Great Beans

10min until I have to go pick Nick up from the Bolt Bus!!!!!

I have to get this recipe up first though, Kath knows her bean dips!

IMG_0200 I made Kath’s Bright Bean Basil Dip (with black eyed peas instead of navy beans, a bit of parsley and pumpkin seeds) for tonight’s dinner. – Mom, you should make this with white beans to replace the TJs kind!

IMG_0201 Spread it out on an Ezekiel English muffin.

IMG_0203 Topped with layers of eggplant, yellow squash and then more eggplant – all baked in the oven for 30min at 350.

Veggies Tonight

The best part was defiantly the grilled veggie open faces on an Ezekiel English muffin.

Layers…

  • Muffin
  • goat cheese – key
  • grilled zucchini from the farmers market
  • roasted red pepper
  • mustard
  • (For a “man meal” I added a small grass fed beef burger with hot peppers to Nick’s and made it a sandwich instead of 2 open faces)

I also had half a sweet potatoes worth of sp fries with mustard.  I went a little crazy with the mustard tonight.

I am working on some races…nothing bigger than a 10k except maybe the Baltimore 1/2…I am so up in the air about it!!!!

Opening Day!

Good Morning!  I hope to find you off to a great Tuesday this AM!  My day should be busy, which makes the day fly.  The best part about today???  The farmers market opens today!!!!!  I am so excited to attend my first farmers market of the season!  I can’t wait to check out my new spot!  I’ll be sure to report.

Breakfast

001 Smoothie and toast.  But not just any smoothie or toast.

In the wine glass;

  • 1 banana
  • 1/2 cup frozen mango
  • 1 packet Amazing Grass berry
  • 1 tbs hemp protein
  • 1 cup almond milk
  • sprinkle of chia seeds

The berry AG added a real berry sweetness to this!003 My toast was 2 slices of Cinnamon Raisin Ezekiel with crunchy pb and pumpkin butter.

002 I always forget how much I love pumpkin butter!  I really liked this odd combo.

Well there is an accident on my commute so I need to get on the road earlier!

Chop, Chop

Hello!  It is so grey here!  We were so spoiled last week with nice weather, I want that all the time!  Yet another reason to move to San Diego.  It is supposed to get nicer as week goes on but I am getting kind of sick of moving my plants in and out every day.  I need a cart or something!

I am sort of on a fridge cleanout this week because we are getting a roommate on Sunday, and I am kind of a pantry and fridge hog.

005 Leftover 15 bean soup from the freezer and a piece of cornbread also from the freezer.  Cornbread does not last as long as soup…

I was getting my haircut this afternoon so I left work a little early and snacked on a fig cookie just before leaving.007 I agree with Nick that I like these better.  they are definitely more like a cookie!

I wasn’t planning on getting a lot cut off but when Alyson asked I said “hmmmm lets do it!”

I couldn’t get a good picture.  I think it looks better in person.  It is so short, but I like it!  I am just too lazy to manage long wavy hair.

I wasn’t really hungry when dinner time rolled around, but I did want to try out my nooch (nutritional yeast) on some kale chips!010

I marinated the kale in nooch and lemon juice.  It turned out to have too much lemon :(   I was bummed, but I plan on trying it again.  No verdict on nooch yet.

011 In addition to the kale I made a 1/2 Ezekiel english muffin topped with an LC wedge and a runny egg.

009 Obviously there was also ketchup involved ;)

I am planning on a square of chocolate for dessert and then it is time for GLEE!!!!! Until then I will be flipping between My First Place and Biggest Loser.  I am so not into this season.

Trying A SIAB

Good Morning!  How are you on this lovely Thursday?  I am still feeling stuffed up from allergies and my chest is starting to hurt from all of the hacking up.  Lovely I know.  I decided to go with a large dose of greens for breakfast to try and kick these allergies butt before I leave for FL.  Flying and being sick are two things that do not go well together.  My ears pop and I never have enough tissues!

So what green item did I got with?

Smoothie in a bowl, first created by KERF

001 In my bowl:

  • 4 ice cubes
  • 1 cup almond milk
  • 2 huge handfuls spinach
  • ~1/3 cup frozen raspberries
  • 1/4 cup oats
  • 1 tbs flax
  • 1 tsp chia seed
  • 1 banana
  • topped with vanilla almond granola, and then again with some TJs fiber cereal

I also had a slice of Ezekiel cinnamon raisin bread because I need some sort solid to go with my smoothies.

I think I still like my smoothies best through a straw, but this was a good way to switch things up and get my greens!

004 So I am no longer going to be posting food rules from Michael Pollan because of copyright issues, but you should just go buy the book for yourself!  Speaking of Pollan, he is coming to MD April 13th and I am super excited!  It is already marked down on my calendar.

48 hours and I will be on my way to Sanibel Island, and Mom will be here in about 36!  I have so much to do tonight in terms of packing, cleaning and getting Nick ready for a week alone with Sissy.

Meatless Monday!

Welcome to a Meatless Monday dinner!

I forgot my camera for lunch today so I thought I would focus on the dinner that got two thumbs up from my meat loving boy.

I am a big believer in reducing the amount of meat I eat for many reasons.  The two most important to me are the environmental and health impacts that much of the meat eaten in the USA creates.  We have got this notion that almost every meal must contain meat and a large portion at that.  I believe that meat is a privilege and should be treated that way.  I eat meat for dinner about 2-3 time a week and on special occasions.  Some times I just really want a steak.  I am also trying to eat more sustainable fish on my “meat off day”, but if you read, you know that this has not gone so well.

Alright, enough with my soap box and onto the food!

I was inspired by a meatless dish I saw in the New York Time a while back and tonight was the night to bring it out to play.

Portobello Mushroom Cap Burgers with Sweet Potato Fries

  • 2 Portobello mushroom caps
  • 1 tbs olive oil devided
  • 2 tbs balsamic vinegar
  • lots fresh or dried rosemary
  • S&P
  • 2 large handfuls of baby spinach
  • red pepper flakes
  • cheese (I used goats milk cheddar at Nick’s request)

Marinate the Caps in 1/2 a tbs EVOO, balsamic, rosemary and a shake of S&P.

While these are marinating cut your sweet potato (I also added a parsnip) and place it into a pre-heated 400 degree oven for 30min (coat with EVOO and salt – or however you usually bake a sweet potato fry).

Preheat your grill pan/ grill or panini press (I used the griddler) and place mushroom cap lungs up.

Cook for about 10min on medium heat then add cheese to melt.

While these are cooking heat the other 1/2 of the tbs EVOO in a pan with garlic and red pepper flakes.  Then added the two large handfuls on spinach and cook until wilted.

Place your burger and spinach on your toast of bun (I used and Ezekiel english muffin – I need more of these STAT!)005 Take out the fries and serve with some ketchup.

You don’t need meat to have a satisfying meal, just ask Nick the carnivore!

I think I might have a raspberry cream bar from TJs for dessert!

Finally, Weekend

Good Morning an Welcome to the weekend!  Nick and I were downtown for a birthday happy hour so I didn’t get a chance to post the rest of yesterday.  Here ya go!

My pear was so juicy it dripped all over me!

004 I think I overdid it on the feta because my wrap was super salty, but still tasty!

I didn’t need my afternoon snack given we were eating and early dinner and I had some prunes in the morning (my overnight oats did not hold me as well as they usually do :( )

I got a library card yesterday and was going to pick up some cook books but they library is under construction so most books need to be placed on reserve for you to come pick up later on.

When I got home I started on the butternut squash for dinner – it actually took center stage on my plate.005 I was going to add chickpeas or beans to my plate, but I ended up have a lot more crackers and cheese than you see there so I skipped them.

I really like how baked tomatoes pop all hot in your mouth.  I ate a ton of b-nut and was super full!

I had a Guinness for dessert at the bar and had a good time chatting with everyone before heading home.

When I woke up this morning I had a serious craving for eggs.  I really don’t know the last time I had a fried egg!  I used to eat them every day!

008 Smile with a Zack Morris hair flip which equals 2 fried eggs, 1 Zeek muffin with raspberry preserve and almond butter and 1 small naner that managed to end up on the ab 1/2 of muffin.

My eggs just had a little S&P and over medium yokes, perfect!

I am watching Food Network and drinking my Saturday coffee.  So nice to just relax.  This won’t be for long, I have my BARCS training at 11:30!  I really hope I can find something to for them that actually makes a difference.

Bitter

Well it is trivia night around these parts and that means a quick post before I head out the D-O-O-R.  Again I am torn between Biggest Loser and trivia, but Nick really wants me to go and we are taking two cars so if we run late I can get home and go to bed.  I get so cranky when trivia runs over, you don’t want me to be around anyway.  When the clock strikes 10PM I know it!

And were back to the food.

Lunch was meh.  I had a can of Progresso hanging around that needed to be eaten because it didn’t going with my other snobby low sodium organic Amy’s soups, and I really wanted soup for lunch.

004 Is this soup just broth?  Yeah that is what I thought. 005  I guess that is how they can make it 60 calories per serving and load it with sodium.  I am not bitter I swear.  I have just become highly aware of over salted foods these days.  It was pleasant enough and I finished it with aka’s and some carrots + celery sticks.  I also had an adora disk for dessert + one artificially flavored truffle that was in my desk.  I threw the rest of the bag away this afternoon.  There was just no need for them to be tempting me with words I can’t pronounce.  Wow I am seriously bitter tonight!

My afternoon was pretty uneventful except for me trying to figure out how to walk with no knee pain and I broke from this activity to have a snickie snack.

Seltzer, apple, almonds and a date stamp that puts me in the Finance department.  Do I have a finance degree?  Nope not even close, Masters in Environmental Earth and Ocean Science Thank You.  Not bitter.

At least dinner was cooking away when I got home.  While it finished off I did some yoga on demand and my PT stretches + some foam rolling.  I also tapped my knee up like Ray told me and I am currently walking with no pain and I only took 2 ib profane around 2pm.  We will see what it feels like when I crawl into bed.

This morning I put a small organic steak wrapped around and onion into the slow cooker with the rest of the onion, carrots, celery, sweet potato, oregano, bay leaves and S&P.  I soaked it in 2 cranberry limbic Sam Adams brews to make a beer based beef stew.  It smelled good.

008 I gave Nick most of the meat, but what I got was definitely the best part.  It was moist and “fall of the bone”  if there was one.

I loaded my stew on top of some green beans and had a side of 1/2 an Ezekiel muffin with Cotswold cheese.  Mmmm cheese.

010 I could say I was bitter not to get more of the meat to stick with the theme, but I wasn’t.  I got just the taste I wanted with all of the flavor cooked into the rest of the stew.

I am currently having a cup of green tea and another Adora disk, got to get my calcium in ;)

Sorry for being so bitter today, I think my knee is really getting to me.  Hurry up and ship my sleeves!  One week until we re-visit my injury.  I have many thing to be happy about in life and two of them are sitting next to me on the couch.  Ending this post with a :)

Cold and Purple

Good Morning!

Still riding high on the Ravens win yesterday afternoon.  Watching the news report just gets me all excited again!

I also realized this morning that I truly hate winter.  It is supposed to be warmer here and it is 15* this morning!!!!  Yuckie!

At least I had a new breakfast to make this a little bit easier getting out of bed this morning.

001 Ezekiel english muffin with pumpkin and peanut butter topped with banana.  I also had some plain yogurt with banana and vanilla almond crunch granola + a handful of granola.  I seriously can’t stop eating this stuff!

Banana-ness!  I just realized that I forgot my chia seeds in my yogurt :(

OK I need to get moving.  I have to pack my bag for the gym(!)  Fingers crossed for no knee pain!
