Eggplant Bake

I did however pick up some delicious fresh mozzarella cheese so I went with it. I started by doing the normal egg, breadcrumb and bake portion of eggplant parm.
Eggplant Bake
- 1 large eggplant sliced into rounds
- 1 egg
- 1 cup breadcrumbs of choice
- 1 tsp garlic powder
- 1 tsp Italian spices
- 1 cup favorite pasta sauce
- 2 cups frozen greens
- 1/2 onion
- 1 clove garlic, pressed
- 1 ball mozzarella, sliced
- Preheat oven to 375
- Slice eggplant into rounds and dip in egg then mix of breadcrumbs, spices, and garlic powder before placing it on a baking sheet and baking for 30min
- 15min into cooking sauté the onion and garlic clove in EVOO until clear then add frozen greens and pasta sauce
- Pull the slices out of the oven and begin to layer – sauce – eggplant – sauce – mozzarella – eggplant – sauce
5. Put her back in the oven for 20min more, slice and serve!
Super cheesy and delicious! A fortunate accident of forgetting a key ingredient.

Stuffed Zucchini
Posted: July 27, 2011 Filed under: dinner | Tags: curry, dinner, eggplant Leave a comment »So I went a little nuts at the Farmer’s Market yesterday and got a lot of produce but in fact not enough lettuce…anyway I thought I would post another farmers market recipe! I didn’t realize how good this was going to be until I ate it so I do not have a picture of the Cinderella eggplant before it was cooked but they are softball size and light purple with white instead of a deep purple.![]()
To start I hallowed her out and cooked up 1/2 and onion and the guts in some olive oil. Once that had cooked for about 10min I added two zucchini fritter failures to the pan (you could just use shredded carrots and zucchini instead) and 1/2 cup of cooked quinoa.![]()
Now those ingredients are all fine and dandy but you add some curry powder and bam! Eggplant and curry are amazing together. The only thing that would have mad this better would have been some cilantro. I cheated with parsley to make it look better.![]()
I scooped out some of the stuffing with some Food Should Taste Good blue corn chips!![]()

Somersaults

Tomorrow I will be living on the 5th floor instead of the 4th and they still have not built my cube nor have they built it correctly…not excited about that so much!
Nothing a pretty special snack at lunch couldn’t fix! Somersaults!

I liked their crunch, but they were kind of lacking in the taste department. I think the chocolate ones or cinnamon flavor would be perfect!
Along with my somersaults I had a wrap with hummus, turkey and spinach and a special juicy white FM peach.

We also had goodbye cake in the office this afternoon. We are moving from h20 to budget. I had a piece of vanilla cake, but cut out all icing…way too sweet and I never actually liked it. I would rather have two pieces of moist cake rather than one with icing.

After work I headed to the gym to try and get out of my contract…fingers crossed, things look good!
Once that was out of the way I headed out for a 6.5 mile run. I actually ran into a co-worker around mile four so I had a breather. I tried making up the time by picking up the pace, but still came in slower than my last runs, drat!

Wanting to use up some fresh veggies I created a eggplant stack-bake.
Layers of tomato sauce, eggplant, parsley + sun dried tomatoes, eggplant, kalamata olives, cheese, eggplant, sauce, cheese.
My camera wasn’t working when I went to take a pic of my plate. Along with some eggplant bake I had two pieces of my FM bread.
I am currently sipping on some tea and then I plan on watching Entourage with Nick!!!

Moving in Life

Only problem…they aren’t being moved until Wednesday morning…We are packing computers and phones tomorrow so I am not really sure what the day will bring, but it should be interesting.
I had leftover wheat berry salad and chard along with my first pear of the season from the FM.
The cucs had gotten a little soggie but the wheat berries were still nice a chewy! I really need to make them more often. Check out this huge chard leaf.
After seeing this article pop up around blog land I knew I need to read it : Getting Real about the High Price of Cheap Food Similar notes as Food INC. but still very interesting. I also really enjoyed the embedded stories within the article, especially the ones that showed typical grocery hauls from around the world. Honestly these pictures really make Americans look like processed food pigs.
Snackage happened around 3:30 when I got bored/hungry. I had the typical blueberry oat round and orange seltzer…and of course I forgot to snap a shot.
Mondays are usually spin nights, but Nick and I are signing up for a new gym that is closer to the new apt tonight and if I wanted $60 off I had to go sign up today. I am hoping that I can get out of my current gym contract with some help from my 401K but we will see. Either way I will be saving money in the long run even if I have to spend a little extra right now. Before out apt. I had a cinnamon roll Larabar. ”Was that supposed to taste like a cinnamon roll?” That is what I was thinking after I ate it.
Good thing I had this around 6pm because I was already getting hungry and didn’t end up eating dinner til 8pm. I wasn’t super hungry so I took my time creating.
Smashed chicken breast with eggplant and Dinosaur BBQ sauce stacked on an Arnold Sami thin. I also had a salad with heirloom mater, pepper and cuc.

This was almost too much food, but I finished
No need for dessert tonight, I’m stuffed!
Time for the season finale of Weeds!

Birds and Bison!

It was so cool seeing all of the Ravens shout out all over the internet communication sites today! Of course there was the usual Redskins trash back, but it got me a lot more excited then I thought I would ever get over football. It is def a sport you need to know the players and the game to get into.
Not much went on at work except a closing time phone call from the boss to do something…hate that. In between keeping myself busy I had total carb loaded lunch
I missed my veggies, but it was still so good!
Arnold with wild rice tempeh, raspberry jam and AB. 2 pieces of madel bread. Plain Greek yogurt with white peach and the other half of my peach solo.

The usual snack attack occurred around 3:30.
My orange cranberry is coming to get you!

My workout today was a hard choice. We are going to the Orioles game tomorrow so I have to push my workout to Saturday AM again. Today was supposed to be 2 miles with speed work, but I switched it to 3.5 miles with lifting, which turned into 4.25miles of crazy hills (in a dodgy side of town) and then 30 day shred level one without weights. I am still worried about my knees and lifting with free weights. It turned out to be a good hard workout, and I will be ready to go on Saturday!
OK so finally dinner.
I got these at the farmers market and wanted to be able to share them with Nick. Oh and the heirloom eggplant is PURPLE

everything tonight went on the grill, heirloom eggplant, okra with a little corn meal S&P and 4 All natural local BISON sliders (mixed in no salt added steak seasoning, Worcestershire sauce, and onion).
Due to my lack of veggies at lunch I went with veggies and bison only for dinner. I turned my plant into buns with lettuce and spicy brown mustard.
Holy yum these burgers were amazing! A little messy due to the h20 content of the eggplant, but nothing a napkin couldn’t take care of!
Just look at that beauty!!!!! I really want to try a bison steak next time I am at the farmers market.

Don’t diss my carrot butt. I also do not peel my carrots, just wash. No need to really peel when they are organic. Right?
The only bad thing about having these delicious things in my house is that I want to eat the whole giant piece right now! Have you ever tried your had at these? They are super easy and amazingly similar to Larabars, which I have to buy wisely due to price
paired with grilled eggplant and couscous with FM basil, feta and kalamata olives.

This sauce is the leftover marinade heat up and drizzled on top. I will be using it again. I bet it would make a tasty pasta sauce.

And that is my soup photo show! It was so good and hearty AND super simple to make…MUST MAKE SOUP MORE OFTEN.


This actually turned out a lot better then I thought it would, given my energy level. I even have some leftover veggies for tomorrow! SCORE! I really love it when dinners turn out better then planned.
