Great Day of Eats!

Oh what glorious weather we had today, and tomorrow is only supposed to get better!

Work went by quickly even though I wanted to be outside.  I just kept reminding myself that there was a run waiting for me at home.

My lunch was stellar today!

005 Leftover baked tofu sami on Wegman’s bread, avocado and spinach.006 This sandwich was amazing!  Just look at those seeds!

I also had some lovely Florida strawberries along side.

007 Perfect lunch.  I might have to duplicated it for tomorrow.

I had my snack on the fly in the car with NPR.

008 Look at that sunshine!  I was a little worried about this bar because of my last experience, but that on was actually a lot better.  There were actually cranberries and raspberries visible in it and not just flavoring.  I liked all of the chia seeds in it, but again the dates sort of bothered me.  Plus there are 22g of sugar in them!  Expensive + 22g sugar + dates = I will not buy these again.

So when I woke up this morning I had a special package on the counter, but I wanted to wait for natural light for photos and I knew the second I opened it, I would want to use it!

My food processor from Nick finally got here!!!!  Cute note right?  Love him!

Sissy and I were stoked!

She was actually more excited that I got more bird food for the feeder, hence her gaze towards the window.

Before opening I wanted to get in a nice little run in the sun!

I did a nice little 3.5miles and even though my legs felt heavy I finished a minute faster then any of my runs 2 weeks ago.  I will chalk it up to the nice weather.  So many trees were blooming and the daffodils were so pretty!  the second I got back into the apartment it was time to open her up and start making dinner!

What is in there?

Well given that it is Passover I made a totally different version of my favorite Jewish dish, latkes.

Sweet Potato Latkes – makes 8

  • 1 large sweet potato
  • 2 carrots
  • 1/2 onion
  • 1 clove garlic
  • ~1tsp thyme
  • salt & pepper
  • 2 tbs whole wheat flour
  • 2 eggs

  1. Grate the potato, onion, garlic and carrots
  2. Dump grated veggies into a large bowl and combine with other ingredients
  3. Grease baking sheet well! (I did not do this well and missed out on a lot of the cruchies)
  4. Heat over to 375
  5. form 8 patties out of mixture and place on greased sheet
  6. bake 20min
  7. Flip
  8. bake another 20min

013 The only differences I might make would be to replace and egg with flax and remember to grease my pan!  I really liked the flavor!016 I topped mine with a little goat cheese. Yum!

Along with my latkes I had sautéed kale with onion, garlic and balsamic vinegar and a couple baby portabello mushrooms.017 018

I love kale and Nick loves balsamic vinegar, so we compromise.

Another reason I love Wegmans besides their bread?

Their meat.  What other grocery store (Besides Whole Foods) has store brand grass feed organic beef?  I grilled this little baby up for Nick’s dinner.

After dinner Nick and I went for a little walk around the neighborhood.  It was too nice to be inside!  I am hoping we can do this more often during the week.

I brought along 2 coconut chocolate chip cookies.

I can’t wait to make more things in the food processor!  What are you favorite things to make?  Pesto, nut butters, dough, graham crackers and crustini are already on my list!

Mango, Tango

Good morning!  How are you doing today?  The rain has finally stopped and the wind is on its way out of here!  I can actually see the sky, which hasn’t happened since Sunday morning.  I cannot wait to run outside today 🙂

i started off my morning with another breakfast that was not oats!  I am planning and OIAJ tomorrow.

As for today, I had eggs in a hole!

001 Made with 4 grain, 5 seed organic multigrain bread for Wegman’s.

Along with my eggs I had a mini cinnamon honey Sanibel pb with champagne mango (!!).

003 I also had more mango and some banana on the side.

004 I hope Nick enjoys the mango surprise in his lunch today!

Question for today seen on the morning news:

Do you think McDonalds should retire Ronald McDonald because he promotes unhealthy eating aimed towards children?

Do You Soy?

Sissy is ready to blog before Biggest Loser.

011 I embossed her to reduce scary animal eyes with flash.

My green monster and bagel held me over really well today.  I also had a ton of work to do so it made the day fly by.  Before I knew it the lunch bell was blowing.

004 Leftover pizza, strawberries and my very last Florida orange.

005 The dough was so chewy and pillowy.  More peas please!

I knew I needed an afternoon snack that would get me through the afternoon better than the fruition bar so I wet with a classic; granola and yogurt mess.

Lots of tupperware for one day!  4 pieces total.  I am not the only tupperware lover out there but Nick hates cleaning it.  A small sacrifice for the planet.

I was still pleasantly full when arrived home.  I had planned to go to the gym today due to the rain and excessive wind, but I just couldn’t do it.  Instead I did 50min of Dave Farmers podcast.  Looooots of chair.  It was the focus of every position.  I could feel the burn.

After yoga I got started on dinner!

I have cut down on my soy intake after doing a lot of research about how it can mess with me, but I still had a block of tofu to use.  I figure every once in awhile is not going to kill me just READ THE INGREDIENTS OF EVERYTHING!  It is sad that you have to check all of the food you eat. Do you still enjoy soy?

Anywho I marinated my tofu block is honey, EVOO, garlic powder, cumin, chili powder, oregano and S&P.

008 Baked at 375 for 40min.  Nice and crispy!

I put four slices of my tofu on spinach, cilantro, corn, salsa and a big dollop of guacamole.

007 I also had a bunch of broken chips dipped in leftover guac.

009 Multiply that by 2!  I cannot help myself around chips and guac, but at least Nick was here to take it a way from me.

I had two delicious cookies for dessert!014 This is a recycled picture to take a second look at how funny my hand looks in this picture.  Weird!

Biggest Loser is really odd tonight and I am not sure I like it.  Where are Bob and Jillian? Challenges?  Trainer Tips?  Come on people stop crying and get back to it!


Greens for Breakfast

Well it is still raining and very windy today.  I cannot wait for 80 on Friday!

Biggest Loser tonight!  I think I finally actually like someone but I will know for sure after tonight.  So far Jillian is the best even if she is a pill pusher.

I really hope to get outside this afternoon, but this rain needs to get out of dodge.

I switched up my breakfast this morning to get in my other 1/2 of my multigrain with flax Wegman’s bagel.

1/2 bagel with Sanibel pb and banana, green monster and coffee.

In my monster:

  • 3/4 banana
  • 2 cups spinach
  • 1/2 cup plian Stonyfield
  • 1 tbs flax
  • 1/2 cup frozen strawberries
  • 1 tsp chia seeds
  • dash of cinnamon

Do You Meatless Monday?

Ugh my Live Writer went down after my breakfast post and I had to re-download it tonight.  I am just happy that I am not longer getting error messages and lets hope that does not happen again!

Work was a lot of catch up and data entry.  Not very brain stimulating.

At least lunch was delicious, but turned out to not be quite enough.

Leftover wheat berries from last night and salad.  I also had a large amount of Florida strawberries.

At 3pm I was more than ready to dig into my new snack!

007 I had heard good things about these bars and when I saw them at Whole Foods I thought I would give then a try.

008 Unfortunately I did not enjoy this.  It was just like a larabar with some chia seeds and peach flavoring.  I guess it is my fault for not reading DATES on the ingredient lists.  Not going to buy them again, way too expensive for the taste.

After work I really wanted to go running but it was raining so I opted for 30min on the elliptical and a 10min incline walk instead.  The TVs were out at the gym so my workout was mainly mental to get through the 40min.

We I got home I arranged my shells from Sanibel.009 010

I put my big cockle in a bowl on the dinning table and put the rest into a vase on our entertainment center aka my faux mantel.

After a shower I got started pizza for meatless Monday dinner!

011 I used Trader Joe’s WW crust at my base and topped it with aribbatta sauce with a little less cheese, peas, hot peppers and mushrooms.

013 I love peas!  Also good on pizza, who knew!

I also made us two huge spinach salads with carrots, cucs, maters and avocado.

012 I ended my eating with two more coconut chocolate chip cookies (I also had two when I got home from the gym because I was starving and didn’t want to end up eating an entire pizza myself!)

014 I think these were better today.  Yum!

We just finished killing Sissy aka trimming her nails and now the three of us are hanging out on the couch and I am totally ready to crash.  I hope the rain is gone by tomorrow afternoon, I need to run outside!


Raining. Flooding. Wonderful Monday.

Yucky Monday.

It was really hard for me to get up with my alarm at 5:30AM this morning.  It is rainy and foggy, but Sissy would never let me miss her feeding!

There are already two accidents on my road to work so I am going to try and get out the door a little early.

Return to oat bran!

001 Some things were old, others were new.

  • 1/3 cup oat bran
  • 1/3 cup water, skim, Kefir
  • cinnamon
  • vanilla
  • 1/2 banana
  • 1 tbs wheat berries
  • 1 tsp chia seeds
  • few bits of nuts over chocolate and raspberries trail mix
  • honey cinnamon pb from Sanibel!!!

No that is not poo in my oats, it is chocolate covered almonds!  At first I was mad that all the chocolate in this trail mix had melted, but now I kind of like it this way.  You are guaranteed some of the good stuff in every bite!

Side note: Did you know that golf clubs do not fly free on Southwest?

Cookie Day

I’m back!

I had a couple of glorious grocery runs today to Whole Foods and Wegman’s and my joy of food has returned!  I was also able to find Florida Strawberries and some pickled okra to cheer me up!

Before I set out I had a mix of yogurt and cold cereals.

001 Stonyfield plain, TJs fiber cereal, Uncle Sam, vanilla almond granola (I will be making my own once this runs out!)002 When I returned from my 3 hours of food shopping I dug right into my favorite Whole Foods cookie (vegan ginger spice) and I made a ice raspberry chocolate coffee.  I really like this flavor coffee.

After eating a cookie I made some!007 I picked up the new Cooking Light at the airport and this coconut chocolate chip cookie recipe!

I made some changes by using – unsweetened coconut, chocolate chips instead of chocolate bar, whole wheat flour instead of white and 1/4 cup less brown sugar than the recipe called for.

My cookies did not look as large as these, nor did I get 25 out of the recipe more like 22 perfect tablespoons.012 I had about 5 throughout the day.

Along with my first cookie I had 1/2 of a Wegman’s whole grain bagel with flax topped with basil and some Dubliner cheese.

I also had a baby green monster to get my greens in!

004 Simple; two handfuls of spinach, 1/2 naner, cup frozen strawberries, 1 cup almond milk.

After lunch I went to town cleaning the apartment like there was no tomorrow.  Dust bunnies grown very quickly while you are not around!

I finished promptly at 5pm to watch a nail bitter DUKE vs. Baylor game.  Final Four baby!  This year as been nuts!  The only number one to make it probably had the worst odds.

At half time I got started on a lovely Sunday night dinner.

FISH!  Trying to eat more!

Tonight I got some Rockfish aka Striper for northerners (ME!).

I marinated it in honey, thyme and S&P then grilled on the griddler…I almost had a small fire.

This was so moist and flaked perfectly!

Along with my fish I made up some wheat berries that I combined with some sautéed onions and garlic with a touch of white wine and parsley.

009 I love wheat berries!  So chewy and you can put them in just about anything.

All together now.

What is missing?  Something green!

011 I made a big salad of spinach, cucs, carrots, maters, goat cheese with white balsamic, EVOO and S&P.

I had a dark chocolate coconut cookie for dessert.  They remind me of mounds bars.  Mom and I were just talking about them on Sanibel!

Now it is time to watch the second half of Life (with Oprah, blah), it is mammals tonight!
