Hello, Hello! Just popping in to tell you about a delicious dinner treat I had tonight! Last fall I had kind of an obsession with ricotta chese, honey, almonds on toast. Funny enough in that post I talked about how important running is to me – I have not run comfortably since the relay marathon last October. Sad. I have been getting good at the cross training machines, swimming an yoga though!
Anyway, back to the food!
I was reliving the delicious toast and thought about how I could make it any better.
I love figs! So delicious – english muffin, ricotta, pecans (only nut I had), figs and my mom’s friend’s honey!
Next time I think I will go back to toast instead of the very flavorful Ezekiel muffin, but I do believe my obsession has returned and I am thinking of adding some caramelized onions to it next time! Figs + caramelized onions = amazing flavors.
How do you like to eat your figs? Do you even like figs? I also love them with goat cheese..mmmmm.
Did I move to Florida? That is what the humidity feels like right now. We are having some crazy rain storms around here, enough so that my plans to head to DC this evening got crapped. There is flooding all over the place and more is coming so I thought it is better be safe than sorry. I was still bummed.

3.41 miles, negative splits, done!
I tackled a few hills today, which were major because I hadn’t run hills in over a month. I thought about how important running is to me. It is the only thing challenges me and gives me power the second I step out my door. The runners high that you get cannot be described it can only be felt. Biking and swimming are fun but they are not the same. I am honored that I can run because I know how quickly it can be taken away from me.
After my run I had planned a basic tofu, broccoli and rice dish but when I saw Jenna’s appetizer from her date night I had to recreate!
Wow! This combination was amazing! I love this cheese with honey and a crunch of almond. Try it!
Britney on Glee was dancer for Britney Spears, did you know??? That is how she was discovered in the first place!
So it is official Tracey is crazy!
I know last night’s Biggest Loser seemed really emotional with the two teams up for elimination, but for some reason I wasn’t feeling it. I was more upset that a 447lbs person could only loose 6 lbs in a week when small contestants could loose double digits. It is great that Shay did loose that much, don’t get me wrong, I just thought it could be a lot more. I still do love Daniel. He is so positive and really should be the new spokes person for the Biggest Loser. Last but not least props to the Red team for both loosing over 100lbs each at home during the update!
Onto the food!

- 1/3 cup oat bran
- 1/3 cup h20
- 1/3 cup almond milk
- 1/4 cup plain Stoneyfield
- 1/4 Country Pumpkin granola
- spoon of almond butter
- drizzle honey

So who caught Top Chef last night???? I was so giddy for the new season to start last night! I think this season is going to be great. There are for sure more “out of the box” contestants then most years. I like Jen who won the quick fire, she reminds me of Casey from a few seasons ago.

I am a little rushed this morning, but for a delicious breakfast!
French toast! 2 pieces of bakery grain bed soaked in almond extract (!!! serious try it!), vanilla, flax, egg whites, cinnamon and nutmeg. Covered in almond butter, honey and banana.
Seriously this was amazing! I really needed more time to enjoy it this morning, but I had to get moving! I will be remaking this on a weekend when I can truely enjoy every bite!
I will be driving tonight so posting might have to wait until tomorrow morning. Today is my Friday!!! Woohooo!
