I Am Still Trying To Cook!

My hope is to have a photographer, caterer and dress by April 3rd…fingers and toes crossed!!!!
Back to the food!
I usually don’t eat much tofu, but I saw it at Whole Foods this weekend and it sounded good.
I mixed up some olive oil and curry powder then brushed it on thin slices of tofu and coated one side in sesame seeds. Baked at 350 for 45min – I like my fu crunchy!
Along with my curry fu I roasted and entire turnip and a portabella mushroom.![]()

I obviously have a lot of space to fill!

Work went by quickly even though I wanted to be outside. I just kept reminding myself that there was a run waiting for me at home.
My lunch was stellar today!
Leftover baked tofu sami on Wegman’s bread, avocado and spinach.
This sandwich was amazing! Just look at those seeds!
I also had some lovely Florida strawberries along side.
Perfect lunch. I might have to duplicated it for tomorrow.
I had my snack on the fly in the car with NPR.
Look at that sunshine! I was a little worried about this bar because of my last experience, but that on was actually a lot better. There were actually cranberries and raspberries visible in it and not just flavoring. I liked all of the chia seeds in it, but again the dates sort of bothered me. Plus there are 22g of sugar in them! Expensive + 22g sugar + dates = I will not buy these again.
So when I woke up this morning I had a special package on the counter, but I wanted to wait for natural light for photos and I knew the second I opened it, I would want to use it!
My food processor from Nick finally got here!!!! Cute note right? Love him!
Sissy and I were stoked!
She was actually more excited that I got more bird food for the feeder, hence her gaze towards the window.
Before opening I wanted to get in a nice little run in the sun!
I did a nice little 3.5miles and even though my legs felt heavy I finished a minute faster then any of my runs 2 weeks ago. I will chalk it up to the nice weather. So many trees were blooming and the daffodils were so pretty! the second I got back into the apartment it was time to open her up and start making dinner!

What is in there?
Well given that it is Passover I made a totally different version of my favorite Jewish dish, latkes.
Sweet Potato Latkes – makes 8
- 1 large sweet potato
- 2 carrots
- 1/2 onion
- 1 clove garlic
- ~1tsp thyme
- salt & pepper
- 2 tbs whole wheat flour
- 2 eggs
- Grate the potato, onion, garlic and carrots
- Dump grated veggies into a large bowl and combine with other ingredients
- Grease baking sheet well! (I did not do this well and missed out on a lot of the cruchies)
- Heat over to 375
- form 8 patties out of mixture and place on greased sheet
- bake 20min
- Flip
- bake another 20min
The only differences I might make would be to replace and egg with flax and remember to grease my pan! I really liked the flavor!
I topped mine with a little goat cheese. Yum!
Along with my latkes I had sautéed kale with onion, garlic and balsamic vinegar and a couple baby portabello mushrooms.
I love kale and Nick loves balsamic vinegar, so we compromise.
All together. This meal was great!
Another reason I love Wegmans besides their bread?
Their meat. What other grocery store (Besides Whole Foods) has store brand grass feed organic beef? I grilled this little baby up for Nick’s dinner.
After dinner Nick and I went for a little walk around the neighborhood. It was too nice to be inside! I am hoping we can do this more often during the week.
I brought along 2 coconut chocolate chip cookies.
They were gone before we were even out the door

A Wonderful Product!

Well actually first Nick and I are sort of in a wedding pickle, but we think we have figured it out. Have you ever been to an afternoon wedding then an evening one in different towns? Well on April 17th, 2010 Nick and I will be doing the double bride shot!
Another piece of mail I got was a really nice note from the people of Adora and some samples!
I didn’t realize it was such a small company in Connecticut!!!! Adora is offering LilyBeans readers $4 off at the checkout when you use the code “afriend”. If you are a woman and love chocolate you should seriously look into ordering these. I am telling you they taste much better than those giant white chalk pills.
Before I could get home to my presents I had to get through a day of EPA auditing, yuck!
My lunch was interrupted way too many times.
Oikos containers make great salad bowls. I had my leftover tofacos, potatoes, lettuce, black bean salsa, avocado and cilantro.![]()
I also had some orange items in my lunch. Carrots for my eyes and clems to ward off any sickness. I have also been downing water and Emercen-C like it is my job! I heart my immune system! Knock on wood, but I am so impressed that Nick is dying and I just have some sinus pressure. I attribute 90% of this to my diet and sleep.
My afternoon consisted of error checking, blah.
I came come to a lovely snack that I thought up on my car ride home!
Small piece of bread with DCPB from Peanut Butter and Co and some Sunland banana chip PB (Ah I just Googled Sunland it reported it as a recall! Only the regular 5lb tubs). Perfect snack!
It was pizza night in our household!
I used Giant’s whole wheat crust to make a thin crust pizza spread out over a large cookie sheet. I topped it with marinated Portobello mushrooms, artichoke hearts, and feta. I marinated the mushrooms and artichokes in balsamic, EVOO, red pepper flakes, S&P, and garlic powder.
My crust was a little burned but nice a crispy! I really liked these topping but I forgot Nick does not like artichoke hearts
He ate it anyway, but I guess that means I am stuck with the other 1/2 of the pizza! I went back for one more slice after these three.
On the side I had a huge salad of mixed greens, celery, mater s and carrots. Nick said he was turning into a bunny while eating this giant plate of green.
I had a milk chocolate Adora for dessert (I had never had a milk chocolate one and it was great, I wouldn’t expect anything less!). Sissy and I are currently watching Bones and chillin.
She loves curling up in this blanket. Love my baby!

Seriously More Snow Coming??

They are forecasting another 20in snow storm this weekend! They are saying it is going to be similar to the storm on the 19th of December. Nick and I are going to need some fun snowed in activities! I am thinking about renting Sonic for XBOX. I know lame, but I want to play. The worst part about the snow is that doesn’t look like my mom is going to be able to visit me this weekend
I got into work with no sweat today! The trees were so pretty, but I kept my hands on the wheel today.
I had a lovely vegetarian lunch today!
Sandwich on quinoa bread with an LC wedge, avocado, spinach and hummus. I also had 2 carrots and a quinoa crunch bar.
Looks like cream cheese!
I ended up having my afternoon snack at home and added a blob of DCPB to my apple.
Oh I love you natural light!
Dinner was another new recipe from Ellie Krieger’s So Easy.
Marinated Chicken (and grape skewers) with Garden Lentil Pilaf
I cut out the grapes and skewers
I couldn’t find the Garden Lentil Pilaf, and It is published so no posting! Let’s just say it was good!
I had a mix of tofu and chicken with my lentil salad both marinated in the above mix. I love citrus flavors and this was packed with lemon! P.S. so are the lentils.
I grilled the chicken and tofu on the Griddler while the pilaf cooked on the stove top. I love making new things!
This was delicious and DIFFERENT! I have Ellie’s book!
After a shower and some cleaning up I still wanted something sweet to round out my night. Enter the graham cookie-wich.
This would be a double chocolate organic cookie from Country Choice heated between a sheet of graham crackers. This was so warm and soft! Perfect!
Alright Sissy and I are off to watch Bone and check out some breakfast ideas from Ellie!

100% Maryland

I was one of those kids who saw Twister and instantly wanted to be a meteorologist. I still think weather is pretty cool, but I am not a fan of physics. Why am I talking about this? Bones in on in 15min and I want to watch!
So to recap the day…
My Quinoa held me over pretty well this morning, but I think I need some whole grains or something in there. Maybe you can do a mix of toasted oats and quinoa? Needless to say, I may be having it for breakfast tomorrow.
Lunch was leftovers from last night.
I cooked up some tofu last night with our chicken so I could have lemon tofu for lunch, yum! Fennel, avocado, maters, tofu.
I also had some Kashi crackers for some grains.
I didn’t get hungry until I was in the parking lot of my work and then I dove into my clems and seltzer.
Before heading home I stopped by the tag and title place to get my MD plates, registration and title. It seriously took me 10min and I was out the door. It really was worth the extra cost to skip having to take a day off work and waiting at the MVA for over 3 hours. Seriously though MD is notorious for having really bad service at the MVAs.
I replaced my plates when I got home.

As you can see this plate has been through a lot with me (and my mom!). I was on our old toyota camery, which we loved and both almost cried when we traded him (Yoda) in for Ayche (my CRV). I am officially 100% Maryland property.
After freezing my hand off trying to screw on rusty screw I started cutting veggies for dinner.
I roasted up everything we had and made some WF mac and cheese. It was an easy dinner night, plus Nick loves Mac and Cheese.
I had 3/4 of a serving because 1 serving = 380cal?!?! It was enough to get the good white cheddar flavor, but not too much to be stuffed. Along side we had roasted brussels, yams (I tried to make chips but some burned and others did not get crispy), carrots, parsnips and mushrooms. Does anyone know if a good roasted veggie dip? I am thinking balsamic and mustard of some sort.
I am thinking of trying this protein cookie dough with an Adora disk for dessert. Until then it’s Bones time!
Three Cheers for tomorrow being Friday! It should be a busy day at work and I hope it goes by quickly!

Well the most important think that has happened in the last 24 hours is that the RAVENS beat the Patriots in the Wildcard playoffs for the first time ever! This is huge because 1) I can rub it in the 2 Pat’s fan in my office face (along with one Stealer) and 2) We have never beat them! Both my mom and my Grandparents called me to say they watched the game. Thanks for the support guys!
OK so backing up…last night’s dinner was simple, delicious and easy! It took me about 10min to create.
Sweet potato, tofu, onions and peas in curry sauce.
First I mircowed the sweet p for 5 min until tender. While this was cooking I sautéed 1/2 and onion in a large pan. Once the onions started to brown I added about a cup of frozen peas and then the pre-cubed tofu. As this cooked I chopped the sweet potato and then added it to the mix. All topped with some red curry sauce from TJs and simmered for 2min before serving.
Ta Da!
For dessert I had 2 chocolates before heading downtown for a friends b-day.
Nick and I stopped by the pub dog and I had two boxers (black dog and blueberry dog mixed). They brew all their own beer hence the dog names in the beer.
I wish we could have stayed here all night but alas we were off to out next stop and then home to bed!
This morning I had a delicious french toaster.
2 pieces multigran bread soaked in; 1 egg, flax, skim, cinnamon, nutmeg and almond extract. I topped it with a little almond butter, POM arils, banana and a little maple syrup.
Yummy in my tummy!
After breakfast Nick and I watched Revolutionary Road before cleaning up for company. I made some chips and guac for the boys and nibbled on some throughout the game. I was told that is was the best guac they had ever had! I love when people tell me that! I honestly can’t give a recipe because it is all by taste with every ingredient besides the avocado.
Snacking didn’t leave me hungry for a very big lunch so I had a lovely bowl of yogurt, vanilla almond crunch granola and POM aril.
I added more granola about 1/2 way through. That stuff tastes amazing!
The Ravens game was a nail biter at certain points but we were leading from the beginning. I am just hoping that Flacco can through next week against Payton Manning.
After the game I did my hip adductor stretches some core work and push ups. I have only been doing these exercises for 2 days, but I can already feel it in my inner quad. Tomorrow I am taking it to the gym so I can use some weights and test out some cardio. I am also going to stop by Charm City Runs to get some Spensco foot supports and I am ordering 2 knee sleeves offline, which are supposed to work better than the tape.
Nick and I both agreed that due to our snackie afternoon we wanted something light for dinner. I baked up a butternut squash and made a large salad.
The salad was just mixed greens, celery, maters, carrots, sun dried tomatoes and feta.
I ate the skin on the butternut, so much easier than peeling it!
Sissy and I are going to go read more Pollan and the head to bed (She is currently sitting behind my head)

Patellafemoral What?

First thing first, knee update!
Ray came over after his football game with Nick this morning and gave me a few knee tests to try and figure out what is causing my pain. He concluded that it is patellofemoral pain syndrome or “runner’s knee”. Long story short I have extremely weak hip adductors and it is causing my knee to turn in when I run and therefore my tendon is rubbing against my knee cap in a not so nice way. He gave me some strengthening exercises to do at the gym(!!!) and home and told me know running for another 1.5 weeks. He did say that I could do the elliptical or other machines as long as my pain does not increase. He also taught me a way to tape my knee so that it is pulled away from the tendon and not longer rubbing. Woohoo nothing serious, but another week and a half, guff!
And now back to the food.
Last night Nick and I went to see Avatar so I didn’t have time to post. The graphics in the movie were amazing, but the plot line was pretty simple. Overall it was a good movie and I am glad we went.
Before leaving I had a trio plate.
Tofu baked with honey, EVOO, chili powder and baked brussels with mustard.
Mama Bean’s white bean salad! I know this is a summer salad, but I had a can of beans I wanted to use and I love this oh so simple recipe.
Summer White Beans Salad:
- 1 can white beans rinsed and drained
- 1 garlic clove pressed
- ~1 tbs Olive Oil
- juice of 1 lemon
- S&P
- ton of fresh basil
Mix all but beans and basil and then add beans and basil to dressing. Allow to soak at least a few hours.
For dessert I had a small piece of peppermint bark.
This morning I finally filled my craving for pancakes!
I used 1/2 cup of the Arrowhead Mill whole wheat pancake mix + 2 tbs flax + 1 tsp chia seeds, 1/2 cup skim. I added the POM arils once the cakes were on the griddler.
I topped each of my silver dollar POM pancakes with pb and dipped them is real maple syrup. Don’t see a fork? That is because I made this finger food! The best
After breakfast I headed out to the grocery store, Boarder and Rite Aid (post Ray visit).
I got two books from a gift card that is am excited about one a little bit more than the other!
Michael Pollan’s new book, that I am figuring will take me the afternoon to read, and a simple vegetarian cookbook. Don’t get me wrong I like my tofu cubes and roasted veggies, but I need to mix it up a bit! Especially if I want Nick to eat some of it. I also got some sports tape for taping my knee.
It was about 1:30PM when I got home from all of this and my stomach was growling! I wanted to use the griddle to make a wrap and things grew from there.
WW wrap with tempeh, LC wedge, sundried tomoato Sabra hummus, Franks and greens. I also had the rest of Mama Bean’s white bean salad and an pictured orange.
The wrap was not as good as I was hoping…I think it needed some cheese!
It is playoff week one this weekend, and I hope you are still cheering for the Ravens! I know Sissy is!
You like her collar? It was a present from Grandma Joanne, and I think she loves it
p.s. she was looking for her baby under there, hence the weird position.
Alright I am off to read my new book/ watch the Duke game! I haven’t really been watching this year, but things are getting more serious and I need to get on that!

Last Full Day

I feel like I just got here!
This morning mom had to head off to work so I went and tried out the new Greenwich Yoga at the Greenwich Water Club.
Before I left I had a piece of 12 grain with almond butter and a clem.

I did an hour fifteen min hot yoga class (much different from Bikram) that was a nice class, but I was not impressed with the space. It wasn’t very peaceful due to the other regular gym classes going on in the nearby studios. Their regular studio is much more in tune with the zen feeling of a yoga studio…I just wish it weren’t 20min farther away.
We I returned I had my second breakfast.
Plain yogurt, clem, CHIA SEEDS!!! slice of my cranberry orange bread. I’m really glad my bread turned out well! It is so hearty with the Kashi nuggets and oats in it!
I chilled with Sissy for a few hours until mom came home around 1pm and we made lunchie.
Salad of spinach, turkey, cauliflower, fennel, brussels and gorgonzola cheese.
I also had the end of my mom’s homemade lentil soup with 3 blend cheese.
After lunch we headed out for a few errands around town and then made a fire before starting on dinner.
I made my mom a veggie filled dinner of kale, tofu and leftover sweet potatoes and cauliflower.
I marinated the tofu in honey, orange juice S&P and EVOO. The kale had onions and mushrooms mixed in.
And for dessert! Another 1/2 of a gingerbread mini cake.
Almost time for bed! Better go spend the last few min with momma that I can!
