arrived at work. It seems that no matter how detailed your instructions, someone always needs further explanation. I honestly couldn’t blame them. This stimulus mubo jumbo is one hard nut to crack.
I had to break into my prune reserve around 11 told hold me until lunch. My oats didn’t quiet hold me. What’s up with that??!?! At least we 12 rolled around I wasn’t sucking down my lunch, and I was able to enjoy every bite. I hate when I am starving by lunch and eat so fast I forget what my food tastes like.

I had leftover fish from last might over leftover couscous from Monday night. I thought the olives and basil would weird with the cumin and jalapeno, but all mixed up together they were really good.

I also had some FM flat bean, carrot and a peach. And for my calcium I had a dark chocolate Adora disk.
There was an ice cream social going on in the lobby this afternoon that Elaine and I knew we had to hit up. Especially because Maryland tax dollars were paying for it!

I got a “one scoop” butter pecan. I liked the pecans, but the ice cream itself was nothing special. I think I have become such a gelato snob. When we move it is going to be really hard being without

It was way too hot to run outside today and there was no thunderstorm to cool it down in site. I opted for speed work on the treadmill and some lifting (It was technically my speed day and I won’t have weights to use at home).
I did 4 miles and 1.0 incline in 36min – 5min 6mph, 1min 9mph, 2min 6mph, 1min 9mph, 2min 6mph continued until 4 miles was reached. I also did bicep curls, upright rows, overhead press, tri dips, leg press, hammie pulls, quad extensions and a bunch of core work.

I had a bunch of produce to use up before I leave for the weekend. I also had to make something Nick would eat.
This started with garlic and onions sauteed in veggie broth. Then I added the mushrooms, flat beans and pepper to steam. I also cooked up a cup of WW cheese tortellini. All topped off with feta, garden basil and parsley.
Nick and I also split this FM salad of lettuce, cucumber and garden tomatoes with mustard red vine vinegar dressing. Yum! I really want a cookie but we have none
I might have a TJs dark chocolate bar and settle in for some NEW TOP CHEF! Who else is excited about this??? I know I am because Masters was so disappointing!

So I am super jealous of all who attended the Healthy Living Summit in Boston this past weekend. It made me miss the the big bean even more! Thank God Southwest is starting to fly to Logan after the summer!
Work is slllloooowww right now, so the morning was kind of like molasses.
Like I said I had no idea what to make for lunch…this is what I came up with…

Kashi TLC honey sesame crackers with a laughing cow wedge, cottage cheese with balsamic, red pepper humus with carrots and peppers, and some unsweetened apple sauce. Man I love apple sauce. Why would you ever add sugar to it? Sooo sweet alone and pure
Reminds me so much of my childhood, what about you guys?
Don’t diss my carrot butt. I also do not peel my carrots, just wash. No need to really peel when they are organic. Right?
I came home and grabbed a homemade fig/date bar with mixed nuts and rolled in oat bran.

The only bad thing about having these delicious things in my house is that I want to eat the whole giant piece right now! Have you ever tried your had at these? They are super easy and amazingly similar to Larabars, which I have to buy wisely due to price

Nick came over for dinner. Before leaving for the gym I marinated two chicken thighs in Dijon mustard, garlic, Worcestershire, EVOO, S&P, red chili pepper flakes and honey.***edit there was also the juice of one lemon in there!***
paired with grilled eggplant and couscous with FM basil, feta and kalamata olives.


This sauce is the leftover marinade heat up and drizzled on top. I will be using it again. I bet it would make a tasty pasta sauce.
I haven’t made up my mind If I will be having anything for a little dessert. I may get peer pressured into some fro-yo
