Food Processing

Where did the weekend go?  Can I get a do over?

This afternoon I finally made it to Giant to do a little food shopping with a ton of other people.  Yuck.  I hate going to the grocery store late.  I like being alone in the store.  I can examine packages and ingredients while taking up the whole isle with my cart.  Grocery shopping makes me happy, but like I said before farmers markets are way better!

When I returned I set to making my first thing in the food processor for the night.

ALMOND BUTTER

026 I started by roasted 2 cups of raw almonds.  I think roasting your own almonds add a whole new level then previously roasted.  They were grinding while they were still warm!

I dumped in the hot out of the oven almonds into the food processor and they were off.  It didn’t take long to get a nice creamy almond butter!

I made two types.

The above is almonds + 1tbs chia seeds + 1 tbs ground flax.

My second was almonds + cinnamon + vanilla.027 Nick really liked the cinnamon one and he is not a big nut butter fan.

I enjoyed a sample of nut butter with a gala apple and packed up the extras into the fridge.

025 My second creation was for dinner.

I got the idea of crustini on my brain so I came up with a larger version for my dinner.

I mixed black beans, green peas, basil, sundried tomatoes and S&P in the food processor while I toasted my bread with EVOO.

Then I layered on my pea mixture with tomatoes and some parm cheese and then back in the oven for 10min.028 Yum!  Perfect light dinner after a weekend of indulgences with a side salad.

I love my food processor!  I am planning on using it for tomorrow’s Meatless Monday meal.  Any ideas as to what I could be making????

I can’t wait for almond butter in my oats in the morning!

Great Day of Eats!

Oh what glorious weather we had today, and tomorrow is only supposed to get better!

Work went by quickly even though I wanted to be outside.  I just kept reminding myself that there was a run waiting for me at home.

My lunch was stellar today!

005 Leftover baked tofu sami on Wegman’s bread, avocado and spinach.006 This sandwich was amazing!  Just look at those seeds!

I also had some lovely Florida strawberries along side.

007 Perfect lunch.  I might have to duplicated it for tomorrow.

I had my snack on the fly in the car with NPR.

008 Look at that sunshine!  I was a little worried about this bar because of my last experience, but that on was actually a lot better.  There were actually cranberries and raspberries visible in it and not just flavoring.  I liked all of the chia seeds in it, but again the dates sort of bothered me.  Plus there are 22g of sugar in them!  Expensive + 22g sugar + dates = I will not buy these again.

So when I woke up this morning I had a special package on the counter, but I wanted to wait for natural light for photos and I knew the second I opened it, I would want to use it!

She was actually more excited that I got more bird food for the feeder, hence her gaze towards the window.

Before opening I wanted to get in a nice little run in the sun!

I did a nice little 3.5miles and even though my legs felt heavy I finished a minute faster then any of my runs 2 weeks ago.  I will chalk it up to the nice weather.  So many trees were blooming and the daffodils were so pretty!  the second I got back into the apartment it was time to open her up and start making dinner!

What is in there?

Well given that it is Passover I made a totally different version of my favorite Jewish dish, latkes.

Sweet Potato Latkes – makes 8

  • 1 large sweet potato
  • 2 carrots
  • 1/2 onion
  • 1 clove garlic
  • ~1tsp thyme
  • salt & pepper
  • 2 tbs whole wheat flour
  • 2 eggs

  1. Grate the potato, onion, garlic and carrots
  2. Dump grated veggies into a large bowl and combine with other ingredients
  3. Grease baking sheet well! (I did not do this well and missed out on a lot of the cruchies)
  4. Heat over to 375
  5. form 8 patties out of mixture and place on greased sheet
  6. bake 20min
  7. Flip
  8. bake another 20min

013 The only differences I might make would be to replace and egg with flax and remember to grease my pan!  I really liked the flavor!016 I topped mine with a little goat cheese. Yum!

Along with my latkes I had sautéed kale with onion, garlic and balsamic vinegar and a couple baby portabello mushrooms.017 018

I love kale and Nick loves balsamic vinegar, so we compromise.

Another reason I love Wegmans besides their bread?

Their meat.  What other grocery store (Besides Whole Foods) has store brand grass feed organic beef?  I grilled this little baby up for Nick’s dinner.

After dinner Nick and I went for a little walk around the neighborhood.  It was too nice to be inside!  I am hoping we can do this more often during the week.

I brought along 2 coconut chocolate chip cookies.

I can’t wait to make more things in the food processor!  What are you favorite things to make?  Pesto, nut butters, dough, graham crackers and crustini are already on my list!
