Lots Of Beans Today!

30min until Biggest Loser!  Until then Sissy and I have been watching Dog Whisperer.  Cesar is amazing with animals, but I am glad cats do not have as many issues.  Ha, now that I think about it my mom’s cat needs Cesar to come and figure out what is up with her.

Work came and went without too many surprises given that we had the long weekend.

Before I knew it, it was lunch time!

I broke food rule #3 today with my vitamuffin.  I am not that worried about it, there are many more things that I could eat that are worse.  Also rule #64, which we still have a ways to get to addresses situations like this with “rule breaking”.

Along with my corn muffin top (these do not taste like corn muffins and they have way too much sugar for their own good) I had a lovely salad and plain Stoneyfield with blackberries.  These berries were on sale this week at Giant, and I just couldn’t resist.  I have been trying to only buy in season produce, but there are only so many apples and pears I can take before I need to switch it up.  I will not be dabbling in the strawberries, peaches or nectarines – they look nasty.

After work I headed to the gym and biked for 45min without pain in my knee, did some PT strength moves and core work.  Unfortunately my knee is killing me now and I am currently icing it.  I can’t wait to get to the bottom of this tomorrow, or at least take the first step!

At least my dinner was delicious!

leftover white bean burger – 1/2 cup white beans, Wocestershire sauce, tomato paste, thyme, S&P – mashed.  I grilled it on the griddler, but my burgers do not like to stay together on there…I think I need to treat them more like a pancake and flip rather than press.  They are too delicate!

007 I melted a piece of swiss on an Ezekiel english muffin with mustard, the totally topped with black bean salsa.

008 I like big burgers!  I think next time I will omit the salsa, it sort of dominated the flavor of the burger.  I did sample the bean mix while mixing and really liked it.  Some times plain is just better.

Along with my burger I had some kale chips with ketchup!009 For my sweet end I had my last square of Newman’s Own Orange Dark Chocolate.

Polenta Pizza

This afternoon I finished getting the house is spick and span.  I re-covered our burners to prevent any baked on grossness and hardcore cleaned the bathrooms.

Then Nick and I went to Borders to browse through the collections.  I went for the sociology and cook books while Nick went for the sports.  I also checked out a book on the Islands of Greece.  I would love to be able to go to Santorini one day.  It just looks like such a beautiful peaceful place.

After window shopping we came home to make dinner!

I found a recipe in the Real Simple cook book for polenta deep dish pizza and thought it sounded like an interesting idea.  I followed the crust directions, but came up with my own toppings.

007 1/2 with an Italian sausage for Nick and the other 1/2 with white beans for me.  We both had a small amount of tomato sauce, kalamata olives and grated parm cheese. 008

I liked this crust, but I think I will cook it alone for 10min to make it crisp up a bit.

I also had a spinach salad with tomatoes and avocado.

For my sweet end I had a vitamuffin chocolate top.011

Nick just turned on an episode of The Wire and I think  I am going to go join him.

Back to work tomorrow, blah.  4 day work weeks are better than 5 though!

Last Day of 2009!

Happy last day of 2009!  Nick and I are heading into the city in a little bit to check into our B&B before heading to dinner and then a party in the city.

For breakfast I had a bout 4 boxes of cereal I needed to use up before the new year :)

TJs fruit and fiber medley, shredded wheat, Uncle Sam and Kashi H2H with banana, chia seeds and a little pb.

002 Like the new bowl?  I do!  Crate and Barrel sale baby!  Same place I got the spoons with Mom.

I had planned to go to the gym after breakfast, but the roads are icy and my knee is still feeling off.  I consulted with my doctor (Katherine) and she said I should take the day off.  It is really hard for me considering the holidays and training for a 1/2, but I know I just need to keep myself in check a little bit more and I will be ok.  easier said than done when there will be tons on temptations tonight!

Instead of the gym I cleaned and did laundry.

I broke around 1 pm for some lunch.

003 Leftover chili with added corn and green beans, Vitamuffin corn top, adora disk and a small chunk of peppermint bark.  The chili was great, but the muffin didn’t really taste like corn bread, no grit to it.

I love this bark.  I sent some with Nick into the office so I don’t eat all of it!

I am planning on getting Thai or Sushi for dinner filled with veggies and tofu to fill me up before the dangerous spread that will be presented.  I might stick to champagne tonight, but we shall see.

OK I am off to pack for our stay-cation! I hear the breakfast is amazing at this place…I can’t wait!

The Heat Is On

Woof, I am not a fan of winter.  We turned our heat on for the first time of the season tonight because it was reading 60 and I really don’t function well below 68.  I am a baby, but if I am cold I am not a happy person to be around.  This being said, Nick agreed to turn on the heat ;)

My office on the other hand is nice and toasty and I really enjoy it while other people complain about the heat.

I had my daily prunes around 11 and was still ready for lunch at 12.

004 I liked these veggies with the balsamic.  I am going to have to use it as a marinade soon.

My afternoon went something like, “Yes I finally got all the projects into the system!”…Walk to check the in bin…2 more projects sitting there waiting for me…yuck.

I had another balance bar for my afternoon snack.  Chocolate peanut butter.  Sounds like it should be good right?

005 Wrong.  It tasted like chalk with brown and tan coloring.

006 Oh how I really wanted this to taste like a pb cup.  I ate it anyway because I had no back up and I needed some pre-gym fuel.  So far my balance bar experience has not been a good one.

I made it to the gym a few minutes earlier than usual and decided not to do BodyPump because my butt and lower back were sore in a good way from yoga on Sunday morning.  I did 30min on the elliptical random, 10min incline walk, 10min run, 10min incline walk.  After I did some core and pushups.  Note to self and others: planks are really hard after doing 40 pushups.

I had planned to make the veggie-sizzle burritos for Eat Drink and be Vegan to change up our weekly line up with some new food, but the tortillas I had were just too small to hold any significant amount of filling so we had fajita/burrito/tacos.  Anything mexican is good.

007 I had 2 f/b/t and some extra filling afterwards and some blue chips and black bean salsa.

008 Insides.  Basically, black eyed peas, chili powder, onions, green peppers, portabella mushrooms, cheddar cheese and Oikos plain.  I actually really liked the peppers and mushrooms in these.  We usually don’t have them when we have tacos.

And we can’t forget dessert!

Need to get back to the Ravens, who are struggling right now on Monday night football.  Keep your fingers crossed!

Simple Things.

Day well done!  I hope everyone else had a well delightful Wednesday!

My day wasn’t super exciting, but it was surely successful.  I had a productive day on the lovely Obama Stimulus package.  I was able to get to the gym because my hip flexor was feeling 100% better.  And I had a super delicious dinner.

Simple things can make your day, you know?

Anywho, onto the daily eats.

014 Leftover falafel with spinach, tomato, spinach and yogurt dill sauce.  I also had some carrot sticks and 40 spices hummus.  I also had a delicious clementine for dessert.

013 I usually don’t make sticks from my carrots, but for some reason the extra effort made them more special?  Is that odd?

Are you sick of this combo yet?  Because I am not, but I am out of orange cranberries and will have to go with blueberries or cherries tomorrow…should be interesting.  Please observe the combo of cashew, chocolate and cranberry = wowza!

After work I headed to the gym to take it slow.  I didn’t want to push the flexor too hard even though I hadn’t felt any pain all day.

I ended up sticking to the cross training machines.  30min random elliptical and 30min manual speed on the ArcTrainer.  Nothing hurt!  Simple things!  I am did quick arms between the two sets of cardio and then core work at the end.

Dinner was delicious!

Nick had dinner with his mom so I was on my own to make something delicious and not Nick approved!

017 Carnival squash rings, lentils, leftover taco black beans, goat cheese and cranberry apple chutney.  I liked the taco spice with the sweet chutney.  I also had a piece of 12 train with smart balance.

018 Great combo and I have some squishy squash leftover with lentils and goat cheese for lunch tomorrow, yes!  Simple Things.

I think I will now go have a vitamuffin with almond butter.  Simple Things.

Sidewalks Wanted

Ugh our neighbors are having some sort of dance party on a week night, what?

Anyway…

Another Monday bites the dust!  It was a pretty uneventful day around here except the sun was shining for the first time in almost a week!  I was so excited to run outside this afternoon!  But first I had to get through the day!

My oat bran held me over well and I had my snack of 1/4 of my giant honey crisp.  I still have 1/2 the apple left!

Then don’t ya know it was lunch time!

013 Kind of ugly eats, but tasted oh so good!  Leftover wild rice soup and cantaloupe with bear naked granola.

Tick, tick, tick…yep it’s Monday…

I had few snacks to get me home.

015 Mini Cashew cookie Larabar and seltzer.  I actually liked this bar, but it was so greasy and I could make one on my own.  I keep saying it but I need to get back on the homemade Larabar bus ASAP, and where are my oat rounds???

My next snack was a small square of pumpkin chocolate chip bar that I brought in for the office.  People really seemed to enjoy them!

016 And before heading out the door I grabbed a few almonds.

017 Now my run…I decided I was going on a long one!  I mapped it out and was set for an 8 miler.  Around mile 4 I realized that I would be running a lot of hills with no sidewalks!  It was a bit scary coming around those corners.  I think MapMyRun should have a sidewalk button!  Lets just say I won’t be running that route again!  People need to slow down…there was so much road kill to avoid.  Yuck!

At least I had a delicious dinner planned!

Chicken breast with pesto, lemon and EVOO baked.  I also threw in some southern greens in lemon and seasoning salts with some maters for 10min.  Lastly I had 1/2 of a WW bulky roll with goat cheese.  Nick was no a fan of the greens, they are a bit bitter, but that means leftovers for my lunch.  He said it was the tomatoes.  He doesn’t like warm tomatoes? Ya I don’t know.

Now I am watching Unwrapped fall flavors, there is some nasty stuff being massed produced!  I am also enjoying a lovely vitabrownie!

Chocolate Day!

Monday seems to be flying by.  Love that!

In the news today, Rachel Alexander (horse that won the Preakness) beat the boys again!  I love a good filly win!  Cash for Clunkers is out of money 27 days faster then they predicted.  And, closest to my cause, the world’s fish population won’t be gone by 2048 as predicted if we stop overfishing NOW!  I remember when this original story came out, total shock!  Buy sustainable fish!

Anyway, onto my delicious lunch!

I had a bangin lunch today full of special treats!  I had a salad with leftover tabbouleh salad, cucumber melon (which is a melon that tastes like a cucumber) 211 and carrots.  I also had 1/4 apple, 1 white nectarine and a few strawberries.  Why so much fruit?? Only to dip it into my favorite mocha yogurt!!!!  I as had a extra super special treat that my mom brought me from the town of my high school, Kent CT!  A marzipan truffle!!!!

Training update!

  • Katherine and Liz have a 6 mile run planned for this afternoon!
  • Jen finally got back on the road after getting and awesome score on her GREs!!! She did 7miles yesterday…told you she could run!
  • Yesterday evening I did 5 miles with hills is 42min.  I had to double check on google earth to make sure my mileage was correct…that is super fast for me!

Afternoon snack was a NEW oat bar!  Orange Cranberry, Pecan and Carob Chip!  They are a winner!  I got the orange cranberries from TJs and they just remind me of an orange cran pecan bread I used to eat at thanksgiving time.

I also love that these have ZERO added sugar except for the bit in the cranberries.  I really prefer making my own bars as opposed to regular granola bars that have so much added sugar!

Today was cross training day aka spin class.  Monday spin is the hardest day they offer at my gym, and I don’t know if my muscles were tired from my run yesterday or it was just really hard, but today’s class kicked my butt!  I had such a hard time with all of the sprints, ugh.  I am so happy tomorrow is yoga and stretch day.  I may have to re-evaluate my spin cross day once I am running 10miles the day before.

On the way home from the gym there were 4 french bull dogs out for a walk…sooo cute and put me in such a good mood!

After a quick shower I tried something new…soba noodles!  I mixed about 1/4 block of tofu with garlic, ginger, onion a small amount of soy sauce and lime juice.  While this simmered I added a patty pan, tomatoes and a 1/2 of avocado when finished.  I topped about 1oz of soba noodles, which I cooked to the package specifications.

008This was pretty delicious!  Maybe soaked in the juices over night as a cold salad it would be extra delicious!  For a nice treat I had a Vitamuffin Pom chocolate brownie and an adora disk…chocolate! Yum! :)

Pizza and Soup!

My flax to the max toast kept me full for hours, as it should have!

Slow moving morning definitely turned into a “where did the day go?” afternoon.

I had a meeting at 1pm so I made sure to head to the break room when the lunch bell rang at 12.  I enjoyed an over stuffed wrap with FM lettuce, spinach, carrot, black beans & lentil mix, LC wedge and cucumbers.  I had to keep it in the foil Chipotle style just to keep it from falling apart!

I also had some plain (non Greek, another reason I don’t like Safeway) organic Horizon yogurt with sliced white peach.  I am still sticking to my not buying servings of yogurt to save some $$ and honestly how can you beat homemade peach yogurt???  I just mashed a few of the slices to get the peach color and flavor throughout.  I ate the other half of the peach as is and a bit of my apple.

Big News!  We entered our first stimulus grant into the system today!!! One down, 97 to go.  It only took 3 hours…it should start to move much smoother in the future, I hope.  Here’s to getting out of the recession!

After my meeting ended at 4pm I wasn’t really that hungry but knew I needed to eat or I would be starving at the gym.  I had a PB&Co Cinnamon Swirl Oat bar and a lime seltzer. – Side note, Nick has really started to like these :) )

Ugh the stepmill was short firing during my warm up climb, so frustrating!  I ended up just getting off after re-setting it about 10 times.  I also did Tuesday rpm spinnnnn.  Not as hard as Monday, but still makes me sweat.  I also did arms and core and usual.

After seeing Caitlin’s flat out pizza today I really, really wanted one!  I decided on white pizza.  I used to love this garlicky goodness in college and I wanted to make a healthier version!

For the white sauce – 1/2 cup part-skim ricotta, sprinkle parm, clove of pressed garlic, parsley, basil, S&P, very small amount of EVOO.

IMG_4193I set the timer for 15min to cook this and got together somethings to make a soup out of the still remaining black beans and lentils.

  • Onion and garlic sauteed in EVOO S&P
  • 1 can of no salt added dieced tomatoes
  • 2 pouches of tjs low sodium chicken broth
  • 1 cup h20
  • 1 baby eggplant
  • mix of black beans and lentils
  • 2 cups spinach
  • thyme
  • oregano

Yummy lunch for tomorrow!

Ding!  Back to the pizza!
