Bitter Sweet Weekend

Well the Raven’s failed to make it to the AFC playoff game yet again, which was a mighty blow, but Nick was here an extra day because of MLK day to make it a little better.  Thank you Doctor!

We were also able to visit a local tap house where they have 3 10oz artesian beers for $5 every day until 7pm.  Score!

The cherry on top for the weekend was the ability to make Nick one of his favorite meals: Chicken Pot Pie.

Typically this meal is not in the health department due to the large amount of butter laden crust and thick rue.  For example the Marie Calendar’s pot pie is 550cal with 53% of your daily fat intake, half of that being sat. fat.  I used a recipe from Real Simple,  added more veggies and used crescent rolls as a crust instead of pie crust (all they had at Whole Foods).

Inside the pie:

  • carrots
  • celery
  • onion
  • mushrooms
  • Yukon gold potatoes
  • chicken
  • thyme
  • S&P
  • low sodium chicken broth

I love the light, fluffy and buttery crescent roll goodness you get on top, while you are also faced with lots of veg and lean protein in the middle.  You still get the richness of your typical pie without it being overpowering.

I also had to use these cute pie dish bowls I got from Crate and Barrel during their after Christmas sale!

The only changes I would make would be to add the white wine from the original recipe for the flavor and mash my potatoes to make more of the rue because I left out the flour.

Great way to spend a Monday afternoon with the boy.
