Summer Squash

 

We have summer squash growing to the size of wine bottles around here!

I am not exactly sure what kind of squash it is because it was leftover from last year’s gardener and sprouted during tilling in April.

It is amazing that that giant squash came from these little plants in only 2 months.

What do you make with giant squash?  I made baked zucchini fries, but I really want to grill it!  Does anyone know what kind this is?

    Hi Heather! Not sure if you were trying to get my attention with this. 🙂 I believe you have a Zephyr squash…maybe, perhaps, though they’re usually green on the bottom and yellow on top, which this one seems to have that faint coloring to, and I have seen them looked striped like yours does there. When these are baby sized, they make for an awesome plated presentation and are quite delicious. YUM! I like to grill mine and turn them into a salad with zucchini, pickled golden raisins, white onion, mint, pine nuts, red wine vinaigrette. 🙂

    Hi Heather! That squash is looking mighty big… no idea what kind it is, but I love to make penne with sauteed summer squash and zucchini. Just sautee the squash with EVOO, salt, pepper and then load it up with some parmesan. It’s a great summer meal. PS. I am missing Kent already! Xoxo Jaci
