Almond butters.  I’ll take a large regular and a small COCONUT almond butter!  Yep!  Slap that stuff on dark chocolate and call me an Almond Joy!

I was able to run for 10min today without feeling like someone was stabbing me in the knee…it was a good day!

Salmon Melt

Before I get into this lovely dinner I wanted to mention one idea I am reading about in Eating Animals (I am planning on doing a full review, but this book is really deep).  I am in the section of the book where there are letters from PETA, organic farmers and factory farmers.  The factory farmer’s letter is what got me the most.

He explains that when he grew up his family’s turkey farm was the small typical turkey farm and the only reason they changed was because America demanded it.  We demanded the cheap meat and we continue to push farmers to reduce cost even more.  We created factory farms and we can take them away.  It is our choice!  Vote with your fork!

Dinner:

Salmon Melt with roasted parsnips and brussels.

Melted:

  • 1 can of Sockeye Wild Salmon – Ruggs I know, I had it before our fish talk!
  • 1 tbsp brown mustard
  • 1 tbsp plain yogurt
  • two shakes of garlic powder
  • 2 stalks of celery finely chopped
  • 1 sprig of oregano chopped
  • small bunch of parsley
  • S&P to taste
  • 2 slices of your favorite cheese – I went with REAL cheddar

Pescatarian Thanksgiving!

Tonight I got really inspired to cook an actual meal.  I have been seriously slacking in the divided meals lately and I tend to just throw a bunch of stuff in a pot and mix it up.

Well that changed tonight!

  • Wild Alaskan Sockeye Salmon
  • Long Grain Brown Rice
  • Roasted Brussels Sprouts and Yellow Cauliflower
  • Leek and Cranberry Dressing

First thing get your rice started with 1/2 cup rice and 1 cup water + salt. (I made extra to use at a later date).  Once that is going get to chopping brussels and c-flower.  Place the veggies two baking sheets and cover in preferred oil, S&P(I went with coconut). Throw them in over at 350 and bake for 30-45 depending if you like them to get crispy or not/have patients for.  The rice will take about 45min so you might as well cook them that long as well.  Once the rice was going and the oven was baking, I hit the shower.  I love doing this because I feel like I am killing two birds with one stone.

Once out of the water I started in on the leek and cranberry dressing.  In a pot bring together 1/2 cup apple juice, 1 cup fresh cranberries, 1 tbs mustard, 4 sprigs of thyme, 1/2 of one leek, S&P, 1 tsp apple cider vinegar.  Let this simmer for about 15min until it thickens.  It will be a bit tart and spicy so if you are looking for a sweet cranberry dressing add about a tablespoon of sugar.IMG_0483

After you get the cranberries going cook your salmon your favorite way.  I do not have a grill so I did mine on the stove stop with coconut oil and S&P.

The salmon should be done in about 10min and everything else so be done as well!IMG_0481

Black Eyed Peas

Hello!

Did you eat your black eyed peas????  There are supposed to be good luck for the new year an I know exactly where I want my luck to go, straight to my knee!  It is actually feeling a little better this morning so I am hoping this is a good sign.

I mixed mine into a bowl of a dish.

Roasted brussels, Quinoa, satueed mushrooms with black eyed peas.  I topped it all with a Thai pesto sauce.  I also had a 1/2 and avocado with balsamic and S&P.002 This was good, but I used a little too much salt and the pesto was vegan and I could tell they subbed the parm for something.

We took it easy last night with a rousing game of Trivial Pursuit, which I am not very good at.

This morning I wanted something on a plate and not in a bowl.  Pancakes?  Waffles?

Oat Bran Pancake!

  • 1/3 cup oat bran
  • 1/2 cup egg whites
  • 1 tsp chia seeds
  • 1 tbs flax seed
  • splash almond extract
  • 1/2 mashed banana

Topped with almond butter, the other 1/2 of banana and a wee bit of maple syrup.004 Perfect way to get out of the bowl!

I have a few errands to run and then we are heading up to Nick’s mom’s house for dinner and a sleepover with Digger boy!

I better get moving!!!!!

 

 


Still Going Strong

Well hello from the north pole!  We are passing 17in around these parts.

I spent most of the day baking cookies and listening to Christmas hymns.  For some reason Christmas hymns remind me more of the holidays then the cheesy carols on the radio.  I think it is because I was part of the church choir as a child and we always did so much around the holiday.  I miss it in a way.

I broke for lunch after keeping my cookie consumption down around 1pm.018 Amy’s tomato soup and cheese bread.

019 Baby swiss, needed some mustard.

I also broke into my Winter Warmer aka gingerbread cookie beer.

020 After lunch I finished off a batch of pecan balls and had to try one out!

021 Yum! AND half the butter ;)  Don’t tell my grandmother, and lets hope they don’t read this.

I then set out to make gingerbread cutout cookies, but my dough turned out kind of dry so I made gingerbread bites.  I had to have one right out of the oven!

023 In total I made about 10dz cookies today and I still need to make mini loafs and candied almonds tomorrow.  Thank God those are much less time intensive.  In total I probably had about 6 cookies today, not bad if I do say so.  I also made sugar cookie stars that are unpictured but the same ones that I made last week for the Raven’s game with the almond royal icing.

I needed to untwist after all that cookie baking so I did 30min of yoga sculpt and felt 10x better!  I love all of the yoga pushups in that one!

I was lacking some servings of veggies today so that is what I made up for another triple veggie plate.

026 Brussels with chili powder, rutabaga with S&P and kale chips.  I also had 2 more pieces of my organic 7 seed and grain bread (I love a good bread!).  In addition I also enjoyed another Winter Warmer.

I am hoping to play SceneIt! on the XBox with Nick, but he seems to be napping.  I will leave you will some outside shots of the winter wonderland.

Homemade Is Always Better

I survived the the meeting with the Governor and I got a picture of his pretty Christmas tree.

003 We stopped at a special place on the way home that I will talk about tomorrow in my breakfast post and got back in time for lunch.

Which I did not bring…

So I headed downstairs to the one healthy option and ended up with soup and a salad!

004 Black bean soup that wasn’t too salty with carrots and a hint of cilantro and the prettiest little side salad every.  The salad was even MTO!005 green leaf lettuce, onions (these were removed), yellow pepper, tomatoes, carrots, sprouts and hidden cheddar cheese.  Perfect light lunch before my afternoon snack attack in the section’s app and dessert day.

I hit the tables late in the day, but I managed 2 pieces of chocolate chip mandel bread (not pictured, but homemade and so good!  Not too sweet but the perfect combo of chocolate and cinnamon) and a piece of cinnamon crunch cake.  At things like this I only go for the homemade desserts because they are always made with better ingredients and most of the time taste better.  Every thing tastes better when it is made with love ❤

007 I also had the carrots and almond butter I had packed.  It was a snackie kind of day.

006 After lunch I hit the gymbo.  Elliptical 30min, 20min incline, 3 mile speed run.  I was seriously pooped after this workout.  I did some core and headed out the door.

Showered and flew into the kitchen to make dinner!

I had tofu, brussels and sweet potatoes on the menu.  A simple roasting was in order!

I really liked the sweet honey with the nutty almond, but I wish I had stuck better like it did on Nick’s chicken.

I think I had enough dessert today, and tomorrow there is more (!), so I think I will give sugar cookie sleigh ride another shot.

Nick is at his dad’s for Thursday night football so I am going to catch up on The Hills…yes I still love this show.

Cold and Wet

Hello!

Sorry for not posting last night.  Nick and I were so pooped from the cold and rain at the Ravens game that we just came home, changed into dry clothes, curled up on the couch with Sissy and watched the rest of the Ravens WIN and movies.

I was able to get some pictures under a tent at the tailgate, but there was no way I was taking out the camera in the stadium.

The spread…I had some issues with some glazed doughnut holes on the other end.  I also had a few mimosas during the day.   I think I drank more because it was so gosh darn cold and wet!

005 This ribbon was hanging off our tent and I wanted to think that someone had hung them all over it to surprise someone they loved at one point and it was a great moment.

After my doughnut stuffing I wasn’t really hungry until about 6pm when I just wanted veggies.

I heated up a can of stewed tomatoes and roasted some brussel sprouts and fennel bulb.

I also had a few of Nick’s S&V chips and lots of tea.

This morning I wanted simple…cereal.

All mixed up…Uncle Sam, TJs fruit and nut medley, shredded wheat, kashi H2H, Go Lean Crunch and banana.  I heated up the milk to make it a little bit different 🙂

OK ladies and gents it is time for me to get a move on.

1 week and 1 day until Sissy and I are in CT!
