Meatless Monday

Now that Nick and I have finally settled into our life in Silver Spring, I can recommit myself to the blog.  Truth is for the past 1.5 years of feeding just me and Sissy Cat, my creativity has basically gone to one pot wonders, eggs, and bread as my “whole grain" of choice.  With someone else to feed I actually need to meal plan again and get creative!

Last night I made an awesome enchiladas pie with winter veggies instead of the usual corn and tomatoes (think acorn squash and kale), layered with fresh pinto beans and drenched in a real ingredient sauce from Whole Foods.  Wish I had taken some pictures…

Tonight I found my camera, and the meal was delicious, but just not as amazing as the enchiladas.  Still post worthy.IMG_1458

Spicy Lime Pasta with Kale and Cauliflower

  • 1 cup uncooked whole wheat pasta
  • 3 cups shredded kale
  • 1 head baked cauliflower (30min at 350)
  • 1 onion diced
  • 1 clove garlic, pressed
  • 1 TBSP “Arizona Dreaming” penzey spices – a blend of chili’s and peppers from the southwest
  • 2 TBSP tomato paste
  • zest of 1 lime
  • juice of 1/2 lime
  • 2 TSP whole wheat flour
  • 1/2 cup veggie broth
  • 1 TSP salt

  1. Cook pasta and cauliflower
  2. Keep the oven pre-heated once the cauliflower is done
  3. Sauté onion in olive oil and add garlic once onions are translucent
  4. Add remaining ingredients (minus pasta, cauliflower, and kale) to pan and mix
  5. Now that you have your sauce add the kale, cauliflower, and pasta and stir it all up (you may need to add a little more broth, flour, or paste depending on how well your goods are coated)
  6. Throw it all in a baking dish and coat with a thin layer of grated cheddar
  7. Bake at 350 for 20min so the pasta gets crispy on top
  8. Serve and squirt with lime!

Meatless Monday Meal

Happy Meatless Monday!  I haven’t had a Meatless Monday post in while but I seem to have a ton of food in my fridge at the moment (probably why my grocery bill was $40 more than usual this week Disappointed smile).  This led me to make some beans and chickpeas from “scratch” and make hummus and a giant salad with bean toppings.

Delicious and finished off with an Adora disk aka my calcium supplement.

Off to watch a new House and work on wedding things!  The wedding is really excited but weighing very heavy on my mind.

Veggie Lentil Toast

It is Meatless Monday and I am trying to eat up my kitchen before leaving for Maine on Thursday.  It was time to get creative.

Loaded Bruschetta

  • 2 slices of any artisan bread – I used a Kalamata olive loaf that I had leftover from last weeks farmers market.
  • 1 tbs tomato paste
  • basil leaves to cover bread
  • 1 small zucchini sliced thin
  • 1/4 cup cooked lentils
  • parm cheese

Slice off two pieces of bread and lay them on a baking sheet.  Spread the tomato paste evenly over the two pieces of bread.  Layer basil leaves to cover.  Do the same with the zucchini.  Divide and spread the lentils over the zuc.  Sprinkle with parm cheese and bake for 15min at 350.

IMG_0050 Delicious!  Pair it with a nice side salad for some raw veggies and you are set!

I’ll let you know if I make anything else crazy with what is lurking around here.  I am going to the FM so that Nick has some fruit while I am gone.

Monday on Tuesday

I meant to post this yesterday, but things came up and I had to push my Meatless Monday post until today!

Yesterday I decided to run a 10k in my Vibrams to see if I could sport them in my trail race this weekend.

I filled up my Camelbak and hit the trail.

It was hot, but I could not stand the sound of the water sloshing on my back.  It made my run so much less peaceful, and I was not happy.

It was still nice to have the water on my run.IMG_0002

The 6miles went well except my calves got really tight around the end.  Obviously my calves have never had to work like this before and they were in shock!

I made it through, but I don’t think I will be wearing them on Saturday, boo.

Either way it was a successful run.IMG_0003 Vibram high-five!  Run well done!

Now onto Meatless Monday Meal!

Who doesn’t love a grilled cheese?  Well with all the cheese and butter involved they are not always a healthy choice.

I wanted to make healthy grilled cheeses for dinner!

IMG_0006 I used a stronger cheese so that I could use less on the sandwich (Asiago) then I loaded it with veggies – tomato, spinach and Portobello, all on 12 seed sourdough.

I also made huge salads with mixed greens, cucumber, pepper from my garden, and tomato.IMG_0007 Frise in your face!

This was so good Nick requested for dinner tonight.  I think we have a winner here, and it only took about 10min to make!


Meatless Monday Returns!

Hello!

I haven’t done a Meatless Monday post in awhile and I thought tonight was quite fitting.  Nick had softball so while he is away Heather will play :)

I used tempeh and mustard greens.  Two things he is not crazy about.

I started off by sautéing an onion (all of my garlic had gone bad:() then I added 1 small zucchini and patty pan to the pot.  Next I threw in some torn and washed mustard greens juice of 1/2 a lemon, plus some S&P, and nutmeg.

IMG_8228 In another small pan I browned some tempeh before adding a little pasta sauce.

And bam!  It was topped!

I have something in the oven and I will present tomorrow if they turn out well.  I followed the recipe almost exactly so I am hoping they are delicious!  I can smell them from here!

Creative Eggs

Hello!  Sorry it has been so long.  I have been super busy and no pictures have come of it.

I thought I would post about a lovely Meatless Monday.

I was inspired by Ashley’s kale eggs for my dinner.  I always wonder if it still counts and meatless if there are eggs?

Anywho, her mess looked much better, but at least mine also tasted good!

IMG_8150 I tore up some spinach and kale and sautéed that in a pan with EVOO, S&P.  While this was cooking I broke up 2 eggs in a bowl with some S&P, parsley, oregano, thyme and rosemary (All from my garden).Then I added some peppers to the greens and next, the eggs, slowly.

Covered and cooking – I toasted a piece of Great Harvest 9 grain topped with some mushroom herb cheese.

Carrot fries were in the oven.IMG_8153 When the egg and kale “pancake” was done I topped my toast.

IMG_8154 Not as pretty and my whites didn’t seem to want to cook, but I got it done!

Loads of Spinach

Another Monday bites the dust!  Too bas it is still cold and rainy outside and it is supposed to be like this until Thursday :(   Do I live in Seattle???

At least I had some good food to get my through the day!  I had spinach with every meal today!  Crazy.  Just call me Popeye.

007 I also had a mango and pb sandwich on Dakota bread.  Mango and nut butter is an amazing combination!  I may repeat this tomorrow, but it went down the hatch way too quickly!

After work I came home and made a lovely snack.008 Gala with homemade cinnamon vanilla almond butter.

009 After my snack I went and tried out some REI bikes.  I thought I would be able to figure out my size to compare other bikes, but they only come in small, medium and large.  I tried out a few and liked one, but this is a huge purchase and I would like to do tons of test rides.

When I got home I got started on a Meatless Monday dinner!010 I based this off an Ellie Krieger recipe for a ravioli toss.

  • pack of whole wheat 6 cheese tortellini
  • roasted red peppers
  • tomatoes
  • broccoli
  • spinach
  • sauteed onion and garlic
  • avocado
  • dressed in EVOO, red wine vinegar, S&P.012

I also had a special little dessert that I think I left in the freezer for a little too long, but it still tasted good!014 Frozen chocolate Greek yogurt.

On the exercise front my knee definitely loves the foam roller!  I think I am going to try and attend Bikram tomorrow, but it all depends how I am feeling.  The bike hunt will continue!


Burger Heaven

Another beautiful day enjoyed in my cube :(   I guess that is what makes the weekends so great, right?

My day went a lot easier that I had expected thanks to government websites crashing.  Was I supposed to say that?

Lunch was a little something of everything.

My salad included spinach, swiss, tomatoes and lemon hummus.

I bet you can guess what I had for my afternoon snack!

007 Fig bar with the original oat topping.  Nick and I both confirmed today that we like the fig cookies better.  They just mesh better together.  These are still good and I might try and work in the granola bar section of it.

When I got home I watered my garden that made it through its first day!  I think I am going to have to bring them in tonight though…annoying, but dead plants would be worse!

After watering and feed Sissy Pants I headed out on a nice and relaxed 3 mile run.  my hammies were super tight so I just wanted to get out there and burn off some lactic acid without pushing it.

After my run it was time to get started on Meatless Monday!

I made these same portobello burgers awhile ago and they were on my mind again.

I marinated the camps in balsamic, evoo, rosemary and S&P before grilling them up on the griddler.  I also sautéed some spinach in garlic, EVOO and red pepper flakes that were added to the burgers.  The final step was adding the last of my Dubliner cheese and a toasted Ezekiel english muffin.

While I was worked on these I had some parsnip fries in the oven coated in EVOO, S&P and garlic powder.

010 These were dipped in a new organic ketchup that is made with agave.  It tasted more like tomatoes and I liked that, it was also thicker than the Heinz I am used to.

I think I am going to grab a little chocolate before settling in for some Bones!

Lets Go DUKE!

Duke is playing in the finals of the NCAA right now and the game is already too intense for me!

So lets get back to the Easter recap!

The highlights

003 Easter Bread!  I love this sweet bread and just think it is so festive.  These were our dyed eggs this year.  Much easier and less messy.  I ate about 1/3 of the bread and one of the eggs.  The other egg wasn’t fully cooked!

006 With my candy decorations.  Peeps, eggs and Bacio were eaten throughout the meal.  Easter = chocolate AND plants!005 Check out my Easter basket!  Pansies, tomater, chocolate, REAL red wine vinegar, rosemary, j.crew t-shirt, lettuce (!!!) and KALE!!!!!!!!  I am really excited about the kale and lettuce I just hope I can keep them alive!  It is really warm right now but they say you shouldn’t plant until night temps are consistently above 50.

009 The star of the show!  He did not stand a chance.  All that was left were his ears.  Even my grandmother had a second piece!  It was so delicious and moist with a delicious lemon custard.

011 We had some photo fun outside in the beautiful day.  I guess most of them got on my mom’s camera :(   Oh well I like this one!

After a seriously long drive home we went straight to bed.

015 Doesn’t look like much but the lemon flavor really comes out.  I am going to try and recreate this when I start making my hummus in the food processor.

I had forgotten my snack for the afternoon so I patiently waited for one once I got home.  First I had to drop off my bike at REI for her tune-up.  If it is going to cost a lot of money to get her fixed I am seriously going to get a road bike.  I saw so many people cycling today and I really wanted to join them.

Toasted Wegmans bread with pb and jam.  Yum!  Nick does not like pb&j and I do not understand it! (Katherine you are a different story)

After I let my toast digest I headed out for a nice little run.  It was 80 out when I left.  I just soaked it all in.  I ended up doing about 4 miles and felt great!  When I got home I did the usual roll, core and push-ups.

So what did we have for meatless Monday???  Well I hadn’t been to the grocery store in over a week so it took some creativity.

Thankfully mom had given me a head of broccoli to take home.

  • 1 can no salt added diced tomatoes
  • kalamata olives
  • capers
  • garlic
  • parsley
  • thyme

We also had a nice little salad of cucs, maters, dill and some of my new red wine vinegar.  This vinegar is much nicer than the grocery store brand I had before.  It doesn’t have the same bite? but instead had a deeper flavor.  I think my mom got the idea from the new Cooking Light we read on the plane back from Sanibel.

Alright Duke is not looking so good.  Time to get my cheer on!

1.2!

I walked/jogged 1.2 miles today without any pain!  I know 1.2 miles doesn’t seem like that much, but it was so nice to walk off the treadmill after 20min and not have knee pain!

I took it very slow and easy:

  • 5min walk @ 3.5
  • 5min incline walk on 10.6 @ 3.6
  • 5min jog @5.0
  • 5min walk @3.5

I felt like I could keep going with my jog, but I don’t want to push my knee and was just happy I could keep moving!  After my t-mill I did some arms (ouch!) and all of my PT exercises.  I also did a bunch of core work and some foam roller.

Anywho I am currently icing because it can’t hurt, but so far so good!

Leading up to my moment of running I had to fuel myself through the day!

004 Butternut squash soup that I split with Nick, spinach salad with carrots, maters, balsamic and mustard.  I also had some kashi crackers.

Nick ended up having to go home early from work because he was so sick :(

I once again forgot a pre-gym snack and had to rely on my almonds.  It really wasn’t what I was craving, but I had to eat something and the options in our building are awful.

I was riding high when I got home from the gym and in honor of Meatless Monday I made Nick and I tofu tacos, or tofacos as he likes to call them.  They actually because tofu burritos.

007 Nick actually said this was way better than he thought it was going to taste when I told him we were having tofu for dinner.  I think it helped that I had avocado and cilantro in there ;)

008 I coated the tofu cubes in chili powder, garlic powder, salt, cumin and oregano.  I then tossed them into a pan with some mushrooms and then wilted some spinach in.  This was stuffed into a tortilla shell with avocado, cilantro, salsa and a small amount of cheese (we are trying to keep phlegm down around here).  I also had 1/2 of a sweet potato on the side.

Nick requested another blueberry smoothie for dessert and this time I added some greens in without with knowing!

I had a cup of green tea and an Adora disk.

Now I am going to finish up jeopardy and probably get into bed early!  I do not want to get sick!
