Biggest Loser Week 3

It is Biggest Loser night!  Who is excited?  This girl!  Two hours seems to be a little long but when the second hours starts I feel like it just started?!?!  It will be interesting to see if they have the “week two slump”  in week three because they were pushed so hard last week.  OK enough Biggest Loser, wait, hold on, I love the trainer tips during the commercials.  Anyone else?

8 hours earlier…I was at work gettin things done loving senior stimulus.

At least I had a stellar lunch planned!

004 I had some lovely carrot sticks with hummus quartet, sliced small gala apple, and some leftover plantains.  AND last but not least…da da da da!  I had a WW mini bagel with cranberry apple chutney, almond butter and a 1/4 piece of tempeh.  Very nice if I do say so myself!

005 006 This lunch was a bit larger than the usual so it held me over pretty well and I ended up only having 1/2 of the snack I planned.

007 So these bars are most likely my favorite…peanut butter and pretzels?!? hello delicious.  I even found a peanut butter filled pretzel in the 1/2 I was enjoying with my usual seltzer.

Today was yoga day with Sicily!  She seems to like to crawl all around me and lay on my stomach while I do the moves.  I wish I could get a picture but that would be really hard to set up the camera and not move her.  I did 47min on demand and then yoga.core.strength.  That core track is so hard!  It is only 8min of hell, but amazing!

Tonight’s menu was spaghetti squash!  I love this squash!  So unique and interesting the way it comes out looking like pasta.  I cooked in the mirco for 8 min on high covered with plastic wrap then thrown in the oven for 30min at 300.  If you just put it in the oven it can take up to an hour! 

When I used to make this I just used regular tomato sauce and a few turkey meatballs.  Now this is what it looks like…


And in the mix.  A little less than 1/2 a spaghetti squash, 1 mini meat/lentil loaf defrosted, lentils and brussel sprouts from Sunday, stemmed broccoli, a little bit of organic sugar free tomato sauce, fresh parsley from the garden and some parm crumbled on top.  A bit different eh?  I also had the rest of my 1/2 of squash after I finished this plate!



I also had a glass of regular unsweetened from my medieval times cup.  I went there for my birthday last year with Nick.  It was actually really fun when you got into it!

011 Update:  Tracy is crazy!  And I really want a cupcake…

I will have to debate this cupcake…or a chocolate raspberry tofu pudding cup!

Biggest Loser is calling…did I mention Tracy is crazy?  Anyone else think so?


Top Chef Wednesday

So who is excited for Top Chef tonight???  I know I am.  I even went to the webpage to snoop around and ended up taking the “Which Top Chef Judge Are You?” Quiz.  I am Gail, which is cool with me because out the three I would want to be her, Tom 2nd and Padma 3rd.

My muffin DID NOT hold me this morning and I found myself heading into my prune bag around 10:30 to keep me until lunch.  I was kind of sad about this, but felt that it would happen.  Maybe it was all mental?

I was ready to eat again around 12:30.

I used my leftover lentils to make a flatout wrap this morning with spinach and hot sauce.  I also had an overflowing Greek Chobani plain yogurt with pumpkin granola and a white CT nectarine.


I can’t forget my Adora disk!  I am down to the last one of these and will have to stop by the dangerous Whole Foods soon.

I had a little water bottle malfunction with a lemon seed!

004I had the same afternoon stack as yesterday and it was delicious again.  Good thing it was the same…I forgot to take a picture.


I ran 6.56 miles today in 58:36!  That is the furthest I have run EVER.  The best part about it is that I included hills AND I felt great after it.  I could have kept going, and I know that means I can really run a 1/2 marathon if I train at it.  I am still pretty scared, but knowing I am 1/2 way there and feeling good really boosts my confidence. Yes I am tooting my own horn here!


Dinner involved more cleaning out.  Angel hair pasta, frozen edamame, frozen asparagus, frozen shrimp and 1/2 an onion – gone.

007I marinated the shrimp on fresh grated ginger, jalapeno and the juice of two limes before I left for me run – so they soaked for about 2 hours.  I heated all of this up in a skillet and put it over pasta.

I also made a little veggie plate for Nick and I to split with red wine vinegar mustard dressing for dipping.  Tomatoes from CT and MD gardens, cuc, carrot.

We are settling in for Top Chef, why is it on sooooo late???!?!!?  I am hoping to watch from bed and not fall asleep during it.  Oh getting old is so much fun!

The Losers are Coming!

Oh it is a good morning!  I just saw and add for the new Biggest Loser coming in Sept!  I seriously got goose bumps.  Daniel from last year’s orange team is back and looking better than ever!  I missed part of the ad but I think it might be old contestants that still have to loose weight and new partners? Does anyone know??? So excited for this season to start. “What have you done today to make you feel proud?”

Wow lots of excitement to get the day started.  I also got to have a “bottom of the Fage” for breakfast.  This is the 35.3oz.

001In the bottom:  maybe about 1/2 cup Fage, 1/2 cup Me&Goji, flax, banana, almond butter, 1/2 cup Kashi Heart to Heart, 1/2 naner.

002A little far down there, but I got it all out! 😉

Nothing unusual going on today…hopefully will run through smoothly.

Zuc and Oats?

This mooring’s breakie was an experiment that went G-R-E-A-T!  I wanted some zucchini bread but not a whole slice and I needed more then that!  I then proceeded to figure out how to put it a-top oatmeal.  Here is how it came out:  1/4 cup mutigrain country oats, 1/4 cup milk, 1/4 cup h20, 1/4 cup Uncle Sam, 1/2 naner mashed into hot oats, 1/2 a piece of zuc bread crumbled on top and 1/2 a tbs almond butter.  It was mighty tasty!IMG_3315

Not too much planned for today…the usual work, gym, dinner sleep….is there any good TV on Tuesday nights now that The Biggest Loser is over.  I DO NOT  like American Idol so maybe tonight will be a reading night:)

Second Place is NOT first

My girl came in second last night on the Biggest Loser…I am not trying to bad mouth Helen, the winner, but she looked a little waifie in my mind.  Almost to the point where she seemed to be losing the muscle mass she had gained at the ranch.  The last three standing all looked like they were done up Hollywood style with spray tans and bleached teeth to match.  This sort of disappointed me considering that through the entire season we say them as they are, not who NBC wanted them to be.  I guess they needed the ratings booster to show a more dramatic change.  Anyway I went to bed disappointed and annoyed because I had stayed up so late only to see Tara come in second.  At least she still looked AMAZING!

 I wanted a switch from nola this AM so went for the frozen waffles.  I usually get the Kashi Go Lean! kind, but they were sold out last week so I went for the low fat Nutrigrain brand.  I should have looked at the box more carefully… the first ingredient is enriched flour, blah!  The box only says, “contains whole wheat” not that they ARE whole wheat.  I added some wheat berries and flax to give them a boost so we will see how it goes.

Waffle run down:

  • 2 frozen low fat nutrigrain waffles
  • 1 mashed banana, split between the two
  • 1tbs almond butter for one waffle
  • 1tbs strawberry preserve
  • sprinkle of wheat berries
  • sprinkle of ground flax seeds

Biggest Loser Dinna

Tonight is the season finale of Biggest Loser!!! i have been watching through the grueling 6 months show cheering for my girl Tara on the green team.  They brought back Carla and Joelle, which were “classy” as always.  They lost a lot of weight, but seem to be the ones with the furthest to go…Jerry is still on top for the at home contestants, but he has some serious competition coming up next.  Not really sure what is going to happen between the hours of 8 and 10 next week, but I am sure I will find something to fill the void.  Nick came for dinner tonight and helped make the salads :).  In addition we had “Biggest Loser” Shrimp Greek Pasta:

  • 2 servings Barilla Plus angel hair pasta
  • 1/2 cup chopped kalamata olives
  • 1/2 cup crumbled feta
  • herb sauce – bunch – thyme, basil, parsley; couple sprinkles soy nuts, olive oil, 1 clove garlic, S&P
  • 1 shallot choppedIMG_3264
  • 1.5 cups frozen spinach
  • 1 clove garlic
  • EVOO

In a food processor combine the above – herb sauce – ingredients to a fine blend.  In a saute pan 2tbs EVOO, garlic, shallots until the shallots are clear.  Cook pasta according to box directions.  Add shrimp and spinach to shallot mix and cook until shrimp is half way to done.  Pour in olives and herb sauce and cook the shrimp the rest of the way through.  Divide pasta and shrimp combo two ways.  Sprinkle feta over each dish.

Side salad was: herb mix, cucs, orange pepper, tomato and balsamic.

IMG_3265         Overall the pasta was good, but I think next time I make it I will add more veggies and remove some pasta.  Back to the Biggest Loser finale!  Gooooooo TARA!

Mango Banana tra-la-la!

Goooood Morning!  Bright and sunny here, wish I didn’t have to be inside 😦  This AM I made another fruit and oat combo pack with almond butter.  Here is the run down:

  • 1/4 cup country harvest oats
  • 1/4 TJs fruit and nut fiber cereal5.12.09B
  • 1/2 cup skim
  • splash of almond breeze
  • 1/2 cup rainforest granola
  • 1/2 banana
  • 5 ct mango piece
  • spoon of almond butter
  • pinch of flax seed

Workin on the bond bill for dept of budget management for the rest of the week.  The task is daunting and I hope I can get through it!  Biggest Loser season finale tonight! Sooo excited! Go Tara!!!!
