Farmers Market Tuesday : Okra

I almost missed it again but this time it was because of some violent thunderstorms and not a flat tire. Like most of the country we are having a serious heat wave and my AC seems to be constantly running, so why did I even think about turning on the oven tonight??? Because I got my first okra of the season at the farmers market!!!!
My fruit guys also grow veggies and they always have multiple varieties of okra. Did you know there were different species? I love how pretty these purple ones are and even some of them were bi-colored.![]()
So what does one do with okra?
Make okra fries of course!!!
Roasted in the oven for 20min at 375 and coated in olive oil, salt, garlic powder and chili powder. Note to self – chili powder can burn in the oven and your smoke alarm will go off.![]()
Eat them down to the stem and don’t forget the ketchup!

Purple Stuff

Well I hadn’t until I went to the farmers market today.
Obviously I was game!
When I asked the farmer what they tasted like she said she wasn’t sure they were the first purple crop ever and they were just picked last night…give them to me anyway. I honestly don’t have many veggies I don’t like…radishes?
It looks the same on the inside.
Guess what happens when you cook it!
It magically turns green again!
I served my okra stars with onions, tempeh, S&P, EVOO and balsamic.
Okra is furry.
Have you ever had purple okra? Did you notice a difference? I did not, it was just as delicious!
Thunder and a Stone that Sank
Posted: August 18, 2009 Filed under: Coldstone, Mahi | Tags: canary melon, mahi mahi, okra, peach, yogurt 2 Comments »As slow as work was yesterday it was crazy today! Oh Federal Stimulus how I love thee. I was a completely stress filled day only to be broken up by lunch.

Leftover grilled eggplant sandwich with feta, roasted red pepper hummus and basil on 7 grain bakery bread. I also had canary melon a half of a white peach and a plain Greek yogurt.

Don’t you hate when you have days of nothing and then one day of a ton of work? Why can’t the world spread it all out??? It never seems to work out that way. The fates are against us!
Around 4 I dove into my homemade fig/date/nut bar aka poor man’s Larabar.
Man I love these bars! So naturally sweet and delicious. I really want to try adding other fruit to these and mimic my favorite Larabar flavors. And I can’t forget the seltzer!

I switched up my workout plan to get ready for my weekend, starting on Thursday! I went for a 3 mile run with two big hills in 43min. There were huge thunderstorms all around me, but at least 10 miles away according to Mississippi counts! It was so cool to listen to the thunder roll in the background. I turned off my shuffle for about ten minutes and just listened to the thunder and watched the lightening light up the sky. It felt so good that I wanted to run another 3, but I knew I would be feeling it tomorrow so I stuck with the training distance.

- Jen “accidently” ran 10.5 miles! Crazy girl! I would def notice that many miles!!!

Dinner Time!
During a break in the rain I went to collect my crop from the deck.
yellow tomatoes in my shirt! These had to be in dinner somehow.
I had taken out some Mahi-Mahi this morning so I knew I would start with that.
I stove topped the fish due to the storms in lime juice, garden jalapeno, cumin, oregano and EVOO. We also had TJs harvest blend with garden tomatoes and baked FM okra with yogurt hot sauce dip! (This dip was for Nick and I to split!)
Check out this two pronged okra! Nick started eating the stems until he saw I wasn’t…heehee he is new to veggies, but seems to love most of them!
After dinner Nick and I went to Coldstone to change it up from gelato. Never again! It was gross! Not even picture worthy. I got berry fro-yo and sinless sweet cream…ew thinking about it makes me want to barf. Even when I used to get full fat cake batter I used to feel sick. Like I said, never again!

Birds and Bison!

It was so cool seeing all of the Ravens shout out all over the internet communication sites today! Of course there was the usual Redskins trash back, but it got me a lot more excited then I thought I would ever get over football. It is def a sport you need to know the players and the game to get into.
Not much went on at work except a closing time phone call from the boss to do something…hate that. In between keeping myself busy I had total carb loaded lunch
I missed my veggies, but it was still so good!
Arnold with wild rice tempeh, raspberry jam and AB. 2 pieces of madel bread. Plain Greek yogurt with white peach and the other half of my peach solo.

The usual snack attack occurred around 3:30.
My orange cranberry is coming to get you!

My workout today was a hard choice. We are going to the Orioles game tomorrow so I have to push my workout to Saturday AM again. Today was supposed to be 2 miles with speed work, but I switched it to 3.5 miles with lifting, which turned into 4.25miles of crazy hills (in a dodgy side of town) and then 30 day shred level one without weights. I am still worried about my knees and lifting with free weights. It turned out to be a good hard workout, and I will be ready to go on Saturday!
OK so finally dinner.
I got these at the farmers market and wanted to be able to share them with Nick. Oh and the heirloom eggplant is PURPLE

everything tonight went on the grill, heirloom eggplant, okra with a little corn meal S&P and 4 All natural local BISON sliders (mixed in no salt added steak seasoning, Worcestershire sauce, and onion).
Due to my lack of veggies at lunch I went with veggies and bison only for dinner. I turned my plant into buns with lettuce and spicy brown mustard.
Holy yum these burgers were amazing! A little messy due to the h20 content of the eggplant, but nothing a napkin couldn’t take care of!
Just look at that beauty!!!!! I really want to try a bison steak next time I am at the farmers market.
I am off to finish watching the Ravens second half. Have a great night all! Tomorrow is Friday!
