Thundersnow

Ever heard of a Thundersnow?  Well we are having one right now!

I know people up north have been having tons of snow this winter but we has out share last year, and now we are getting hit with another storm.  They said we could get up to 8in and I think we are almost there.  Not sure if I will be making it into work tomorrow seeing as it was not safe on the roads this morning and there were only about 5 people in today.

Dinner

After some gchatting with Ruggs in the land down under I had planned on making an acorn squash and beans for dinner, but I just did not feel like beans again.  I basically just started cooking everything I had in the kitchen and knew I could throw the leftover in the fridge for lunches.

This is what I came up with.

Organic parsnip fries in Indian spices, organic green beans (frozen) and organic quinoa with the remainder of my blue cheese dressing from last night.

These were both good but the best part was definitely my organic baby bella mushrooms on homemade bread toast with cheese!

This reminded me of a mushroom melt and I want to make this for nick with some caramelized onions, yum!

I loved all of the flavors and textures in this meal!  AND I love that it covers my needs from fats to proteins.

Sissy and I are not cuddling on the couch and I am sipping some mandarin orange tea.

Ever See a Green Bean Do This?

Tonight I experimented with a recipe I read about in Heidi Swanson’s book Super Natural Cooking.  This cookbook is really amazing.  It isn’t just recipes but ways to make your whole life more natural.

I made my own version tonight with what I had for her citrus green beans.

The coolest part of the recipe was using my mandolin to slice little circles of green beans.

  • 1 lb organic green beans
  • 1/2 pint mushrooms
  • zest of one lime
  • zest of one lemon
  • EVOO
  • S&P
  • garlic clove

Slice the green beans into tiny circles with either a mandolin or food processor.  This takes time and try not to cut your finger like I did.  While you are slices start sautéing the mushrooms in the oil, S&P and garlic.  When the mushrooms are almost done add the beans and then 3 min later add the zest.

IMG_8111 I really liked these simple beans and I think they would be great cold at a summer bbq.  The original did not include the mushrooms but I love them so they went in.

Along with the beans I made some harvest grains and organic chicken breasts baked in an almond meal, garlic powder, chili powder and S&P crust.

I think tonight was the first time we haven’t had salad with dinner.  It was kind of weird, like something was missing.

Salads and summer go hand in hand.


Valentines Day Wrap-Up

Good Morning!  It is Presidents Day so Nick an I are both off from work.  I have plans for a vegetarian lunch in the city with a friend, LOTS of cleaning and then dinner with Nick’s family for his birthday.  First I owe you a Valentine’s Day re-cap.

To start off I had way too many of these for breakfast.

Then when I got home from the grocery store I needed to make dessert soooo I had to sample the cake base.002 So basically to this point I had only had cookies and cake to eat…who am I? A ten year old?

I made Nick a Valentine’s Day brunch but all I could muster was a small amount of Oikos, blackberries and banana.

003 I didn’t get hungry until 6pm at night when I started to make dinner and the smells filled the apartment.  I made a little goat cheese and cracker plate for Nick and I.

Our Valentine’s Day dinner was also a special dinner for Nick’s birthday week.  He planned the menu.  Buffalo strip steaks marinated in red wine, fresh green beans with balsamic mustard sauce, goat cheese potatoes au gratin.  I also had a few glasses of wine through dinner.

008 The griddler did a great job getting the grill marks onto my streak!  Nick forgot he was eating buffalo, that is how non-gamey it tasted.

And now for the best of the dinner!

Dessert!  Personal tiramisu!  Again by Nick’s request.  I sort of made up my own recipe off some I researched on the web and I also simplified it.

Layers:

  • lady fingers (I used Madelines)
  • pour Kailua and fresh brew coffee over cakes
  • pour mixture of; marscapone cheese, brown sugar, regular sugar, more Kailua
  • re layer one more time and sprinkle coco powder on top layer

Some times tiramisu calls for brandy but Nick loves Kailua so I just stuck with that.  Most recipes also called for cream cheese, but I just used all mascarpone.

This was super yummy and really easy to make actually.

Nick and I finished out the Nick with a few more rounds of Band Hero and Zack Efron in 17 Again.  It was a cute movie and Nick actually laughed at certain lines.  It was a very successful easy Valentine’s Day meal and activities.

Snack Fest

Welcome to Maryland, where it feels like New Hampshire!  It is so cold outside!  I am so happy I ran outside yesterday so I could be warm inside today!

Back it up a bit…

My second breakfast/snack as I mentioned was a mini WW bagel with chunky almond butter.

003 It looks so big in this picture!  I feel like to best determine if it is better for me to eat one large breakfast or two small would be to make one large breakfast and eat 1/2 at home and pack the second 1/2.  Maybe next week :)   There is always time to experiment!

I had quiet the enjoyable lunch of leftover latkes!!!

004 2 latkes, whipped cottage cheese, carrot, grapes and more lime yogi dip.  Latkes were eaten with hands, maybe that is why they were better?

The afternoon moved on and into snack time!

Harry and David Pear my mom brought (dripping good) and some almonds.

I also dove into some pumpkin bread pudding when I got home…dessert before dinner, oh well.

008 So delicious!  I will be sad when all of this is gone.

After multi snack time I did 47min of yoga on demand.  Wow burning quads!!!  Some of those classes are so hard, but I felt so good afterwards.

Once yoga was complete I starting makin some dinner.  I gave Nick the option for Italian or Asian and he picked Italian.  This is what I went with.

009 Leftover cauliflower mash (Nick had barilla plus), sautéed onions, garlic, Portobello mushrooms, green beans, roasted red peppers, chili flakes, herbs, chicken and parm cheese.

My Old Connecticut Home

Making this short because I just got home and want to spend time with the madre.

Work went by quickly today due to tons dumped on my plate late yesterday.  I had to get a package to EPA today, and was able to get to the mail room 20min before closing.  Score!

In between running around like a crazy person I managed to eat some lunch

003[wow this pic just took forever and ever to load] but we have here a apple butter and tempeh sandwich on a arnold thin, salad with cuc, carrot, hummus and balsamic, last of the canary melon and an adora dark disk.

004After being able to breath around 3:30 I grabbed a handful of almonds to tied me over until my planned snackage in the car.

005I love when you get a nut that sort of tastes like marzapan!

I headed out on my journey home directly after work prepared for lots of traffic.  Surprisingly there really wasn’t much and all I could think about was my favorite Clif bar sitting in my bag.

006I opened and ate this much earlier then I had planned but it held me until my late mini meal at home.  I also grabbed a grande (in a venti cup for lots of milk adage) iced coffee with skim while I gassed up.

007When I finally arrived home 4 hours later (not bad, just an extra 30min for a little traffic) Mom had some homemade green salsa, by Lauren and chips waiting.  This salsa was so fresh and summery!

008My mom has been growing tomatoes but is allergic so I said, “yes please” and added half to my tasting plate!

009so meaty and delicious!

I also had some leftover green beans in mustard and dill, grilled chicken and avocado.

010Just what I needed!

011Alright time to go watch some trash TV with mom before hitting the hay!
