Eggs Are Awesome

I high-tailed it to the shower and then slammed the stove!
I knew I wanted eggs, but how to prepare them?
In a basket topped with lots of goodies!
So what is all that stuff?
From the bottom:
- 2 farm fresh eggs in 2 baskets
- ricotta cheese spread – 1/4 cup cheese, 1/2 lemon juiced, chopped fresh parsley, S&P
- 1/2 an onion sautéed
- 2 small round yellow summer squash sautéed
- handful of baby bellas sautéed
- 4 slices of tomatoes – two per piece of bread
Totally random and totally delicious! I honestly had no idea how this would turn out when I start so I was super pumped and I made it in time for Glee!
Told you there were eggs in there

Dakota Love

I needed something warm that involved Dakota bread!
Enter eggs in a hole! This got the bread and crispy and toasted. Delicious!
I also made a ab and strawberry sandwich out of the middle circles with a side of strawberries and bananas.
I really enjoy not eating oats every single day. It makes things interesting.
I am also drinking white tea with POM because I wasn’t feeling the coffee for once. It should be interesting to see how my morning goes without it.

Mango, Tango

The rain has finally stopped and the wind is on its way out of here! I can actually see the sky, which hasn’t happened since Sunday morning. I cannot wait to run outside today
i started off my morning with another breakfast that was not oats! I am planning and OIAJ tomorrow.
As for today, I had eggs in a hole!
Made with 4 grain, 5 seed organic multigrain bread for Wegman’s.
Along with my eggs I had a mini cinnamon honey Sanibel pb with champagne mango (!!).
I also had more mango and some banana on the side.
I hope Nick enjoys the mango surprise in his lunch today!
Question for today seen on the morning news:
Do you think McDonalds should retire Ronald McDonald because he promotes unhealthy eating aimed towards children?

New Additions!

Bowling last night was a lot of fun! We ended up having to play duckpin, but I won a game and got the highest score of the night!
After bowling we went to the diner and I enjoyed cookie Friday with a giant macaroon. Almond paste is one of my weaknesses.
This morning I did not want oats. I also didn’t need a breakfast that would last me 5+ hours. I went with some eggs in a whole!
I haven’t had these suckers probably sense Christmas and it was a nice change.
Runny yokes are my jam, but runny whites, ew. I had a lovely ripe organic pear (also a dirty dozen) and I made a banana pb sandwich out of the cutouts.
I also treated myself to some lovely French press coffee.
I wish I had the time and will to make coffee this way every day. Sissy sighting!
Foam!
After breakfast I headed to Trader Joe’s to pick up some goodies. I also stopped by Pier 1 to see if they had anything good on clearance.
I got these three dishes for $7! Regularly the bowl alone was $10.
After putting away the groceries, doing a little indoor gardening and re-filling the bird feeder I sat down to a nice little lunch.
On my new plate (!) I had my leftover Pad Thai with some fresh basil from the garden and a green monster.
In my monster I had 2 cups spinach, 1 cup unsweetened vanilla rice milk, 1 banana, 4 ice cubes and 1 tbs raw almond butter.
Mmmmmm greens! I miss these POM glasses, they were so unique. I did read why they changed their packaging but I can’t quite remember. I think it had something to do with saving energy and recycling issues.
Time to fold some laundry! Soooo exciting.

While I Was Playing Trivia

Last night we came so close to being in the top 3 in trivia. We missed it by 4 points! No only did we not win, but I didn’t get home until 10:30 and went straight to bed. This maybe early for some but when the alarm goes off at 5:30AM, I try to get to bed by 10. Call me Granny, Nick did.
Anyway, here is a quick run down of yesterday in sum.
A mix of lots of delicious things! Pickles, honey cinnamon graham sticks, clems, carrots and a sandwich with pumpkin butter and brie. Lovely little bites.
They were all packed in this lovely tower of recyclable Tupperware.
Plain Brown Cow and granola. The usual seltzer.
I came home and did 30min body sculpt yoga and straight to the core (I swear her arms get bigger every time I do this) before making a special dinner that almost burned the apt. down.
Bison flank steak (cooked in the grill pan and there was a lot of smoke even with the fan), roasted parsnips, kale wilted with onion, white balsamic and mustard.
I had a few more nibbles of bison before heading to trivia…it was sooo good. I marinated it in EVOO, Makers Mark, white balsamic, S&P, parsley and oregano.
And we have arrived at this morning!
No oatmeal today!
2 eggs in a basket, apple warmed in the mirco with cinnamon and the toasted circles with PB&Co Cinnamon Raisin Swirl.
I need to make this breakfast more often. I always love it when I have it.
I am also drinking tea today because it is blood donation day at work followed by an Indian food extravaganza!
Do you give blood? You really should! I know I hate needles too, but it saves lives and you never know when YOU will need a transfusion. I am a type O hero and I bask in the glory of the good feeling I get after donating. Plus you get cookies and a sticker
I will be chugging water all day long to make sure my blood is a flowin’. To much?

Breakfast x2

I have been listening for the past few hours while I have been cleaning the apartment and resisting the temptation to put on the Christmas stations.
Today has been a day of breakfasts so far.
First breakfast was…
Pomegranate pancakes! Along side some banana and PB.
I mixed some arils into the batter along with my mix, honey, apple sauce and milk.
Topped with more arils and dipped in syrup!
Best combo in life. Banana and peanut butter. Magic.
After breakfast I dashed off for the 3 hour ordeal of getting my hair did.
I seriously need some length taken off and my color fixed.
Before…
Me likes! Much better! I have a cleaning glow to my face here, ha! Like the world map? Great way to cover a wall and educational. We always study up before going to trivia.
When I got home from my 1/2 day in a chair that really hurt my bum I could not figure out what to make for lunch. I am trying to use up the things I have in my fridge before I leave for Thanksgiving on Wednesday, but I really wanted eggs in a basket. So that is exactly what I had. I really should have had some veggies in this, but that is what dinner is for!
2x toast, 2x egg, cheese, extra bread circles with smart balance, apple with cinnamon raisin crack.
Perfect combo! It was also really nice having natural light for my photos. Ugh the gripe of winter. It’s coming so soon, only a month and 4 days until Christmas!!!!
Are you planning on shopping on black Friday? My mom and I are going to hit the outlets in Freeport, ME. Probably the least crowed outlets you will ever find on black Friday. J.Crew is ours and I can’t wait for our peppermint mocha treats from Starbuck! It’s tradition!!!! Can you tell I am excited?
OK time to figure out the dinner plan…we were supposed to hiking this afternoon, but football “ran late” so maybe tomorrow
