Cilantro Pesto!
Posted: October 19, 2011 Filed under: farmers market, recipe | Tags: cilantro, farmers market, pesto 1 CommentI am a day late with Farmers Market Tuesday (now Wednesday!). I got home from yoga late last night and all I wanted to do was eat some dinner and go to sleep.
The pickin’s are getting slim at the market and I will miss summer produce, but one surprise I found was a huge bunch of cilantro (root and all)! I really wanted it but one person cannot eat 3 cups of cilantro before it goes bad. I opted for making cilantro pesto!
I wanted it to be semi-thick because I want to use it on bread. I also do not have pine nuts because they are super expensive.
Simple Cilantro Pesto
- 2 cups cilantro
- 1/4 cup pecans
- EVOO to your thickness taste
- juice of 1/2 one lemon
- 1/2 jalapeno
- pinch salt
Throw everything but the olive oil into a food processor and blend! Add the olive oil gradually until you get the consistency you like.
I cannot believe from 2 cups of cilantro I only got 1/2 cup of pesto! I guess that is why the stuff is kind of expensive.

p.s. I am never cooking rice on the stove top again…my new rice maker we got as a wedding gift is amazing!
Presto Pesto!
Posted: July 15, 2010 Filed under: pesto | Tags: pesto Leave a commentI accidently killed one of my tomato plants ( it was my best one too!), but I was able to save some of the ripe and unripe fruit before I got rid of it.
Now I just needed to use them in something!
Enter tomato, pea pesto!
- 1/2 cup fresh basil
- 1/2 cup fresh parsley
- 1/2 cup peas (frozen defrosted or fresh)
- 1/2 cup tomatoes – all colors
- 1 clove garlic
- 1 tbs EVOO
- S&P
I’ve used it on pasta, as a dip (it is thicker from the peas!) and a spread on toast with melted cheese!
I just tried uploading pictures for this mini post and my computer doesn’t want to read my memory card…I’ll try again tomorrow!!!
Cornbread to Love

It was so simple to make!
- 1 cup unbleached flour
- 1 cup polenta – this gave the bread a great crunch
- 1/4 cup white sugar
- 1 tsp baking soda
- 3/4 tsp salt
- 1 cup nonfat plain Greek Yogurt
- 2 Egglands Best Eggs

Check out those amazingly yellow yokes! I have been told that the freshest, least disturbed eggs have very yellow yokes.
Directions: preheat oven to 400, mix dry, mix wet, blend (do not over mix), pour batter into greased 8×8 pan and bake for 20-25min until golden brown on top.
It was greatly enjoyed with the chili last night and with my lunch and dinner.
I had a nice little piece along with my lunch.
I enjoyed my cornbread with the other 6 people in the office and a nice spinach salad with tomatoes, carrots and green chilies.
Seriously though no one was in the office today. It was so odd not to hear the usual people walking around and talking. I actually got into work pretty easily because we live in a community and I can get to my job on major highways.
I broke from work around 3:30PM for my zbar snack
Honey Graham is definitely my favorite flavor of the three I have tried, which is weird because there is no chocolate.
I came home from work did some core and arm work and then got started on Meatless Monday dinner!
Homemade pesto covering roasted rutabaga, spinach, peas, and tomatoes. I also had a nice piece of cornbread with honeycup mustard.
This was delicious! I need to make homemade pesto more often! Unfortunately my food processor broke tonight…I guess I need to get a real one soon! VitaMix! I wish.

POTM and The End of an Apple

Our apt is still a mess and Nick has yet to tackle the dishes. Instead we are watching “The Painted Veal”, which was supposed just be background but now Nick is really into it. I have seen it and it isn’t a movie that you catch new things the second time around.
My cat is insane! Seriously reminds me of Angela’s Sketchy, but I am not able to capture quit the photos like she does. She is currently hiding under the couch and attaching our feet if we put them down on the floor. We need to snip her nails ASAP!
OK enough about crazy Sissy on to the food.
Lets start off with this lovely dried plum.
No this is not deer terd it is a prune and they are delicious! I will continue to argue those who claim that are for old people and only meant to keep you regular.
Onward to lunch!
Salad with greens, carrot, hard boiled egg and balsamic. I also had Greek yogurt with flax and lemon curd and some TJs everything crackers.
For snack time I sampled the Smart Balance popcorn I got in my bag at the 1/2 marathon.
It was good, but I just am so skeptical of chemically created flavors. I know it is “all natural” but what happened to butter? Popcorn does make a good snack, pretty good amount of fiber and lots of munching to be had!
When I arrived home I fed crazy and headed out for an 8 mile run. I signed up for Caitlin’s Pile on the Miles today! The program is all about getting out there and adding miles to your life whether it be walking or running to combat the joyful holiday eating. I don’t really have a goal yet, but it is a good motivator to get my butt out the door when it is chilly and I just want to snuggle with my blanket.
Dinner was rather uninspiring, but Nick seemed to like it. It was just eh to me.
pesto tortellini, with a little bit of chicken under sautéed onions, spinach and peppers in a pesto sauce. I also sprinkled some parm on the top.
I ended my eats for the night with the last 1/4 of my honey crisp apple and the other 1/2 of my apple cider doughnut from this morning. I am thinking of freezing the last on for a rainy day. They are calling for rain on Wednesday 😉
This gives you a good perspective of the size of this apple. That is 1/2 of a normal sized doughnut.
Time to watch the Redskins loose again!!!!
