So what does one do with a giant flat of strawberries?

Well I have been eating a lot of them straight from the colander after a good washing.
I have had a few more creative uses as well.
Topping for yogurt with cinnamon and chia seeds.
I also plan to make banana strawberry oatmeal tomorrow morning
But the best thing I have made so far?
Blurry strawberry muffins
Hard to tell the setting when I can’t see the pictures!
At least they tasted good
Strawberry Morning Muffins – makes ~ 18 muffins
- 2 1/2 cups sprouted grain cereal high in fiber. I used the Ezekiel, but you could use anything like grape nuts.
- 1 1/4 cups whole wheat flour
- 1 tbs baking powder
- 1/2 tsp salt
- 1/3 cup sugar
- 2 tbs chia seeds
- 2 cups copped and lightly mashed strawberries
- 1/2 cup skim
- 2 egg whites
- 1/4 unsweetened applesauce
- 1 tbs canola oil
- 1 tsp vanilla
- Pre-heat oven to 400
- Combine dry
- Combine wet
- Mix together
- Bake 15-20 min or until a toothpick comes out dry
These muffins are great toasted with a little extra crunch from the cereal. If you like sweet muffins you will not like these. They are hearty and delicious if you want something sustainable for breakfast.
They also pair nicely with your yogurt and strawberries.
I still have a lot left. Does anyone have any favorites I need to try?

Well hello there!
What have I been up to?
Well Maine was awesome as always. My grandfather really enjoyed his birthday and I just wish I had some pictures
We enjoyed many wonderful dinners and angel food cake!
Best dinner:
Back Bay Gril – beat pasta with goat cheese, pine nuts and basil.
Coolest Place Visited:

Yes, Stonyfield now has cafes! Well actually there seems to be only one in Maine!
My mom and I split a fo-yo with strawberries, blueberries and almonds.

They have a ton of fresh organic food made to order and they even have happy hour!
I really think they should expand the concept! Maybe put one in Maryland near me!
Fun Adventure:
Strawberry picking! It was hot and sweaty, but got a lot of berries! They smell amazing and I have already eaten a ton.
I was excited for fresh fruit!
Next up…cherries!
Cherries are so hard to find organic and they are crazy expensive. They also have blueberries coming out soon that will be ready for picking.
Final Thought:
It grosses me out that strawberries and 2/$5 right now. They taste like nothing and are covered in pesticides! I also feel bad for the pickers, because that was serious hard work and I know they are the ones making less because of the bumper crop.

Well first and foremost we currently have two field mice that have taken a liking to our garden “shed”. Sissy loves them, but I do not. I thought it was just one, but now that there are two I may have to find their nest before there are babies. Sissy would just love it if I would let her outside one night to put her six toes to good work, but I am not that cruel.
Back to the plants.
Everything seems to be growing well except we seem to have some aphids showing up so I am going to need to get some organic spray ASAP.
Highlighted plants…
Cauliflower. I find that these require the most water of all my plants, but they sure have grown!

Yellow sweet pepper flowers. I am excited for these to start growing.
One of three tomatoes. Two plants seem to be going full force while the other lags behind, but I think I maybe have gotten two early tomatoes and one regular.
Zucchini leaves the size of my hand. There are already zucchini blossoms coming out
Finally, last but not least.
One of the most amazing strawberries I have ever tasted! After I read Ashley’s post about organic strawberries I was happy to know where my berries were coming from and what kind of soil it was grown it. My only regret is that I did not buy more plants.
I cannot wait to see what my garden produces. My current issues are mice and aphids. I am more worried about the bugs. I need some lady bugs.

Good Morning!
HAPPY MOTHERS DAY MOMMA BEANS!
It is freezing today! We have frost warnings tonight and tomorrow night. What is going on Maryland?!?! Mom is coming tomorrow for dinner and to celebrate a delayed mom’s day and I wanted the weather to be warm for her. I can’t wait to see her!
Another big event…yesterday was my blog anniversary! Yes, it came and went with no candles and cake, but that is OK. I need to figure out where this little baby is going and what I really want to do with it.
On that note lets get back to the last 24 hours of my life.
Yesterday after breakfast I ran to the farmers market, and then I shoveled compost and snipped seedlings for about 5 hours at a small urban garden in a not so nice part of Baltimore.

When I got back in the car at 12:30, I was hot and hungry.
I had the mini pb and j from my packed lunch to hold me over until I got home.
When I got home I washed a ton of lettuce and then made a nice lunch plate.

Orange, pickles and a wrap with spinach, meatless balls and goat cheese.
Then it was time to get started on a dessert for Mothers Day.
Rhubarb from the farmers market. Sissy wanted to check it out.

I made baby rhubarb upside down cakes with farmers market strawberries and homemade almond macaroons. I am thinking about making brownies and sprinkling these in top. That is if I don’t eat them all first! I think I had about 8 yesterday!
For dinner nick and I went for sushi. It was nice because I was not very hungry from the macaroons so I just got a spicy tuna roll and two pieces of unagi.

The other stuff is Nick’s.
Finally we are caught up to today! I need to leave for the grocery store in a minute so I wanted something with minimal dishes and tasted good.
Enter yogurt and cereal in the yogurt container!
TJs fiber cereal, kashi H2H, strawberries, vanilla almond granola, pb, yogurt and a splash of skim.


Time to bundle up and get out the door! We have to leave in two hours for brunch! Maybe I won’t be making brownies.

Happy Friday! Yet another week has come to a end. Any good weekend plans? N and I have 2 wedding back to back on Saturday and they aren’t in the same town PLUS our roommate is moving in on Sunday. Let’s just say it is going to be a busy weekend! I wish the weather were going to be nicer. At least it is nice today!
I was really pleased with how much oats turned out this morning!
Strawberries and Cream Oats
- 1/3 oat bran
- 1/3 cup whole grain drink, 1/3 cup water
- cinnamon
- pinch salt
- vanilla
- 1 tbs flax
- ~4 strawberries chopped and cooked in
- ~4 strawberries chopped for topping
- 1/3 cup Kefir
- 1 tbs crunchy pb
- (forgotten chia seeds!)
This was a great combo. Banana has nothing on sweet strawberries!
I have to make sure to bring my sweater to work. The AC will be cranked with the nice warm temps. I hate being cold!
Where did the time go? I need to get my butt out the door!

Good afternoon. How are are you doing today?
My day started early this morning with a lovely french toast breakfast.

2 slices of Wegmans bread dipped in egg whites, cinnamon, flax, almond extract and skim.
Topped with dark chocolate pb and grilled banana. I think I actually like my bananas raw better. I like the temp and texture difference from the toast.
Still delicious though!
After breakfast I had to go to the post office and grocery store before coming home and bake!
The star of the show…

A lovely little fig! It was finally time for me to try and make my version of fig newtons.
In the food processor… the bar filling.

I used the same graham cracker recipe as before except I threw in some oats instead of WW flour… this actually made them less doughy and more like batter. It was nice that I didn’t need a rolling pin but it got me worried.
These actually came out better than I expected!
They were crispy on the outside crust and chewy on the inside. I would have liked to have a little more crunch, maybe I can par bake the graham before adding the middle fig? I just don’t want them to burn!
While these were cooking I made an AMAZING egg sandwich for lunch!

I used Ashley’s and Kelsey’s poke an spread method to cook two eggs and put them on a Wegmans bagel with 1/4 avocado, lemon hummus, lettuce and some hard cheese I got at Whole Foods.
I had a bunch of fruit on the side.

All together!

Alright time for me to get ready for the BB&Q festival!
Now if I could only find my date!

Ugh my Live Writer went down after my breakfast post and I had to re-download it tonight. I am just happy that I am not longer getting error messages and lets hope that does not happen again!
Work was a lot of catch up and data entry. Not very brain stimulating.
At least lunch was delicious, but turned out to not be quite enough.

Leftover wheat berries from last night and salad. I also had a large amount of Florida strawberries.

At 3pm I was more than ready to dig into my new snack!
I had heard good things about these bars and when I saw them at Whole Foods I thought I would give then a try.
Unfortunately I did not enjoy this. It was just like a larabar with some chia seeds and peach flavoring. I guess it is my fault for not reading DATES on the ingredient lists. Not going to buy them again, way too expensive for the taste.
After work I really wanted to go running but it was raining so I opted for 30min on the elliptical and a 10min incline walk instead. The TVs were out at the gym so my workout was mainly mental to get through the 40min.
We I got home I arranged my shells from Sanibel.
I put my big cockle in a bowl on the dinning table and put the rest into a vase on our entertainment center aka my faux mantel.
After a shower I got started pizza for meatless Monday dinner!
I used Trader Joe’s WW crust at my base and topped it with aribbatta sauce with a little less cheese, peas, hot peppers and mushrooms.
I love peas! Also good on pizza, who knew!
I also made us two huge spinach salads with carrots, cucs, maters and avocado.
I ended my eating with two more coconut chocolate chip cookies (I also had two when I got home from the gym because I was starving and didn’t want to end up eating an entire pizza myself!)
I think these were better today. Yum!
We just finished killing Sissy aka trimming her nails and now the three of us are hanging out on the couch and I am totally ready to crash. I hope the rain is gone by tomorrow afternoon, I need to run outside!
