Tonight was my first experience with fresh turmeric!
It is similar looking to ginger and packs a punch of flavor as well. Turmeric is used from a dye to a super food in fighting cancer. It is also the principal ingredient in curry powders. I thought I would roll with the curry theme for my dinner tonight.
Curry with Fresh Turmeric
- 1 yellow onion
- olive oil
- 2 cloves garlic
- 1 delicata squash
- 1 bunch lacinato kale
- 1 bell pepper
- 1/3 cup nutritional yeast
- 1 tsp grated fresh ginger
- 1/2 tsp fresh or dried turmeric
- 1 tsp curry powder
- 1/2 cup water
- pasta serving of choice
- Pre-heat oven to 350 and de-seed the squash then cut into small pieces.
- Rub with olive oil and place in over for 30min
- chop onion and add it to the olive oil heating on the stove in a large wok or pan
- add crushed garlic to the onions once they are translucent
- cut bell pepper into small pieces and add it to the onion
- once the pepper is soft add the yeast – water and let simmer
- cook pasta to taste
- add the kale when there is 5min left on the squash
- add the squash hot out of the oven and cover everything with the sauce.
- Serve the pasta and top with the curry veggie mix
I’m not sure if I could taste the added turmeric over the curry, but whatever the case this dish was delicious! Curry and squash is a very nice combo. Let me know if you find turmeric near you!

Tonight I was able to make two new things in my kitchen!
Well one was new and the other was just a different version of an old favorite.
I can never be without almond butter, but I have been delaying making it for the past few days. Tonight I changed that in a big way!
Winter Almond Butter
- 2 cup raw almonds toasted and flipped over ~12min @350
- 2 tbsp. cinnamon
- 1 tsp nutmeg
- 1/2 tbsp ginger
- 1/2 tbsp cloves
- 1/2 tbsp molasses
- 1 tsp grapeseed oil – I used this because the powders dry out the mix
Blend all in a food processor until smooth – about 5min.
Delicious winter warm winter flavors in my mouth!
While this was whirling I put the finished touches on maybe on of my last salmon dishes? This is all based on Rugge letter me know if Wild Alaskan Salmon is ok…I just watched Sarah Palin catch a ton of it, but I don’t know if that is a good thing. She is funny – In a making fun of her way. She is so simple and I actually like that about her, but she should not be in politics.
Enough about Sarah and back to the fish!
I really wanted pasta tonight, but I knew I needed to pump it up with veggies
Enter Salmon Pasta On A Bed of Spinach
- 1 large handful of uncooked spinach placed on plate
- 1 serving of wild salmon cooked in the oven for 20min and broken apart
- 1 serving whole wheat pasta
- 1/2 pint of chopped mushrooms sautéed in coconut oil
- 1/2 onion chopped and sautéed with mushrooms
- one shake of red pepper flakes
- handful of chopped basil – from my herb pots
- handful of chopped parsley – from y herb pots
- salt and pepper to taste
Mix together all ingredients in a bowl and top spinach with mix! Simple ingredients coming together for a good meal.
So Rugs, what about the salmon? I know I will not be making this with Tuna any time soon! Please watch The End of the Line if you eat seafood and want to eat it in the future.
Time to get ready for Top Chef. I would really like to see a vegetarian challenge this season!

So lets get back to the Easter recap!
Easter Bread! I love this sweet bread and just think it is so festive. These were our dyed eggs this year. Much easier and less messy. I ate about 1/3 of the bread and one of the eggs. The other egg wasn’t fully cooked!

With my candy decorations. Peeps, eggs and Bacio were eaten throughout the meal. Easter = chocolate AND plants! Check out my Easter basket! Pansies, tomater, chocolate, REAL red wine vinegar, rosemary, j.crew t-shirt, lettuce (!!!) and KALE!!!!!!!! I am really excited about the kale and lettuce I just hope I can keep them alive! It is really warm right now but they say you shouldn’t plant until night temps are consistently above 50.
After a seriously long drive home we went straight to bed.
Finally we are caught up today…
you already had breakfast so onto lunch and dinner!
Leftover polenta from the freezer topped with Seeds of Change tomato sauce.
I also had some carrots, maters and Kashi crackers with the best hummus ever!
I had forgotten my snack for the afternoon so I patiently waited for one once I got home. First I had to drop off my bike at REI for her tune-up. If it is going to cost a lot of money to get her fixed I am seriously going to get a road bike. I saw so many people cycling today and I really wanted to join them.
Toasted Wegmans bread with pb and jam. Yum! Nick does not like pb&j and I do not understand it! (Katherine you are a different story)
After I let my toast digest I headed out for a nice little run. It was 80 out when I left. I just soaked it all in. I ended up doing about 4 miles and felt great! When I got home I did the usual roll, core and push-ups.
So what did we have for meatless Monday??? Well I hadn’t been to the grocery store in over a week so it took some creativity.
Thankfully mom had given me a head of broccoli to take home.
- 1 can no salt added diced tomatoes
- kalamata olives
We also had a nice little salad of cucs, maters, dill and some of my new red wine vinegar. This vinegar is much nicer than the grocery store brand I had before. It doesn’t have the same bite? but instead had a deeper flavor. I think my mom got the idea from the new Cooking Light we read on the plane back from Sanibel.
Alright Duke is not looking so good. Time to get my cheer on!

Monday Done-day! Cheese!
My breakfast held me over amazingly well today. I also had a meeting from 9:30-11 so by the time I got back to my desk, I just figured I would wait until lunch.
This lunch included something new!
I didn’t zoom in on this because close up it highly resembles baby food, but I mixed plain yogurt, pumpkin, a little agave and pumpkin pie spice. It was good! It tasted so much more fresh than any pre-packaged pumpkin yogurt I have had.
Along with my yogurt came a salad of mixed greens, celery, carrots, maters, leftover butternut, 1/4 block temph, balsamic and Sabra sundried tomato hummus.
After work today I had an un-pictured apple and seltzer and headed to the running store before the gym. I inquired about orthotics and they said the only ones they really have are extra cushion because I walk pretty normal. They didn’t have my size so I asked that they hold them for me. We will see if they make a difference. I also saw a study on the news tonight that talked about how running shoes actually make us more prone to injury. Maybe there is some truth to these vibracore shoes with the many toes. I just hope my knee sleeves get here soon and they do some work for me!
At the gym I did 30min on the elliptical (the place was packed! Thanks new years resolutionists!) and then did arm, core and a bunch of PT exercises as well and a lot of stretching. The elliptical actually doesn’t hurt where as walking does? Go figure. I have no idea what that is about, but I am guessing it has something to do with the way I land when I take a step.
I had pasta punttanesca on the dinner plan for tonight and it took me all of 15min to make it!
I followed Ellie Krgier’s recipe except I didn’t have any arugula and I added some roasted red peppers.
Along with our pasta I served up a lettuce-less salad. With avocado, tomato, S&P, balsamic and the last green pepper from my plants :( We had a bit of a fruit fly situation and it was coming from the soil of our pepper plants…no more green peppers or jalapenos until next summer…it seems to far away. At least jalapenos are only about 7 cents each!
Off to finish Pollan’s book! I am going to have a recap of my favorite rules, some are hilarious! When is his next book coming out??!
I have a bit of a headache but Nick just got me some water and two aleve so I should be better in a bit. What a doll!
Speaking of meds…how do you feel about name brands? I always feel into buying a name until a few years ago when I realized the store brand had the exact same ingredients at the same concentrations but at a much lower price. I will never buy name brand basic drugs again!
At least we are over the hump of the week. I am not a big fan of he saying “hump day”, but it defiantly all feels down hill from here. Although the days are going to go by slowly due to the fact that I am getting Mr. Kitty on Saturday!
So onto the eats for the day.
Plain Chobani, small sliced gala apple, Barilla plus pasta salad with left over tomato chicken from Sunday night and chickpeas from last night. Not the most interesting lunch, but it did the job.
I honestly spent a large part of the afternoon picking out the best cat food. I feel that if I am going to spend extra money on healthier food for me, why would I give my cat the short end of the stick? Just like humans I feel that a healthy diet will contribute to overall health and maybe decrease my vet bills in the long run.
I settled with Organix…had anyone used this? It is available at Petco so that makes it easier for me to get.
New snack this afternoon, another attempt at a Luna bar.
I actually ended up liking this one. I think I figured out that I like the ones that don’t pretend to be something else like a peppermint stick or a peanut butter cookie.
Today’s training was hills! I did about a 7+ mile run today with some little hills and one huge one. I need to make sure I keep hills in my workouts considering there is a massive one in the Baltimore marathon! This is honestly what is worrying me the most about the race. It is around mile 6 and it is a steady climb for about one mile.
Tonight we finally got to make tortellini pizza! My old roommate used to get this from Pasta Mista and I thought it was a good idea to make healthier (Her’s were always dripping in grease).
I used two flatout wraps for personal pizza style, organic tomato sauce, organic mozzarella (how awesome are store brand organics btw!), roasted mixed peppers and spinach, mushrooms and basil tortellini.
So who is excited for Top Chef tonight??? I know I am. I even went to the webpage to snoop around and ended up taking the “Which Top Chef Judge Are You?” Quiz. I am Gail, which is cool with me because out the three I would want to be her, Tom 2nd and Padma 3rd.
My muffin DID NOT hold me this morning and I found myself heading into my prune bag around 10:30 to keep me until lunch. I was kind of sad about this, but felt that it would happen. Maybe it was all mental?
I was ready to eat again around 12:30.
I used my leftover lentils to make a flatout wrap this morning with spinach and hot sauce. I also had an overflowing Greek Chobani plain yogurt with pumpkin granola and a white CT nectarine.
I can’t forget my Adora disk! I am down to the last one of these and will have to stop by the dangerous Whole Foods soon.
I had a little water bottle malfunction with a lemon seed!
I ran 6.56 miles today in 58:36! That is the furthest I have run EVER. The best part about it is that I included hills AND I felt great after it. I could have kept going, and I know that means I can really run a 1/2 marathon if I train at it. I am still pretty scared, but knowing I am 1/2 way there and feeling good really boosts my confidence. Yes I am tooting my own horn here!
Dinner involved more cleaning out. Angel hair pasta, frozen edamame, frozen asparagus, frozen shrimp and 1/2 an onion – gone.
I marinated the shrimp on fresh grated ginger, jalapeno and the juice of two limes before I left for me run – so they soaked for about 2 hours. I heated all of this up in a skillet and put it over pasta.
I also made a little veggie plate for Nick and I to split with red wine vinegar mustard dressing for dipping. Tomatoes from CT and MD gardens, cuc, carrot.
We are settling in for Top Chef, why is it on sooooo late???!?!!? I am hoping to watch from bed and not fall asleep during it. Oh getting old is so much fun!
