Dry Rub Catfish

I have always known catfish to be southern and fried, but I also know there are a ton of them swimming in the rivers of North America. I consulted with my fish expert Jess, and she said that catfish was a good choice when looking for a fish species to feel good about eating in terms of sustainability.
My former fish market boss said the best way to cook catfish is blackened. I just made Emily’s blackened tofu last week so I thought I would go with about the same spice mix but bake it on high heat until it started to crisp.
I mixed together garlic powder, cayenne, celery seed, paprika, salt, pepper, coriander, and oregano, then coated my fish before baking it at 425 for 17min.
It was good but I think I like trout better. Something about it was just off. I’m not really sure what? Maybe it does need a good sear in some oil.
Along with the catfish I cooked up a wheat berry salad with baby kale, onion, garlic, beets and smoked paprika.![]()
The sweet onions were a good compliment to the slightly bitter kale.
I will give catfish one more try, but given a choice I would pick another sustainable fish. Next up, mussels!

Coconut Aminos

Try Coconut Aminos!
I found out about this stuff at a raw dinner Nick and I attended and I thought I would give it a try. It is just coconut sap with added sea salt. It costs about $5 for a bottle which I believe is more than regular soy sauce but I think your blood pressure will thank you.
I used the coconut aminos in a lovely lentil wheatberry bowl with summer squash and zucchini.
I also mixed in some carrots, onions, basil and parsley.
The verdict? Delicious! I loved how the squash absorbed the flavor and I didn’t feel like I was eating a salt block as I do with soy sauce.
A final wedding note – I was very giddy to find this milk bottle yesterday!

Hot Day, Cold Start

Today is the last day of nice weather out there before we head back into the seasonable 60s. I am picking up my bike today and thankfully It only needed about $100 worth of work. This will give me time to save and search for the perfect road bike while still being able to get in a few rides!
I am saving oatmeal for tomorrow’s cold weather so I stuck with Oikos and cereal this morning.
- ~1/2 a cup of Oikos
- 1/3 cup TJs high fiber
- 1/3 cup Kashi H2H
- 1/3 cup Uncle Sam
- 1 cup frozen tropical fruit zapped for 1 min
- few wheat berries
- sprinkle of chia seeds
Lovely side view.
Mangos are so sweet! I always forget that! This was a really refreshing start to my morning and now I need to get moving! I am hoping to get a bike ride in today but we will see what the day brings.

It was really hard for me to get up with my alarm at 5:30AM this morning. It is rainy and foggy, but Sissy would never let me miss her feeding!
There are already two accidents on my road to work so I am going to try and get out the door a little early.
Return to oat bran!
Some things were old, others were new.
- 1/3 cup oat bran
- 1/3 cup water, skim, Kefir
- cinnamon
- vanilla
- 1/2 banana
- 1 tbs wheat berries
- 1 tsp chia seeds
- few bits of nuts over chocolate and raspberries trail mix
- honey cinnamon pb from Sanibel!!!
No that is not poo in my oats, it is chocolate covered almonds! At first I was mad that all the chocolate in this trail mix had melted, but now I kind of like it this way. You are guaranteed some of the good stuff in every bite!
Side note: Did you know that golf clubs do not fly free on Southwest?

Something New to Chew On

I had been looking for this book in a ton of bookstores to read a few pages, but no one carried it. I got the brilliant idea yesterday to look it up on the Baltimore County Public Library database. There is was, in another library and it was delivered to my local branch within 24hrs. I think this system is so awesome! Technology I tell ya.
My doughy oats held me wonderfully for 5.5 hours! It was then time for a delicious lunch. Leftover pizza!
Incoming!
Along with my pizza I had a Minneola orange.
The little nub on the top pops right off so you have a place to start peeling. It didn’t really taste anything special unfortunately.
I finally remembered to bring my pre-gym snack to work, and it was a good one!
Honey Graham Zbar. I want to try my hand at making these on my own. I love graham and it seems like all you need is oats, oat flour and flax…well maybe a few more things but I want to try!
I had another great workout at the gym! my knee did not hurt, nor does it now. I am icing just to be on the safe side.

I also did a little arms and core work before hitting up the library.
I came home to make a smashing dinner. Two thumbs up from Nick too!
Chicken Fingers with Wheat Berry Salad
I took two Nature’s Promise organic chicken breasts and sliced them. Then dunked them in a mix of egg whites and Kefir then into a complex mix of almond meal, flax, lemon herb spices, allspice, S&P. I then baked them at 375 for 15min.
I dunked the little suckers in a mix of honey mustard and soy sauce – it was actually a really delicious combo.
In the wheat berry salad I mixed; wheat berries, sautéed onions, white wine, asparagus and tomatoes. I topped it off with a little cheddar and S&P.
The only thing I would change would be to maybe use a blue cheese or feta? Something with a little more bite. I couldn’t really taste the cheddar.
Awesome dinner!
Time to go read, snuggle with Sissy and drink some green tea!
She is ready!

Good Eats

I am rushing around trying to get packed, Sissy all set up (she will be alone on Thursday and Nick will be home with her on Friday), do laundry and try and clean up the place a bit. I hate coming home to a dirty house!
As for the eats of the day…
Morning snack was the other 1/2 of my apple from breakfast.
Yes, I took a bite before the picture, or maybe someone took a bite out of it while it was in the break room fridge??? How many people bring reusable lunch boxes to your work? It is embarrassing how many people bring plastic bags to a place dedicated to the environment. I guess this shows that the place may be environmental, but that doesn’t mean the people are.
And my lunch? Well it was a bunch of all different sorts of things. I am trying to use things up before I leave.
All of my Tupperware to combat all of the plastic bags at the office.
Brown Cow greek and the remainder of the pom arils, peanut butter and celery sticks.
Leftover buttercup squash mouth.
Lots of crunch and ubber filling.
We had our usual Friday crisis. How do they know we are off for 3 days?!?!?! Those Fates are tricky!
I slowly made my way through my PM snack for the last hour of work.
Clementine, shredded wheat, mixed nuts.
After work I went to the gym for a quick workout so I could be home to say good bye to Nick! I did 25 min of the hill and then 30min of negative splits.
Dinner?!?! What to make????
Tofu. Roasted Veggies. Wheat berries. Check, check and check!
Tofu mixed in maple syrup, EVOO, salt, allspice, cinnamon, nutmeg.
Wheat berries cooked normally with a little goat cheese mixed in.
Roasted onion, broccoli, mushrooms and carrots in EVOO, oregano and S&P.
Wow, I did not realized how full this would make me feel! I also must admit I had a few (yes really only a few) Kashi crackers while I was waiting for my food to cook.
OK it is time to get crackin’! Biggest Loser is on in the background I have some on MamaPea’s maple chick peas to take out of the oven!

Chocolate for Breakfast

Now they are saying some shots were not administered correctly and some may not be fully protected?!??!! This is just going to cause a greater panic!

I thought my oat bran was missing something this morning so I added a few chocolate chips!
Chocolate, banana and almond butter? Amazing combination! I shouldn’t have mixed in all the chips though
They kind of got lost in the banana.

Hello Monday

So I just realized that I forgot to wrap up yesterday! Whoops.
It was basically a whole lot of too much snacking throughout the day.
#1 Pumpkin Chocolate Chip bars – the extras are going with me to the office to hangout by the coffee machine.
These were really moist and delicious and had more than once piece.

Southern greens from TJs lime juice and Lawery’s season salt.

A 1/4 of this giant honeycrisp apple in Cinnamon Raisin Swirl. + 2 finger dips.
Snack #5 – could call this dinner.
Homemade wild rice soup. Simple, easy, warm and delicious.

So enough snacks, finally onto breakfast!
When I was in TJs yesterday I was the one who grabbed the last 2 jars of pumpkin butter! Yep, I have no shame. I went all the way there because I knew it was back. I had to stock up!
It went into my breakfast! 1/4 cup oat bran, 1/4 cup h20, 1/4 cup milk, spoon of pumpkin butter, spoon of almond butter and a sprinkle of wheat berries.
I can’t wait to run outside this afternoon! It is finally not raining!!!! Woohoo!
It Is Cold Around These Parts!

Day two of break up breakfast so far is a success. I nuked an apple with cinnamon, 2 tbs wheat berries and unsweetened coconut flakes.
This was my first breakfast with coconut and I really enjoyed it. I didn’t miss the sweet version either!
I have a mini WW bagel with almond butter for my 2nd breakfast…or as Katherine likes to call it my “snack”
Sicily update!!! She seems to be solidifying!!!! Fingers crossed that it continues!!!!
We have kickball tonight and are supposed to do Roly Poly for dinner, but it is supposed to rain until Monday so I am guessing that will be canceled
Boo I was really looking forward to melted brie cheese!
It seems to be spa week around these parts…I might need something for my feeties!
