My Day Off

5:30 – 7:00 – Battle Sissy for sleep as she paws at my face.
7:00 – get up make coffee and breakfast, watch Today show!![]()
(Half of breakfast – english muffin, almond butter, raspberry jam, chia seeds, banana)
8:00AM – Call Rock Ford coordinator to make sure she is going to be able to meet me and the wedding coordinator.
9:00 – Off to yoga
9:30 – 11:00 – get my butt kicked at yoga and love it
11:30 – Trader Joe’s run for almond butter because whole foods doubled the price of their’s!?!?!
12:00 – Starving but must shower before eating
12:30 – make the quickest lunch possible![]()
Taco salad with lentils, salsa, tomatoes, lettuce and pablano pepper. Peach. Un-pictured handful of granola
1:00 – Roll out to the bank and Whole Foods and buy too many things like a cranberry orange scone that was not orangey enough and disappointing.
2:00 – Get annoying mail from out management company and have to make some phone calls
2:30pm – Call wedding B&B and make final payment.
3:00pm – Still shaking from yoga start working on bunting for wedding.
5:00pm – finally have all of my triangles cut out and holes punched.
5:30pm – Start reading through new cookbooks and get inspired for dinner with this one.
6:30pm – Dinner, Personal sized – green beans, mushrooms, two eggs, cayenne pepper, garlic powder, salt and pepper
Topped with parsley and fresh parm cheese. Oh, and kale chips!![]()
7:15pm – Do some laundry, straighten up, wait for Nick’s delayed bus to get to Baltimore!![]()

Rant and Some Dinner

So this wedding planning business has been at least 2x harder than I thought it would be originally. I did not know that I was going to need to know the hourly breakout of my wedding 5 months before it actually happens or that if you want a bridesmaids dress that is not black, blue or brown it will be really hard to find the exact color you DO want. I have flighty caterers and have already put way more miles on my car than I wanted to when gas is $3.75/gal. I think I am my own worst enemy with all of this because I am a list maker and a planner. I do not just wing things, just ask Nick. I want to get as much done as possible as soon as possible so I am not scrambling near the end. It’s not that I don’t want to be all calm and make my wedding a really relaxed party, but I want it to be a perfect relaxed party. It is also really hard because Nick is still living in NYC during the week so I am making these plans alone and on weekends we have to rush around to get things done. My mom and future MIL have been great lending me a hand and visiting, but I am missing my other half.
I just cannot wait for 9/24/2011 to get here already! But not too quickly because I don’t have everything ready yet!![]()
At least Sissy had a nice relaxing afternoon on the deck! It was 85 today!
Warmer weather had me craving salad! We now have local hoop house greens at Whole Foods, which are amazing! Hoop Houses allow you to grow things earlier in the growing season without using fossil fuel and use more of a plastic greenhouse effect that heat the insides. Their lettuce is so buttery!![]()
- head of red leaf lettuce (they are smaller heads than the conventional)
- serving of cooked quinoa
- grilled portabello with rosemary
- mahon cheese amazing – calves stomach lining and all
- 1 slices of toasted Great Harvest Dakota Bread
- dressing – EVOO, red wine vinegar, brown mustard, s&p
When life is stressing me out I still want to make sure I am keeping balance! It is basically the only way I stay sane! Short jaunt and the gym and a delicious dinner. Keep chugging along and we will get there.

Merry Christmas!
Posted: December 26, 2010 Filed under: Christmas | Tags: Christmas, christmas eve, family, Sicily 3 Comments »I hope everyone had a great Christmas (if you celebrate) and a nice long weekend if you don’t! This was the first Christmas I was without my grandparents and it was bitter sweet. I was able to spend the holiday with Nick for the first time, but they were surely missed.![]()
Christmas Eve we had Nick’s dad over for dinner.
We made roasted yams, butternut squash, green beans with mushroom and almonds, onions and pork roast.
For dessert we had local peppermint stick ice cream, gingerbread cookies and Rugge rum balls.
We all headed out after dinner to find some tacky lights and we were successful!
Christmas morning we opened stockings and presents.
Sissy enjoyed a head piece as well, but more as a play toy.
After presents, Nick went to his Dad’s and my mom and I went to church and then to Nick’s mom’s house for dinner.
Overall it was a great Christmas with new traditions. I am glad my mom could come and join us and meet more of Nick’s family. Is new years really only 5 days away??! Time to clean up wrapping paper and anxiously wait for the “snow storm” that is supposedly coming.

I didn’t think I was going run until this spring but wanting to run is like an itch that needs to be scratched. I wasn’t going to go hard or far, I just wanted to test out my foot and IT band to see how they felt.
I wore my squishy shoes that I got for my foot this summer to see how they worked when I ran (forever a scientist!)
My IT band was tight at first but after the first 10min it had warmed up. My foot did the same thing, but after the IT band stopped or I didn’t notice it until then. Once I stopped neither one hurt but I got out the foam roller and just pressed it against my IT.
Hurts so good. Like a deep tissue message.
So, how far did I go?
Mile 1: 8:31
Mile 2: 8:13
I am not going run more than once a week and I am starting to strength train, which is more important in being able to run that I am giving it credit.
The upcoming year will involve – swimming, strength, yoga and a small amount of running.

Monday, Monday

Sissy was ready for the Ravens game yesterday, too bad they lost! Booo Bieber Brady.
Sunday also means Nick leaves and it is time to get ready for another week.
I had an appointment with the Honda dealer after work tonight and I didn’t get home until 7! I needed to shower and eat ASAP!
I had gotten some beets at the farmers market last week and it was finally time to eat them!
Started off with spinach on the bottom.
Quinoa cooked in veggie broth.
Sprinkle of ricotta and fresh cracked pepper.
Delicious combo of protein, veg, fats and grain.
I’m getting my hair did tomorrow after the farmers market. Any suggestions? I am thinking about growing out my bangs a bit and parting my hair further over.
What is your favorite way to eat beets?? I like the golden ones better because they don’t dye every single thing they touch!

Sissy came to us on September 22, 2009 and has been special member of this house even since.

Harvest Time

My first homegrown lettuce, ever!
It was soft and delicate just like it should be. I almost felt bad cutting off the heads and bringing them inside.
Someone was ready to investigate upon my entrance.
She seemed very curious about the leafy green.
Nope, just licking the water off. I did give her a bit to try however. She figured it was a toy for her to bat around.
I cannot wait for my other crops to come in. I can see my baby zucchini and cauliflowers starting to pop out and I have some green peppers that will turn yellow on the stem.
Food you can grow yourself is amazing.
In closing, please pray for the sea life in the Gulf.
