Maple Pumpkin Pecan Cakes

Who doesn’t love a cupcake?  Who doesn’t love a cupcake that has been made healthy without sacrificing flavor?

When I found out about The Stonyfield Oikos Ohm all expenses trip to Kripalu Center for Yoga & Health in Lenox, MA I knew exactly what I wanted to make!

I made an upside down plum cake from Real Simple back in the summer and I had used Oikos Greek yogurt instead of sour cream.  I wanted to re-do the recipe and make it fall inspired!

This is what I came up with!

020 Maple Pumpkin Pecan Cakes

Ingredients

Cakes:

2/3 cup sugar

1 cup all purpose flour

3/4 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

1 large egg

2/3 cup Oikos Greek Yogurt

1 tsp vanilla

1/4 cup unsweetened apple sauce

1/4 cup butter (1/2 stick)

Icing:

1 tbs pumpkin butter

1 tbs pumpkin puree

1 tbs maple syrup

pecan pieces to sprinkle

Directions: Heat over to 350 and either line or place liners in a 12 cupcake pan (can also fit an 8in cake pan).  In a small bowl whisk together the flour, baking powder, baking soda and salt.  With an electric mixer beat the butter, apple sauce and sugar until fluffy.  Beat in the egg, Oikos yogurt and vanilla.  Gradually add in the flour mixture until combined.

Pour batter equally between the cups and bake for 20-22min or until an inserted toothpick is dry.

I brought these to a house warming party and they were greatly enjoyed.  Not overly sweet with a unique moist cake texture.
